Feedlot consulting nutritionists were invited to participate in a survey of feedlot nutritional and management practices in Brazil. Thirty-one nutritionists completed the survey on a Web site that was designed for collection of survey data. The survey consisted of 94 questions that included general information (n = 10); commodity information (n = 12); and questions about the use of coproducts (n = 5), roughage source and levels (n = 5), finishing diet adaptation methods (n = 7), supplements and micronutrients (n = 8), feed mixers (n = 6), feeding management (n = 3), cattle management and type of cattle fed (n = 16), formulation practices (n = 17), information resources used for nutritional recommendations (n = 2), and 2 additional questions. One final question addressed the primary challenges associated with applying nutritional recommendations in practice. The number of animals serviced yearly by each nutritionist averaged 121,682 (minimum = 2,000; maximum = 1,500,000; mode = 120,000; total = 3,163,750). Twenty-two respondents (71%) worked with feedlots that feed less than 5,000 animals/yr. Labor, along with availability and precision of equipment, seemed to be the main challenges for the nutritionists surveyed. Most of the nutritionists surveyed used TDN as the primary energy unit for formulation. More than 50% of the clients serviced by the 31 nutritionists did not manage feed bunks to control the quantity of feed offered per pen, and 36.6% fed cattle more than 4 times daily. The NRC (1996) and Journal of Animal Science were the most used sources of information by these nutritionists. Overall, general practices and nutritional recommendations provided by the 31 nutritionists surveyed were fairly consistent. Present data should aid in development of new research, future National Research Council models, and recommendations for Brazilian feeding systems in which Bos indicus cattle predominate.

British and British x Continental steers (n = 560; initial BW = 339.4 +/- 1.76 kg) were used in a serial slaughter study with a completely random design to evaluate effects of zilpaterol hydrochloride (ZH; 8.33 mg/kg of dietary DM basis) on performance and carcass characteristics. Treatments were arranged in a 4 x 4 factorial (112 pens; 7 pens/treatment; 5 steers/pen) and included duration of ZH feeding (0, 20, 30, or 40 d before slaughter plus a 3-d ZH withdrawal period) and days on feed (DOF) before slaughter (136, 157, 177, and 198 d). No duration of ZH feeding x slaughter group interactions were detected for the performance measurements (P > 0.10). Final BW did not differ (P = 0.15) between the 0-d group and the average of the 3 ZH groups, but ADG was greater for the average of the 3 ZH groups during the period in which ZH diets were fed (P < 0.01) and for the overall feeding period (P = 0.05). As duration of ZH feeding increased, DMI decreased (P = 0.01) and G:F increased linearly (P < 0.01). With the exception of KPH (P = 0.022), no duration of ZH feeding x slaughter group interactions (P > 0.10) were detected for carcass characteristics. Regardless of the duration of ZH feeding, cattle fed ZH had greater HCW (P < 0.01), greater dressing percent (P < 0.01), less 12th-rib fat (P < 0.01), larger LM area (P < 0.01), less KPH (P = 0.03), and lower yield grade (P < 0.01) than the 0-d cattle. The 0-d group had greater marbling scores (P < 0.01) than cattle fed ZH diets, with a tendency for a linear decrease in marbling score (P = 0.10) as duration of ZH feeding was extended. A greater percentage of carcasses in the 0-d group graded USDA Choice or greater (P < 0.01) than in the 3 ZH groups, whereas the percentage of Select carcasses was greater (P = 0.01) for the 3 ZH groups. From d 0 to end (P = 0.04) and during the last 43 d on feed (P < 0.01), ADG responded quadratically to DOF before slaughter. No differences were detected among slaughter groups for DMI for the entire trial period; however, a quadratic response (P = 0.02) was observed for the final 43 d before slaughter. A quadratic response was also detected for the final 43 d before slaughter (P < 0.01) and from d 0 to end (P = 0.02) for G:F. Final BW, HCW, dressing percent, and 12th-rib fat increased linearly (P < 0.01) as DOF before slaughter increased. Our results indicate that no substantial effects on performance and carcass measurements were observed when ZH was fed for 30 or 40 d as opposed to 20 d, and that effects of ZH generally did not interact with DOF before slaughter.

