Abstract


Assistance with the Application of GMP in Tutok Terasi Processing in Kuala Pusing Kapal Village. Shrimp paste (terasi) is a very well known seasoning in Indonesia made from fermented shrimp or fish. Kuala Pusong Kapal, Seruway, Aceh Tamiang is one of a well known village producing shrimp paste in Aceh Province. Principal ingredients of shrimp paste from this area is udang rebon (Acetes indicus), and the processing was done by pounding, hence the name terasi tutok (pounded shrimp paste). The information on shrimp paste production was passed from earlier generation up until now, and daily production estimated 25-30 kg of shrimp paste. Even though pounded shrimp paste has been marketed in North Sumatra, Pekanbaru, and Riau Islands, but the production equipment used are relatively modest, which are consists of pushnet, mortar, plastic sheeting, and other supporting equipments. The shrimp paste production are still managed traditionally, which means the production process still lack of product packaging and branding, P-IRT certification, and unstandarized in process control. The purpose of this community service activity are to facilitating the implementation of GMP (Good Manufacturing Practice) as one of the condition to obtain P-IRT certification and other products legality in the firm. Activities done i.e: 1). Improving the quality of human resources, 2). Separation of production room and storage room, 3) construction of standardized drying racks, 4) utilization of personal protective equipments, 5) procurement of standardized fermentation containers, 6) acquirement of grinding machine.
