Diagnóstico das condições higiênicas de serviços de alimentação de acordo com a NBR 15635:2008

Summary The objective of this study was to evaluate the hygienic conditions of food service in accordance to the Brazilian Normative NBR 15635:2008. We evaluated 23 food services in the city of Santa Maria (RS) during the months of July and August in the year of 2011. As an inclusion criteria of the research, the food service business from the district of Santa Maria (RS) registered in the Surveillance of health that have the license in 2009 and updated in 2010 were used. The data collection instrument was a checklist in the good practices drawn from the Brazilian Normative for foodservices. The results showed that only 4% (n = 1) from the food services were evaluated in group I (good), 70% (n = 16) were classified in Group II (Regular) and 26% (n = 6) were classified in Group III (Bad). It can be concluded that the majority of the evaluated establishments according to used the rules are classified in the group regularly and bad, thus not attending to the requirements of the Normative.

Qualidade higiênico-sanitária dos restaurantes cadastrados na Vigilância Sanitária de Santa Maria, RS, Brasil, no período de 2006 a 2010

The present study was to evaluate, through the forms of inspection, the sanitary conditions of restaurants registered for Sanitary Surveillance (VISA) in the municipality of Santa Maria, RS, Brazil. This study included 315 inspection forms, from 120 restaurants with sanitary permits from January 2006 to December 2010. The following variables: (a) food storage conditions, (b) equipment for hot and cold storage, (c) the physical structure of establishment and (d) hygienic and sanitary conditions of food handlers, were compiled and evaluated. The results were statistically analyzed by SAS (Statistical Analysis System) version 9.2 and submitted to the chi-square and Fischer tests. It was observed that in 2009 there were higher rates of nonconformities in the legal hygienic and sanitary aspects in the establishments studied. Such fact can be related to the increasing of the number of health inspectors hired, decentralization of surveillance division, what allowed the achievement of a more detailed inspection forms, and consequently there is an increase in official reports. Additionally, in 2010, food establishments had better rates of conformity with food good manufacturing practices. Based on the information obtained, it was found that the services provided by the VISA of Santa Maria, RS, Brazil are in increasing development.

Mortalidade infantil segundo características da mãe e gestação na cidade de Santa Maria,RS

Objective: To examine infant mortality according to characteristics of the mother, pregnancy and birth weight in the city of Santa Maria, RS. Methods: A descriptive quantitative research. Information was collected on the website of the Ministry of Health, the database of the Department of the Unified Health System-DATASUS in the period 2000 to 2008. Results: it showed a higher prevalence of mortality in children with birth weights between 500 and 999g, and the mothers had education below the seven years between the ages of 15 and 24. In relation to pregnancy, the period in which the greatest number of deaths was between 32 and 41 weeks, the incidence of cesarean section. Conclusion: Further studies were recommended relating the findings with other risk factors, such as consultation and whether or not prenatal, maternal nutrition, number of pregnancies, in order to determine a reliable diagnosis of infant mortality in the municipality
