Genetic parameters for meat quality traits of Australian lamb meat

Genetic parameters were estimated for a range of meat quality traits recorded on Australian lamb meat. Data were collected from Merino and crossbred progeny of Merino, terminal and maternal meat breed sires of the Information Nucleus programme. Lambs born between 2007 and 2010 (n=8968) were slaughtered, these being the progeny of 372 sires and 5309 dams. Meat quality traits were found generally to be of moderate heritability (estimates between 0.15 and 0.30 for measures of meat tenderness, meat colour, polyunsaturated fat content, mineral content and muscle oxidative capacity), with notable exceptions of intramuscular fat (0.48), ultimate pH (0.08) and fresh meat colour a* (0.08) and b* (0.10) values. Genetic correlations between hot carcass weight and the meat quality traits were low. The genetic correlation between intramuscular fat and shear force was high (-0.62). Several measures of meat quality (fresh meat redness, retail meat redness, retail oxy/met value and iron content) appear to have potential for inclusion in meat sheep breeding objectives.

Preliminary estimates of genetic parameters for carcass and meat quality traits in Australian sheep.

Using performance from progeny born in 2007 and 2008 generated by theInformation Nucleus program of the Cooperative Research Centre for Sheep Industry Innovation, preliminary estimates of heritability were obtained for a rangeofnovelcarcassandmeatattributesoflambrelevanttoconsumers,includingcarcasscharacteristics,meatqualityand nutritionalvalueoflamb.Phenotypicandgeneticcorrelationsofliveanimaltraitswithcarcasscompositionandmeatquality traits were also estimated. The data were from progeny located at eight sites, sired by 183 rams from Merino, maternal and terminalmeatbreedsandwererepresentative oftheMerino,BorderLeicester ·Merino,Terminal ·MerinoandTerminal · Border Leicester-Merino production types of the Australian sheep industry. Data were available from 7176 lambs for weaning weight, 6771 lambs for ultrasound scanning and 4110 lambs for slaughter traits. For the novel meat quality traits, generally moderate to high heritability estimates were obtained for meat quality measures of shear force (0.27 aged 1 day, 0.38 aged 5 days), intramuscular fat (0.39), retail meat colour (range of 0.09 to 0.44) and myoglobin content (0.22). The nutritional value traits of omega-3 fatty acids and iron and zinc contents tended to have low to moderate heritabilities (0.11-0.37), although these were based on fewer records. Fresh meat colour traits were of low to moderate heritability (0.06-0.21)whereasmeasuresofmeatpHwereoflowheritability(~0.10).Forthecarcasstraits,estimatesofheritabilitywere moderate to high for the various measures of carcass fat (0.18-0.50), muscle weight (0.22-0.35), meat yield (0.24-0.35), carcassmuscledimensions(0.25-0.34)andboneweight(0.27).Resultsindicatethatformostlambcarcassandmeatquality traits there is sufficient genetic variation for selection to alter successfully these characteristics. Additionally, most genetic correlations of live animal assessments of bodyweight, muscle and subcutaneousfat with the carcass and meat quality traits werefavourable.Appropriatedefinitionofbreedingobjectivesanddesignofselectionindexesshouldbeabletoaccountfor the small unfavourable relationships that exist and achieve the desired outcomes from breeding programs.

Genetic evaluation of crossbred lamb production. 1. Breed and fixed effects for birth and weaning weight of first-cross lambs, gestation length, and reproduction of base ewes

This is the first paper in a series that reports on a national maternal sire central progeny test program (MCPT) to evaluate the genetic variation for economically important production traits in first- and second-cross progeny of maternal and dual purpose (meat and wool) sires and the scope for genetic improvement. The MCPT program also provides direct linkages between breeds that will contribute information for across-breed genetic evaluation. Crossbred progeny by 91 sires from more than 7 maternal breeds (including Border Leicester, East Friesian, Finnsheep, Coopworth, White Suffolk, Corriedale, and Booroola Leicester) at 3 sites over 3 years with 3 link sires in common at each site and year were evaluated in this study. National estimated breeding values for the sires that were entered by industry breeders indicated that there was some selection for weight, but not other traits and the sires were generally representative of the maternal genetics available to the industry. There were 8377 base Merino and Corriedale ewes artificially inseminated with thawed-frozen semen from the 91 sires and 8193 crossbred lambs born and 6117 lambs weaned. Mixed model analyses of birth and weaning weight, lamb survival, and gestation length as well as fertility, litter size, and lamb weaning rate of the base ewes are reported. Sire breed was significant for birth weight (with a range of 4.0-4.4 kg at an average litter size of 1.8) and weaning weight (19.6-22.5 kg), as well as lamb survival (70-79%) and gestation length (147.1-150.3 days). Birth/rearing type was significant for all traits. Males were significantly heavier than females at birth and weaning, although there was no sex difference for lamb survival or gestation length when birthweight was included in the model. Pregnancy rate from the artificially inseminated base ewes varied from 40 to 84% at the 3 locations in the various years. Sire breed was significant for the number of lambs weaned per ewe lambing, but not for fetal number or litter size born. There were also significant differences in performance due to the source of the base ewes at each site.

