Food, waste and safety: negotiating conflicting social anxieties into the practices of domestic provisioning

Two significant realms of social anxiety, visible in the discourses of media and public policy, potentially pull practices of home food provisioning in conflicting directions. On the one hand, campaigns to reduce the astonishing levels of food waste generated in the UK moralize acts of both food saving (such as keeping and finding creative culinary uses for leftovers) and food disposal. On the other hand, agencies concerned with food safety, including food-poisoning, problematize common practices of thrift, saving and reuse around provisioning. The tensions that arise as these public discourses are negotiated together into domestic practices open up moments in which ‘stuff’ crosses the line from being food to being waste. This paper pursues this through the lens of qualitative and ethnographic data collected as part of a four-year European research programme concerned with consumer anxieties about food. Through focus groups, life-history interviews and observations, data emerged which give critical insights into processes from which food waste results. With a particular focus on how research participants negotiate use-by dates, we argue that interventions to reduce food waste can be enhanced by appreciating how food becomes waste through everyday practices.

Saints and Slackers: Challenging Discourses About the Decline of Domestic Cooking

Amidst growing concern about both nutrition and food safety, anxiety about a loss of everyday cooking skills is a common part of public discourse. Within both the media and academia, it is widely perceived that there has been an erosion of the skills held by previous generations with the development of convenience foods and kitchen technologies cited as culpable in ‘deskilling’ current and future generations. These discourses are paralleled in policy concerns, where the incidence of indigenous food-borne disease in the UK has led to the emergence of an understanding of consumer behaviour, within the food industry and among food scientists, based on assumptions about consumer ‘ignorance’ and poor food hygiene knowledge and cooking skills. These assumptions are accompanied by perceptions of a loss of ‘common-sense’ understandings about the spoilage and storage characteristics of food, supposedly characteristic of earlier generations. The complexity of cooking skills immediately invites closer attention to discourses of their assumed decline. This paper draws upon early findings from a current qualitative research project which focuses on patterns of continuity and change in families’ domestic kitchen practices across three generations. Drawing mainly upon two family case studies, the data presented problematise assumptions that earlier generations were paragons of virtue in the context of both food hygiene and cooking. In taking a broader, life-course perspective, we highlight the absence of linearity in participants’ engagement with cooking as they move between different transitional points throughout the life-course.

Crowded kitchens: the ‘democratisation’ of domesticity?

Building on previous work concerning the gendered nature of domestic space, this article focuses on the kitchen as a key site in which gendered roles and responsibilities are experienced and contested. As men have begun to engage more frequently in cooking and other domestic practices (albeit selectively and often on their own terms), this article argues that kitchens have become ‘crowded’ spaces for women. Drawing on evidence from focus groups, interviews and ethnographic observation of kitchen practices in South Yorkshire (UK), we suggest that mens entry into the kitchen has facilitated the expression of a more diverse range of masculine subjectivities, while also creating new anxieties for women. Specifically, our evidence suggests that family meals may be experienced as a site of domestic conflict as well as a celebration of family life; that convenience and shortcuts can be embraced by women without incurring feelings of guilt and imperfection; that cooking is being embraced as a lifestyle choice by an increasing numbers of men who use it as an opportunity to demonstrate competence and skill, while women are more pragmatic; and that kitchens may be experienced as ‘uncanny’ spaces by women as men increasingly assert their presence in this domain. Our analysis confirms that while the relationship between domestic practices and gendered subjectivities is changing, this does not amount to a fundamental ‘democratisation’ of domesticity with significantly greater equality between men and women.

Still blaming the consumer? Geographies of responsibility in domestic food safety practices

Drawing upon qualitative and ethnographic data collected in the UK, this paper discusses how public discourses and concerns about food safety are negotiated into everyday domestic kitchen practices. While many participants demonstrated ‘behaviours’ or ‘practices’ which could be seen to contravene or fall short of official guidelines, this does not necessarily indicate ‘ignorance’ or lack of responsibility on the part of consumers. Indeed, when explored in detail, participants presented a range of reasons for engaging in what the UK Food Standards Agency regard as ‘risky’ practices. Their explanations point toward an understanding of the distribution of domestic responsibility in which a number of stakeholders are implicated, while simultaneously acknowledging their role as final arbiters of food safety in the home.

‘What I Used to Do … On My Mother's Settee’: spatial and emotional aspects of heterosexuality in England

Using data from an ongoing project which investigates continuities and changes in the institution of heterosexuality across the twentieth century, this article brings a spatialised perspective to bear on the contradictions implicit within family‐based models of hegemonic heterosexuality. In this context we contribute to the growing focus by geographers on theorising the spatial and emotional aspects of heterosexuality. Via interviews with women and men from three generations in 20 families from East Yorkshire, England, we discover the difficulties experienced by individuals seeking to bring together their sexual and family lives. Focusing on two areas, the transmission of sexual knowledge between the members of different generations and between heterosexual partners and the use of space within the performance of gendered identities, the article shows how individuals both experience constraint and discover scope for agency in managing such contradictions. Via empirical data we therefore begin to identify the ways in which heterosexuality, as an institution, has provided an implicit organising principle through which materially‐grounded links between self, the emotions, other, body, home and the public sphere have been produced and/or negotiated over the last 80 years.

