Analysis of the Effective Components and Antioxidant Activity of Korean Black Currant (Ribes nigrum L.) Extracts
Abstract
This study investigated the effective components and antioxidant activities of the water extract (WBC) and ethanol extract (EBC) of the Korean black currant (Ribes nigrum L.). The total polyphenol, total flavonoid, and total ascorbic acid contents of EBC were significantly higher than those of the WBC. The phenolic compounds of the extracts were analyzed by high-performance liquid chromatography. The contents of rutin and myricetin of WBC were 53.30 mg/100 g and 9.76 mg/100 g, respectively. The contents of rutin and myricetin of EBC were 65.44 mg/100 g and 4.38 mg/100g, respectively. The DPPH, ABTS, and FRAP assays showed that the black currant extracts have high antioxidant activity. Furthermore, the antioxidant activity of EBC was superior to that of WBC. These results demonstrate that the black currant extracts contain effective components, and EBC is a potential resource for developing natural functional antioxidant materials.
