Abstract


In this project we used mon balm (Lippia alba) to study the properties and bioactive compound present in its dry extract. The dry extract was obtained by hydroalcoholic extraction and the drying was performed in Spray Drying according to experimental design (DOE) in factorial form 22 + 3, totaling 7 drying tests, being the variables independent, the inlet temperature (50, 60 and 70 oC) and the feed flow (4.0, 5.0 and 6.0 g/ min), keeping the other process variables constant in the drying, obtaining as dependent variables the yield, accumulation, evaporation rate, water content and water activity. The extraction method used proved to be effective in keeping the bioactive compounds present in the extract. The drying process showed a linear behavior in relation to the temperature of entry and the variables analyzed during the tests, The experiment 4 was the one selected as the optimized test, that is, it was the one that presented accentuated general characteristics when compared with the other experiments. The objectives set were met, with satisfactory results, reinforcing the idealization of the use of powdered lemon balm extract, as part of the composition of herbal products.
