Effect of immobile isolated enzymes from rumen liquid by using alginate matrices on the bay leaf extraction

This research aims to develop the enzymatically of bay leaves phytochemical extraction process. The novelty and the main innovations of this research is the development of extraction process by using enzymatic extractor and isolate the enzymes from rumen liquid to shift the equilibrium phase, increase the extraction rate and increase the extraction yield. The activity of rumen liquid enzyme was represented by the activity of cellulase and protease. The analyze of total flavonoid content was performed by using UV-Vis Spectrofometry. The activity of immobilized enzyme of cellulase (0.08±0.00 U/ml) was lower than the un-immobilized one (0.23±0.00 U/ml). However, there was no difference activity of the immobilized (0.75±0.00 U/ml) and un-immobilized (0.76±0.01 U/ml) of protease. The model of mass transfer of un-immobilized enzyme can be fitted on the experimental data, however the model of mass transfer of immobilized enzyme did not match with the experimental data. The mass transfer coefficient of enzymatic extraction flavonoids bay leaf without immobilization was 0.17167 s−1 which greater than the reported value of obtained KLa from extraction by using electric heating.This research aims to develop the enzymatically of bay leaves phytochemical extraction process. An analysis of antioxidants, organoleptics and hedonics with variations of boiling time in Jasmine tea and Jasmine root tea a study on Kaliprau, Pemalang

There are so many jasmine plantations without any preservation and post production in Kaliprau, Pemalang. The aims of this research are analyzing the amount of antioxidant and organoleptic-hedonic test. The measurement of antioxidant used in this research is using DPPH. The organoleptic and hedonic test on 25 respondents. Jasmines that been used on this research are the flower and the root part. Through the test, some results have been found from the jasmine teas sampling with the boiling time of 15 minutes and it contain antioxidant for about 55.0% and 74.84% for the jasmine root tea. Whereas for the boiling time of 30 minutes, it contained 54.00% of antioxidant for the jasmine tea and 84.00% of antioxidant in jasmine root tea. Jasmine tea and jasmine root tea contains flavonoids. Despite the large amount of antioxidant were found in jasmine tea and jasmine root tea (50-100%). Theres a decreasing of antioxidant amount found in the samples, along with the prolonged boiling time. 84% of tresponden like the scent, flavor, color and the texture of jasmine tea and jasmine root tea. These products are finally accepted by the people and have its large amount of antioxidant contain for the jasmine tea.

Nira acidity and antioxidant activity of Palm sugar in Sumowono Village

The palm sugar not only has potential as natural sweetener but also has antioxidant. The purpose of this study was to analyze antioxidant and pH of the nira in palm sugar. The sample in this study was palm sugar from 6 different production sites. Test of antioxidant activity used DPPH method (1.1-diphenyl-2-picrylhydrazyl) with a wavelength of 517 nm. The value of absorbance solution was measured using spectrophotometry and the value of effective concentration (IC50) was counted. The pH test was measured using a pH meter. Pearsons correlation test revealed r=-0.045 with significant value 0.932 (>0.005). There was no correlation between pH value and antioxidant activity of palm sugar. IC50 value of palm sugar in Sumowono village revealed that it had a strong antioxidant activity (50 μg/ml - 100 μg/ml) that is 74,73 μg/ml; 83.94 μg/ml; 82.31 μg/ml; 83.94 μg/ml; 86.10 μg/ml; 82.13 μg/ml; 89.17 μg/ml; 89.71 μg/ml; 89.17 μg/ml; and 84.84 μg/ml). Lower IC50 values indicate higher antioxidant activity. Palm sugar with the best antioxidant activity came from the production sites which had IC50 values of 74.73 μg/ml. Potential antioxidants can be optimized by making improvements to the processing system.
