Health Professionals' and Dietetics Practitioners' Perceived Effectiveness of Fruit and Vegetable Parenting Practices across Six Countries

Fruit and vegetable intake may reduce the risk of some chronic diseases. However, many children consume less-than-recommended amounts of fruit and vegetables. Because health professionals and dietetics practitioners often work with parents to increase childrens fruit and vegetable intake, assessing their opinions about the effectiveness of parenting practices is an important step in understanding how to promote fruit and vegetable intake among preschool-aged children. Using a cross-sectional design, collaborators from six countries distributed an Internet survey to health and nutrition organization members. A self-selected sample reported their perceptions of the effectiveness of 39 parenting practices intended to promote fruit and vegetable consumption in preschool-aged children from May 18, 2008, to September 16, 2008. A total of 889 participants (55% United States, 22.6% Mexico, 10.9% Australia, 4.4% Spain, 3.3% Chile, 2.2% United Kingdom, and 1.6% other countries) completed the survey. The fruit and vegetable intake-related parenting practices items were categorized into three dimensions (structure, responsiveness, and control) based on a parenting theory conceptual framework and dichotomized as effective/ineffective based on professional perceptions. The theoretically derived factor structures for effective and ineffective parenting practices were evaluated using separate confirmatory factor analyses and demonstrated acceptable fit. Fruit and vegetable intake-related parenting practices that provide external control were perceived as ineffective or counterproductive, whereas fruit and vegetable intake-related parenting practices that provided structure, nondirective control, and were responsive were perceived as effective in getting preschool-aged children to consume fruit and vegetables. Future research needs to develop and validate a parent-reported measure of these fruit and vegetable intake-related parenting practices and to empirically evaluate the effect of parental use of the parenting practices on child fruit and vegetable consumption.

Cereal and nut bars, nutritional quality and storage stability

Six snack-type bars were manufactured, to contain oat and wheat germ and two different walnut levels, agglutinated with natural sweeteners and fats. Two bars also contained toasted amaranth with brown sugar cover and wheat extrudate, while two others, contained puffed instead of toasted amaranth. Water activity (Aw) and moisture were determined in the manufactured products. Quality and sensory evaluation and proximate analysis were carried out on the bars containing highest levels of walnuts (18%). The caloric contribution of the bars was computed by Atwater methods. The nutritional quality of the bars was determined by means of the Protein Efficiency Ratio (PER) and Net Protein Ratio (NPR), and the results were used to obtain relative PER and relative NPR. Samples of the latter bars were kept under accelerated storage for 15 days at 37 °C and analyzed every 5 days to determine their Aw, moisture, peroxide and sensory acceptability. The drying time for the cereal — and walnut — based bars was 45 min at 120 °C. All bars presented a good fiber supply and the CN1 bar, containing only oat, wheat germ and walnut, had the greatest protein content. In the sensory evaluation, the walnut level with the greatest preference was 18%. PER and NPR values of the bars did not differ significantly showing values approximately 86% that of the casein value. During storage, the moisture and Aw decreased in all the bars. Peroxides remained within the acceptable ranges; acceptability based on sensory evaluation remained best in the bar with toasted amaranth. Walnuts can successfully be used in the manufacture of snack bars as these offer good nutritional and sensory quality and remain stable in storage.

Nutrition Education in Chilean Primary Schools

The purpose of this study was to incorporate nutrition education in Chilean primary schools. The baseline information included nutritional status, food consumption and physical activity of 1,701 children from 3rd to 7th grade in ten urban and rural schools. Main results showed a high prevalence of obesity (15.4%) and overweight (19.6%), low consumption of vegetables, fruits, and dairy products, high intake of snacks and a low level of physical activity, especially in girls. Because the Ministry of Education does not allow the incorporation of new programs into the curriculum, the educational strategy was based on the development of a text book, a teachers guide, five practical guides for students from third to eighth grade and a CD-Rom. These materials were validated by 36 teachers in six schools through an educational intervention. Teachers and students considered the educational materials useful, motivational and easy to understand. This program is being implemented in 57 schools.