Four trials, each with a randomized complete block design, were conducted with 8,647 beef steers (initial BW = 346 +/- 29.6 kg) in 3 different locations in the United States to evaluate the effects of zilpaterol hydrochloride (ZH) on performance and carcass characteristics of feedlot cattle. Treatments consisted of feeding ZH (8.33 mg/kg of dietary DM) for 0, 20, 30, or 40 d, at the end of the feeding period, followed by a 3-d withdrawal period before slaughter. Cattle were weighed on d 0 and 50 before slaughter (in 3 of the 4 studies), and on the day of slaughter. Data from the 4 trials were pooled for statistical analyses. No differences (P > or = 0.78) were detected among treatments for ADG and G:F from the start of the study until the final 50 d on feed. Final BW was greater for the average of the 3 ZH-treated groups (P < 0.01) than for the 0-d group. Average daily gain was greater for ZH-treated vs. control cattle during the final 50 d on feed (P < 0.01) and for the entire feeding period (P < 0.01). No differences in DMI were noted for any periods of the experiment (P > or = 0.42) for ZH-treated cattle vs. controls. No differences were noted for DMI among the ZH-treated groups for the final 50 d on feed (P = 0.81) or for the overall feeding period (P = 0.31). Feeding ZH for any length of time increased G:F (P < 0.01) for the final 50 d and overall compared with 0-d cattle. In addition, a linear increase with more days of ZH feeding was observed for G:F during the period that ZH was fed (P = 0.01), as well as for the overall feeding period (P = 0.01). The ZH-treated cattle had heavier HCW (P < 0.01), greater dressing percent (P < 0.01), reduced marbling scores (P < 0.01), less 12th-rib fat (P < 0.01), larger LM area (P < 0.01), less KPH (P = 0.01), and a lower USDA yield grade (P < 0.01) than the 0-d cattle, regardless of the duration of ZH feeding. Dressing percent increased linearly (P < 0.01) with increased duration of ZH feeding, whereas 12th-rib fat (P = 0.07), marbling scores (P < 0.01), and USDA calculated yield grade (P = 0.01) decreased linearly with increased duration of ZH feeding. Feeding ZH increased ADG and G:F and decreased overall carcass fatness. In addition, effects of ZH on measures of carcass fatness were enhanced by feeding the product for a greater length of time.

Twenty fine-wool, ruminally cannulated lambs (average weight 45–9 kg) were used in a completely random design to evaluate the ability of three internal markers to predict dry matter digestibility and two external markers to estimate faecal output. Lambs were allotted randomly to one of four diets: 100% prairie hay (PH), 100% lucerne hay (LH), 50% prairie hay:50% sorghum grain (PS) and 50% lucerne hay: 50% sorghum grain (LS). The trial consisted of a 14-day adaptation period followed by a 7-day total faecal collection period. Feed and faecal samples were subjected to 96 h ruminal fluid and 48 h acid-pepsin digestions, followed by extraction with acid detergent (IVADF) or neutral detergent (IVNDF) solution. Dry matter digestibility (DMD) calculated from feed:faeces ratios of IVADF, IVNDF and acid detergent lignin (ADL) was compared with in vivo apparent digestibility. Ytterbium-labelled forage (YLF) and dysprosium-labelled faeces (DLF) were pulse-dosed via ruminal cannulae, and faecal Yb and Dy excretion curves were fitted to a one-compartment, agedependent model for estimation of faecal output, paniculate passage rate (PPR) and mean gastrointestinal retention time. In vivo DMD in lambs fed PH was greater (P 005) than DMD calculated from IVNDF, IVADF and ADL. In lambs fed LH and LS, in vivo DMD did not differ (P > 005) from marker estimates. In vivo DMD for lambs fed PS did not differ from IVNDF or IVADF estimates but was greater than (P 005) the ADL estimate. No differences ( P > 005) were observed in recovery among the three internal markers for any of the diets. Faecal output for lambs fed PH did not differ {P > 005) from marker estimates but was overestimated by 15 to 20% by YLF and DLF. Faecal output for lambs fed LH was similar to the estimate from YLF, but less than (P 0–05) the estimate with DLF. For lambs fed PS, faecal output did not differ from marker estimates, but YLF and DLF values were 16% lower and 17% higher, respectively. No significant differences were observed in actual and estimated faecal output for lambs fed the LS diet. Estimates of PPR with DLF were numerically greater than YLF estimates for all diets except LS. Correspondingly, mean gastrointestinal retention time was less (P 005) for DLF compared with YLF for all diets except LS.