On-farm paddock-scale comparisons across southern Australia confirm that increasing the nutrition of Merino ewes improves their production and the lifetime performance of their progeny

Experiments conducted by Lifetimewool at plot-scale have shown that differences in the maternal liveweight during pregnancy and lactation (liveweight profiles) of individual Merino ewes influences their wool production and reproductive rate as well as the birthweight, survival, weaning weight and lifetime wool production of their lambs in a predictable manner. This study determined whether these impacts of nutrition of the ewe on ewe and progeny performance are measurable on commercial properties across southern Australia at a paddock-scale where ewes were aggregated into flocks with a greater spread of the date of conception and where the liveweight profile of the flocks were managed based on random samples of 100 ewes and liveweight was uncorrected for fleece weight or conceptus. Eighteen paddock-scale experiments at 15 sites were conducted in cooperation with wool producers across Victoria, Western Australia, New South Wales, South Australia, and Tasmania. Each co-operator joined up to 1000 mixed aged adult Merino ewes. The flock was scanned using ultrasound at Day 50 from the start of joining to identify those ewes that conceived during the first 21 days of joining. These ewes were then split at random into two treatments and fed to achieve a target difference in liveweight of 10 kg or ~1 condition score/fat score at lambing. The production of ewes during their year of pregnancy and following their next joining was measured as was the performance of their progeny up to their third shearing. Only the 13 paddock-scale experiments that achieved a difference in liveweight profile at lambing of at least 4 kg were included in the final analysis. In these 13 experiments, increasing the nutrition of Merino ewes during pregnancy clearly increased the clean fleece weight and fibre diameter in ewes and the survival and lifetime wool production of their lambs. In most cases the size of the effect was not significantly different to that predicted by the relationship derived using individual liveweight profiles in the plot-scale experiments. This confirms that managing average ewe liveweight or condition score/fat score profile through better nutrition will lead to predictable increases in the performance of ewes and their progeny performance under commercial conditions and validates the use of the plot-scale relationships in economic analyses.

Pre-slaughter stress arising from on-farm handling and its interactions with electrical stimulation on tenderness of lambs.

The effect of electrical stimulation of lamb carcasses (n=269) or its absence (n=257) on shear force of m. longissimus thoracis et lumborum (LT) was monitored during ageing in pasture-fed merino lambs (n=526). The lambs were slaughtered on four different days allowing durations of between one to 10 days of recovery from pre-slaughter handling (yarding, weighing and crutching) that affected ultimate pH (pH(u)). The right LT was removed 20-40min post-slaughter, tightly-wrapped in cling film (prevents the muscle cross-section increasing and thus minimising shortening) and rapidly cooled to 15°C to enter rigor mortis and age. At 0, 4, 24 and 72h post-slaughter, pH measurements and samples for shear force measurement were taken. Pre-slaughter handling had a significant negative effect on pH(u) and several days recovery were required for pH(u) to reach values associated with optimal meat quality as reflected by pH(u). Lambs with one and three days recovery (no significant difference between them) had a pH(u)>5.7 in 50% of the muscles and 19.4%>pH(u) 5.8. Whereas, in lambs with 8-10 days recovery (no significant difference between them), only 8% had a pH(u)>5.7 and 3.1%>pH(u) 5.8. Within each slaughter day electrically stimulated lambs were always more tender than non-stimulated lambs. For non-stimulated muscles at 72h, shear force values >40N occurred for 11.2% of the muscles: for electrically stimulated muscles at 72h, shear force values >40N occurred for 1.9% of the muscles. The rates of tenderisation were slower for intermediate pH(u) values resulting in higher shear force values at all ageing durations. With ageing at 72h for intermediate pH(u), non-stimulated muscles (n=38) 17.64% were >40N and for stimulated muscles (n=34), 7.9% were >40N.

Using Australian Sheep Breeding Values to increase lean meat yield percentage

This study describes the impact of Australian Sheep Breeding Values (ASBV) for post-weaning weight (PWWT), C-site fatness (PFAT) and eye muscle depth (PEMD) on lamb carcasses within the Australian Sheep Industry CRC Information Nucleus Flock. These results are taken from the 2007 drop progeny, consisting of ~2000 lambs slaughtered at a target weight of 21.5 kg. These lambs were the progeny of sires selected to ensure genetic diversity across various production traits. As expected, the PWWT ASBV increased weight at slaughter, and hot standard carcass weight. Dressing percentage was markedly improved by increasing PEMD ASBV, thus prime lamb producers will be maintaining an animal of similar weight on farm, but delivering a markedly larger carcass at slaughter. Lean meat yield % (LMY%) was highest in the progeny of sires with low PFAT ASBV, which decreased whole carcass fatness and increased muscularity. PWWT ASBV affected carcass composition but had little impact on LMY%, as the decreased fatness was largely offset by increased bone, with relatively little change in muscle content. Lastly, PEMD ASBV had little impact on whole carcass LMY%, but did appear to cause some level of muscle redistribution to the higher value loin cuts, in turn increasing the value of the carcass lean.