Reconceptualizing power and gendered subjectivities in domestic cooking spaces

Drawing on evidence from the Global North and South, this paper explores the power dynamics of domestic kitchens in different geographical contexts. Noting the gendered nature of domesticity, it contrasts those perspectives which regard women’s primary responsibility for foodwork as inherently oppressive, with others which see kitchens and associated domestic spaces as sites of potential empowerment for women. The paper explores the complex, spatially-distributed, character of power surrounding domestic foodwork, decentring Anglo-American understandings of the relationship between gender, power and domestic space by foregrounding the experiences of a range of women from across the globe. The paper also examines the increasing role of men in domestic settings, particularly in the Global North, assessing the extent to which their engagement in cooking and other domestic practices may be challenging conventional understandings of the relationship between gender, power and space. Focusing on the spatial dynamics of the domestic kitchen, this paper advances a more nuanced understanding of the co-constitutive nature of the relationship between gender and power, including the instabilities and slippages that occur in the performance of various domestic foodwork tasks. The paper advocates future research on the boundaries of home, work and leisure, focusing on their significance in the constitution and transformation of male and female subjectivities.

Lay perspectives on lay health worker roles, boundaries and participation within three UK community-based health promotion projects

This paper examines lay interpretations of lay health worker roles within three UK community-based health promotion projects. It argues that understanding lay health worker roles requires critical analysis of the complex interrelationships between professionals, lay workers and the communities receiving a programme. Findings are presented that are drawn from a qualitative study of lay engagement in public health programme delivery where a key objective was to examine the perspectives of community members with the experience of receiving services delivered by lay health workers. Interviews and focus groups were conducted with 46 programme recipients from three case study projects; a breastfeeding peer support service, a walking for health scheme and a neighbourhood health project. The results show how participants interpreted the function and responsibilities of lay health workers and how those roles provided personalized support and facilitated engagement in group activities. Further insights into community participation processes are provided revealing the potential for active engagement in both formal and informal roles. The paper concludes that social relationships are core to understanding lay health worker programmes and therefore analysis needs to take account of the capacity for community members to move within a spectrum of participation defined by increasing responsibility for others.

Dimensions of lay health worker programmes: results of a scoping study and production of a descriptive framework

Background: Approaches that engage and support lay health workers in the delivery of health improvement activities have been widely applied across different health issues and populations. The lack of a common terminology, inconsistency in the use of role descriptors and poor indexing of lay health worker roles are all barriers to the development of a shared evidence base for lay health worker interventions. Objectives: The aim of the paper is to report results from a scoping study of approaches to involve lay people in public health roles and to present a framework for categorisation of the different dimensions of lay health worker programmes. Methods: Our scoping study comprised a systematic scoping review to map the literature on lay health worker interventions and to identify role dimensions and common models. The review, which was limited to interventions relevant to UK public health priorities, covered a total of 224 publications. The scoping study also drew on experiential evidence from UK practice. Results: Research-based and practice-based evidence confirmed the variety of role descriptors in use and the complexity of role dimensions. Five common models that define the primary role of the lay health worker were identified from the literature. A framework was later developed that grouped features of lay health worker programmes into four dimensions: intervention, role, professional support/service and the community. Discussion and conclusion: More account needs to be taken of the variations that occur between lay health worker programmes. This framework, with the mapping of key categories of difference, may enable better description of lay health worker programmes, which will in turn assist in building a shared evidence base. More research is needed to examine the transferability of the framework within different contexts.

‘Think differently and be prepared to demonstrate trust': findings from public hearings, England, on supporting lay people in public health roles

Professional support processes are critical for the establishment and maintenance of community health worker programmes. This paper reports on three public hearings held in England, UK, that were conducted as part of a national study into approaches to develop and support lay people in public health roles. Individuals with relevant theoretical or practical expertise, including lay activists, presented evidence in public as expert witnesses. Formal presentations, questions and plenary discussions were recorded and later analysed as qualitative data. This paper presents the results and critically examines emergent issues relating to the sustainability of lay health worker programmes. Consideration is given to the diversity of contemporary practice in England. Barriers seen to affect sustainability included organizational culture and onerous bureaucratic processes. Major themes emerging from the expert evidence included recruitment and training strategies, financial support and the need for a robust infrastructure. The expert hearings, in creating a public space for deliberation, opened up discussion on the levels and type of programme support required to foster lay health worker programmes. The paper concludes that professional support needs to be accompanied by a reorientation of public services to support lay engagement in programme delivery.

What's sex got to do with it? A family-based investigation of growing up heterosexual during the twentieth century

This paper explores findings from a cross-generational study of the making of heterosexual relationships in East Yorkshire, which has interviewed women and men within extended families. Using a feminist perspective, it examines the relationship between heterosexuality and adulthood, focussing on sexual attraction, courtship, first kisses, first love and first sex, as mediated within family relationships, and at different historical moments. In this way, the contemporary experiences of young people growing up are compared and contrasted with those of mid-lifers and older adults who formed heterosexual relationships within the context of the changing social and sexual mores of the 1960s/1970s, and the upheavals of World War Two.