Obligatory urinary and faecal nitrogen losses in young Chilean men given two levels of dietary energy intake

1. The obligatory nitrogen losses were measured in young adult males of the low socio-economic group, consuming an N-free diet at 192 kJ (46 kcal)/kg per d from day 1 to 10 and 243 kJ (58 kcal)/kg per d from day 11 to 18. 2. All subjects, except one, lost weight compatible with N loss. 3. A kinetic evaluation of the results showed that the asymptotically derived urinary N loss after stability had been reached was 35.8 mg N/kg per d. The mean time to stability was 6.5 d. The subjects showed a trend toward decline in N loss while consuming the high-energy N-free diet. 4. The obligatory faecal N loss for days 1-10 was 16.1 mg N/kg per d and 8 mg N/kg per d for days 11-18. 5. Based on the factorial approach the total obligatory N loss of our subjects, for the initial 10 d, was 57.5 mg N/kg per d.

Motivaciones y barreras de los niños chilenos: ¿amenazas u oportunidades para la implementación de las guías alimentarias 2013?

INTRODUCTION Implementation of the updated Food Based Dietary Guidelines (FBDG) for the Chilean population requires the design of innovative strategies and effective. OBJECTIVE To determine motivations and barriers for children and mothers of preschool-age children to follow new FBDG messages, aiming to identify challenges and opportunities for designing effective communication and implementation strategies. METHODS A qualitative study based on 12 focus groups of 9 to 13 age children and 6 focus groups of mothers of preschool-age children, living in the north, central and south regions of the country, to analyze their reaction to each one of the 2013 FBDG messages. RESULTS AND DISCUSSION Answers of children and mothers did not show differences by gender (in the case of the children) or region of the country. Results show the most frequent and representative comments regarding each message. Challenges to reducing the consumption of foods high in energy, fat, sugar and salt include advertisements and plentiful supply and low prices for these types of foods, both in the school environment and on the street. Opportunities identified included the advertisement of fruits, vegetables and dairy products to promote their consumption, as well as the coming implementation of Law 20.606, which is expected to be an effective way to support this initiative. CONCLUSION The results of this study show that the design of strategies based on values, desires and needs of different groups will contribute to optimizing the implementation of the 2013 Chilean FBDG.

Voluntary lifestyle changes and knowledge about healthy lifestyles of chilean primary health care workers

Se evaluaron los cambios en los estilos de vida y conocimientos en alimentacion saludable y actividad fisica en profesionales de atencion primaria de salud. Se aplico una encuesta a 194 profesionales (medicos, enfermeras, nutricionistas, matronas y asistentes sociales), de los cuales el 86% eran mujeres. Se observo que durante el ultimo ano, la mayoria de los profesionales modifico sus habitos hacia estilos de vida mas saludables. Alrededor del 80% senalaron que consumen menos grasas y consumen mas verduras, dos tercios indicaron consumir menos azucar, alrededor de la mitad menos alcohol y un 45% hacen mas actividad fisica. La gente mas joven es la que ha hecho las mayores modificaciones, a pesar que aumentaron el consumo de bebidas gaseosas, alcohol y tabaco. Un 80% de los profesionales respondio correctamente las preguntas relacionadas con alimentacion y actividad fisica. Se encontro diferencias estadisticamente significativas entre los diferentes grupos de profesionales. Se concluye que muchos profesionales han efectuado cambios hacia estilos de vida mas saludable, tienen un buen conocimiento de habitos alimentarios y actividad fisica. Estos resultados indican la importancia del trabajo en equipo para contribuir a la prevencion de las enfermedades cronicas no transmisibles

Nutritive value evaluated on rats of new cultivars of common beans (Phaseolus vulgaris) released in Chile

Five new cultivars of common beans (Phaseolus vulgaris) recently released were analyzed for their proximate chemical composition and protein biological quality. The crude protein content in these cultivars ranged from 21.9 percent in cultivar Arroz 3 to 26.9 percent in cultivar Tórtola Diana (dry matter basis). Rats fed cultivar Tórtola INIA gained more weight, had a higher protein intake and registered higher PER and NPR than Tórtola corriente. On the other hand, rats consuming cultivars Arroz 3 and Fleetwood had lower weight gain, lower protein intake and lower PER and NPR than cultivar Coscorrón corriente. However, all these cultivars have a relatively good protein value as compared to other plant protein sources.
