DESENVOLVIMENTO TECNOLÓGICO E CARACTERIZAÇÃO NUTRICIONAL DE MASSA ALIMENTÍCIA ENRIQUECIDO COM FARINHA DE PEIXE

The pasta as stands out for its wealth in carbohydrates and lack in quantity and quality protein. However, it occupies a prominent place among the foods consumed by the population. Given this context, this work aims to produce noodles enriched with different concentrations of fish (Tambaqui, Colossoma macropomum) and flaxseed. Five types of doughs were prepared, a control group and three sample groups with different concentrations of fish (10%, 15% and 20%) and a further group with the association of fish and flaxseed flours (10% + 10%). The samples were evaluated for moisture content, lipid, protein, fiber, ash, carbohydrates and total caloric value. The completely randomized design with three replications was adopted, determining the mean and standard deviation of the values obtained for each sample. The formulations with higher fish content had higher moisture content, protein and ash. The addition of the linseed mass of noodles resulted in an increase in calorific value and fiber values. The pasta fortification different fishmeal concentrations increased the nutritional value of the product, and compose an important alternative to improve the nutritional profile of the food.

The Perception of Consumers Vis-à-Vis Tracked Fish Measured via Electronic Instrument

Abstract Food traceability has been used to monitor production processes, and provide identification and information about sources and processes through computer technology. Technology also allows the recall of suspecting products identifying potential failures during their production. In this chapter, we discuss the impact of implementing the tracking technology into the Brazilian and Portuguese fish production chain and its impact on consumers’ attitudes using data collection through the Internet. The data collected allowed evaluating the initiative to track fish. The results showed that for 73.23% of participants, fish tracking was good and very good, and of this total, 82.19% are willing to pay more for a product with origin guarantee, which may indicate a market trend in search of a product with origin guarantee. The results also provided subsidies for the adoption of policies to implement a traceability system for fish to boost consumption.

Novo programa, novos atores: inovação e agroecologia na agricultura familiar do Tocantins

Com o uso da observacao participante e da analise documental, este artigo se constitui em um estudo exploratorio que propoe compreender como a agroecologia emerge como tema central no debate sobre inovacao para a agricultura familiar no estado do Tocantins. Entre os resultados, verificou-se que a partir da criacao do Programa Nacional de Inovacao e Sustentabilidade na Agricultura Familiar houve maior articulacao entre os atores de instituicoes de ensino, pesquisa e extensao rural na construcao de uma rede sociotecnica da Agroecologia. Alem disso, foi notavel a importância deste processo para fortalecer e promover praticas agroecologicas no Tocantins. Verifica-se, tambem, que a Agroecologia esta intrinsecamente relacionada a emergencia de novidades nos espacos rurais, integrando um conjunto aprendizagens, praticas e formas organizacionais.