Managing the nutrition of twin-bearing ewes during pregnancy using Lifetimewool recommendations increases production of twin lambs

The effect on ewe and lamb production by differential management of single- and twin-bearing Merino ewes during pregnancy and lactation was examined. The hypothesis that the survival and productivity of single- and twin-born progeny is not affected by differential management of single- and twin-bearing ewes was tested. To test this hypothesis, two ewe flocks were monitored on a commercial property in the south-east of South Australia. The body condition score of one flock of ewes was managed according to Lifetimewool recommendations for southern Australian (Lifetimewool flock; n = 464). Lifetimewool recommendations are that body condition score should be 3.0 at mating and then allowed to decline to an average of 2.7, which is maintained until lambing. Twin- and single-bearing ewes were managed as separate mobs after pregnancy scanning to meet their energy requirements. The second flock was managed similarly to the commercial ewe flock and was representative of ewe management practices in the region (normal-practice flock; n = 464). At lambing, the condition score of the Lifetimewool flock was 0.7 condition scores units greater than the normal-practice flock. Ewe clean fleece weight and fibre diameter were greater in the Lifetimewool flock and their lambs had higher survival rates to weaning. Over three shearings, progeny from Lifetimewool ewe flocks produced more clean wool (P < 0.0001) but there was no consistent effect on fibre diameter, staple length or staple strength. Twin-born lambs from ewes managed to Lifetimewool guidelines had a similar liveweight and produced similar quantity and quality of wool to single-born lambs managed to Lifetimewool guidelines, but still suffered higher rates of mortality to weaning. This suggests that it is possible to manage ewes pregnant with twins to ensure that their surviving progeny perform at a level similar to single-born progeny managed under similar targets.

A review of the genetic and epigenetic factors affecting lamb survival

Poor lamb survival pre-weaning is a major source of reproductive inefficiency in Australian sheep flocks. While nutrition and management options have been extensively researched and promoted to improve lamb survival, the present review focuses on the prospects for obtaining genetic gain and helps identify selection strategies for boosting such gains to improve overall reproductive efficiency in the Australian sheep industry. Estimated heritability for lamb survival using linear model analysis is low, although use of threshold models suggests that heritability could be higher, which, if true, could help explain the substantial genetic gains obtained in long-term selection experiments. Epigenetic mechanisms may hinder selection and quantitative trait-loci identification through confounding and/or masking genetic variances and co-variances. With sufficient information, these effects could be considered in genetic evaluations by identifying those components that are amenable to selection. Regarding indirect selection, finding effective criteria for improving lamb survival has proved elusive. Most measures of maternal behaviour, temperament and lambing difficulty researched are poorly correlated genetically with lamb survival. Of lamb behaviours and thermo-genic indicators studied, latency to bleat following handling by humans is moderately genetically correlated with lamb survival, as is neonatal rectal temperature. Industry application remains to be adequately explored for the more promising of these measures. Finally, in lieu of direct selection for lamb survival, there is merit in selecting for multiple-rearing ability or its equivalent, possibly with additional selection criteria for lamb survival and reproductive efficiency.

Genetic evaluation of crossbred lamb production. 2. Breed and fixed effects for post-weaning growth, carcass, and wool of first-cross lambs

The study evaluated post-weaning growth, carcass characteristics, and wool production of crossbred progeny of 91 sires from more than 7 maternal breeds (including Border Leicester, East Friesian, Finnsheep, Coopworth, White Suffolk, Corriedale, and Booroola Leicester). The sires were joined to Merino and Corriedale ewes at 3 sites over 3 years with 3 link sires in common at each site and year. Post-weaning weight at an average age of 200 days of 2841 ewes and 3027 wethers was analysed using mixed model procedures. The wethers were slaughtered at an average age of 214 days and carcass weight, fat, muscle, meat colour, and ultimate pH (24 h post-slaughter) were analysed. For ewes, hogget fleece weight, yield, fibre diameter, and faecal worm egg count (FEC) were analysed. Sire breed was significant (P < 0.01), with a range of 32.8–39.0 kg for post-weaning weight, 19.1–22.8 kg for hot carcass weight, and for carcass fat levels (11.1–17.2 mm at the GR site (FatGR) and 3.4–6.5 mm at the C site, adjusted to 22 kg carcass weight), with the East Friesian cross carcasses being very lean (FatGR 11.1 mm). Sire breed was significant for eye muscle area (P < 0.01) but not for eye muscle depth, meat colour L* (brightness), or ultimate pH. Sire breed was significant (P < 0.01) for greasy and clean fleece weight (CFW), yield, and fibre diameter (FD), with ranges of 0.9 kg (CFW) and 4.6 μm (FD). Sire breed was not significant for FEC. Type of birth and rearing classification was significant for most traits. National estimated breeding values for the sires that were entered by industry breeders indicated that they covered a range of genetic merit for most traits within their respective breeds and were generally representative of the maternal genetics available in the industry. Where there were large differences between the sire mean and breed mean breeding values the effects on crossbred progeny performance would be small and not expected to affect our conclusions about the breed differences reported. The results provide lamb producers with comparative information on sire breeds for growth, carcass and wool traits. The considerable variation among individual sires within the respective breeds will be reported in later papers.
