The E7 series has been operating on the Hokuriku Shinkansen since 2014 and was added to the Joetsu Shinkansen in 2019. The design of these trains is inspired by the previous E2 series, and the appearance was designed by industrial designers to fully reflect the "Japanese" theme. The train's exterior is dominated by a "sky blue" roof and an "ivory white" body, with "copper" and "sky blue" stripes, showcasing a modern aesthetic.
Its maximum design speed is 275 kilometers per hour, but on the Hokuriku Shinkansen, the actual operating speed is 260 kilometers per hour, and on the Joetsu Shinkansen it is limited to 240 kilometers per hour. In addition, these trains can still maintain a speed of 210 kilometers per hour on routes with steep gradients, thanks to the enhanced power output design.

The E7 series has different train service types, including "Kuki", "Shirataka" and "Goriki". These services are not limited to the main route between Tokyo and Kanazawa, but include the four main commuter services.