In vivo digestibility trials were conducted to evaluate the influence of shrubs containing low and high levels of soluble phenolic/tannins on digestibility and nitrogen retention by Angora goats. Each of 6 shrubs and alfalfa hay (Medicago sativa L.) were fed to goats at 30% (dry matter basis) of the diet in a barley straw-prairie hay mixture. The mixture was regulated so that all diets contained about 8% crude protein. High soluble phenolic shrubs used included big sagebrush (A rtemisia tridentata Nutt. ssp. tridentata), gray oak (Quercus grisea Liebm.), true mountain mahogany (Cercocarpus montanus Raf.), and one-seed juniper (Juniperus monosperma [Engelm.] Sarg). Low-soluble phenolic species included common winterfat (Ceratoides lanata [Pursh.], J.T. Howell), fourwing saltbush (A triplex canescens [Pursh.], Nutt.), and alfalfa. Nitrogen digestibilities of winterfat, gray oak, mountain mahogany and one-seed juniper diets were less (P .05) compared with the alfalfa control. Retained nitrogen (g/d) differed (P<.05) only among alfalfa, juniper, and mountain mahogany diets. Goats fed juniper had greater (P<0.05) retained nitrogen than the alfalfa control. Shrubs high in soluble phenolics, with the exception of big sagebrush, had elevated fecal nitrogen losses, but reduced urinary nitrogen losses compared with the alfalfa control. Forage organic matter intake (% body weight) and nitrogen intake (g/d) were correlated more highly with nitrogen retention than dietary crude protein (%) or digestible protein (%). Our objective was to characterize further the acute-phase response following endotoxin (i.e. lipopolysaccharide; LPS) exposure in the bovine. Nine pure-bred Angus castrated males (i.e. steers; average body weight = 299 ± 5 kg) were used in a randomized complete block design in environmentally controlled chambers, set at thermoneutral level, to characterize the acute physiological, endocrine, immune, and acute-phase protein responses following an i.v. bolus administration of 2.5 μg of LPS/kg body weight. One day before administration of LPS, all steers were fitted with an indwelling jugular vein catheter for serial blood collection. Blood samples were collected at 30-min intervals from -2 h to 8 h relative to the LPS challenge (time 0), and serum was harvested and stored at -80 °C until analyzed for concentrations of cortisol, pro-inflammatory cytokines, and acute-phase proteins. Indicators of thermal status (i.e. rectal temperature, ruminal temperature, respiration rate, sweat rate, and skin temperatures) were measured at 30-min intervals from -1 h to 6 h relative to the challenge. Endotoxin exposure increased (P<0.05) serum concentrations of cortisol, tumor necrosis factor-α (TNF-α), interleukin 1-β (IL-1β), IL-6, interferon-γ (IFN-γ), and serum amyloid A. Respiration rate, rectal temperature, and rump skin temperature also were increased (P<0.05) following LPS administration. Endotoxin exposure dramatically decreased ear skin temperature (P = 0.002), but tended to increase (P<0.10) ruminal temperature, shoulder skin temperature, and shoulder sweat rate. Serum concentrations of acid soluble protein, α-acid glycoprotein, IL-4 and IL-2, and rump sweat rate were not altered (P>0.24) by the challenge. To our knowledge, this report is the most complete characterization of the bovine acute-phase response to a bolus-dose endotoxin challenge conducted under thermoneutral conditions and should provide foundation data for future research.

