Vitamin C economy of rabbits

Undernutrition and starvation in the rat 373 (b ) the bodies of the undernourished animals contained more fat, but less protein and calcium than those of the corresponding starved animals; (c) the concentration of haemoglobin in the blood of the undernourished young rats was lower than in the blood of the corresponding starved animals; (d ) the livers of the adult undernourished animals contained much less fat, but more protein and glycogen than the livers of the adult starved animais. HERE are two volumes which no serious worker on nutrition can be without. In “The Nations Food” will be found an authoritative summary of almost all that is at present known about the nutritive value, and the chemical and even physical properties, of British foods. The first section of the book deals with the egg as food, the second with the potato asr food, the third with vegetables as food; and parts four, five, six and seven, respectively, with cereals, meat, fish and milk, all treated “as foods”. Thus no important article of diet is omitted. Each of A these seven sections is further subdivided, in a methodical manner, into a series of chapters, dealing in turn with such aspects as the biology of the food in question, its chemistry, nutritive value, production, effect of cooking, storage, and so on. THIS is a book with a flavour all its own. The author himself modestly defines his aim as being to “put before the reader the kind of methods used in the laboratory study of nutritional problems and the kind of knowledge obtained thereby”. That he has succeeded admirably in this there can be no doubt. But he has done a good deal more as well. The book resembles neither the ordinary ‘elementary science primer’ on one hand nor the usual type of ‘popular science for the layman’ on the other. It puts one hi mind rather of a series of essays, discursive, stimulating, witty, such as one might expect to find in one of the weekly literary or political reviews. With no sacrifice of accuracy, the text is enlivened by the catholic tastes as well as by the stylistic gifts of the author. It is for this reason that Mr. Bacharachs little book will be read with so much entertainment and profit not only by the man in the street to whom, as he tells us, it is principally addressed, but also by the specialist.Science and NutritionBy A.
