ABSTRACT This paper presents an analysis of the current relationships between three fundamental constructs in the decision-making process of the visitor – motivation, satisfaction and loyalty – of a tourist destination World Heritage Site like the city of Quito, Ecuador. The results demonstrate the existence of three motivational dimensions among foreign visitors to visit the city: firstly cultural, secondly circumstantial and finally hedonic-gastronomic. Additionally, and tending to the motivational schemes, four types of foreign visitors have been identified: a hedonic-gastronomic cultural tourist, a hedonic-gastronomic tourist, a circumstantial hedonic-gastronomic cultural tourist and an alternative tourist. The reasons or motives of the visit reveal that only the hedonic-gastronomic dimension discriminates significantly as far as the degree of perceived satisfaction and loyalty declared by the visitors are concerned.

Purpose n n n n nThe purpose of this paper is to conduct an analysis of the relationships existing among three basic constructs in the visitor’s decision-making process (motivation and satisfaction) in a tourist destination that is a World Heritage Site, such as the city of Cordoba (Spain). Bearing in mind the perception of heritage by the foreign visitors, the following four types were determined: alternative tourists, cultural tourists, emotional tourists and heritage tourists. n n n n nDesign/methodology/approach n n n n nThis paper uses the multivariate technique of grouping cases (K-means clusters) to analyse the similarity existing among the surveyed persons. From the groups or segments obtained, statistics and measurements of association were applied that provide the information necessary to study the possible trends of association existing between variables from a table of bidimensional contingencies. In the same way, non-parametric statistical procedures were used (Kruskal–Wallis H test and the Mann–Whitney U test). n n n n nFindings n n n n nThe results show the existence of four diverse motivational dimensions among the foreign tourists to visit it: hedonic, cultural, convenience and circumstantial. Of the four dimensions, the hedonic and the cultural are the most relevant. The results show the existence of a common cultural identity: the Arabic cultural identity. n n n n nOriginality/value n n n n nThis paper contributes to complete the academic literature existing on the links of the tourist with the historical and monumental heritage that he visits, and with the tourist’s behaviour.

Tomás López-Guzmán; Ana Lucía Serrano López; Jesús Claudio Pérez Gálvez; Santiago Domingo Carpio Álvarez

ABSTRACT Gastronomy has been established as one of the key elements for the promotion and consolidation of tourist destinations. The current aim is to contribute to the scientific literature in the field of the relationship between gastronomy and tourism in Latin America from the experience affirmed by North American tourists in the city of Cuenca (Ecuador). The methodology is based on a questionnaire presented to North American travelers during their visit to the city of Cuenca. The results show the existence of different segments of tourists in relation to their attitude toward the local gastronomy. Three segments are identified, and depending on their belonging to a certain segment, the tourists have different motivations with respect to gastronomy. Finally, the results permit concluding that the levels of satisfaction of the tourists differ depending on their attitude toward gastronomy, identified by the three segments.