Our objective was to determine the effects of feeding zilpaterol hydrochloride (ZH), a beta-agonist, for the final 30 d of the feeding period, with or without a terminal estrogen + trenbolone acetate (TBA) implant (Revalor-S; 24 mg of estradiol-17beta and 120 mg of TBA; REV) on meat tenderness and carcass cutout yields. Crossbred steers (n = 2,279) were divided into 6 BW blocks and 24 pens. Within each block, pens were assigned randomly to 1 of 4 treatments: 1) no terminal implant (control); 2) a terminal REV given 91 d before slaughter; 3) no terminal implant plus ZH; and 4) a terminal REV implant plus ZH (REV+ZH). All cattle received Component TE-IS (16 mg of estradiol and 80 mg of TBA) on d - 61 of the feeding period [corrected]. Zilpaterol hydrochloride was added to the diets at a concentration of 8.38 mg/kg (DM basis) during the final 30 d of the feeding period, followed by a 3-d period before slaughter in which ZH was withdrawn from the diet. Carcasses (n = 30/treatment) were selected from the 2,279 cattle and fabricated into subprimal cuts as per Institutional Meat Purchase Specifications. Strip loins were collected, cut into 2.54-cm steaks, and aged 7, 14, and 21 d, after which Warner-Bratzler shear force (WBSF), collagen content, desmin degradation, and muscle fiber diameter measurements were determined. Feeding ZH increased (P < 0.05) yield of the #112A ribeye roll, #116B chuck mock tender, #167A peeled knuckle, #169 top inside round, #171B outside round, #171C eye of round, #180 strip loin, #184 top sirloin butt, and #189A full tenderloin for ZH treatment. Longissimus muscle WBSF at 7, 14, and 21 d postmortem was increased (P < 0.001) with ZH supplementation. Desmin degradation at 7, 14, and 21 d postmortem was not affected with REV or ZH supplementation compared with controls. Zilpaterol hydrochloride had an additive effect with REV on increasing LM fiber diameter (P < 0.001). When fed to cattle that received a terminal implant of REV, ZH potentially increased LM WBSF as a result of induced muscle hypertrophy. During the 21-d aging period, WBSF decreased with aging, suggesting that carcasses from cattle supplemented with ZH might require longer aging time to ensure that acceptable levels of tenderness are reached.

A study involving 6 feeds of widely varying chemical properties fed to 6 steers in a Latin square design was conducted to evaluate the potential of fecal chemical characteristics for predicting ruminant nutritional status. Forage intake, diet in vivo digestibility %, and diet nitrogen % were used as dependent variables and fecal nitrogen %, nucleic acid %, nonflber bound nitrogen %, ether extract %, neutral detergent fiber %, acid detergent fiber %, acid detergent lignin %, water soluble material %, and acid/pepsin disappearance % were used as independent variables in regression equations. Forage intake and diet in vivo digestibility could not be accurately predicted from any single variable or combination of independent variables. Fecal acid/pepsin disappearance was the independent variable most highly correlated with forage intake (r = .63) and diet in vivo digestibility (r = .33). Diet nitrogen % was highly correlated with fecal nitrogen % (r = .81) and fecal acid pepsin disappearance % (r = .83). Combined data from this and other studies give a generalized regression equation that shows potential for detecting nitrogen deficiencies in steer diets from fecal N % (organic matter basis) when steer diets contain low levels of soluble phenolics. Orange peel and orange pulp are by-products that are included in feedlot and dairy cattle diets because of their low cost and high nutritional quality. The antimicrobial activity of citrus oils has been reported previously. The present study was carried out to determine whether these citrus by-products exert antimicrobial effects on Escherichia coli O157:H7 and Salmonella Typhimurium populations that are found in cattle gastrointestinal tracts. The growth of pure cultures (n = 3) of E. coli O157:H7 and Salmonella Typhimurium were reduced (p < 0.05) by addition of 2% (w/v) orange pulp and orange peel. Ruminal fluid was collected from cattle (n = 2) and E. coli O157:H7 or Salmonella Typhimurium were added. The addition of orange pulp and peel to in vitro mixed ruminal microorganism fermentations (n = 3) demonstrated that both orange pulp and peel reduced E. coli O157:H7 and Salmonella Typhimurium populations at least 2 log(10) in mixed ruminal fluid fermentations. Addition of orange pulp reduced (p < 0.05) E. coli O157:H7 populations from 10(5) to 10(2) colony-forming units (CFU)/mL and Salmonella Typhimurium populations (p < 0.05) from 10(4) to 10(2) CFU/mL. These results indicate that orange pulp and/or peel included in ruminant diets could decrease ruminal populations of foodborne pathogenic bacteria. Further research is needed to determine whether the antimicrobial activity of orange products against E. coli O157:H7 or Salmonella Typhimurium is expressed in the lower gastrointestinal tract.

Abstract Restricted and programmed feeding are two commonly used approaches to manage feed intake by cattle. Restricted feeding, which is most often applied to starting cattle on feed and to finishing cattle, takes various forms but generally includes any method of feed intake management with which intake is restricted relative to actual or anticipated ad libitum intake. Conversely, programmed feeding, which is most frequently used in growing programs, is a method in which net energy equations are used to calculate the quantities of feed required to meet the needs for maintenance and a specific rate of gain. Both restricted and programmed feeding have been shown to improve feed efficiency, perhaps in part because recent research data suggest that body energy gain by cattle increases in a diminishing manner with increasing energy intake. Nonetheless, commercial application of restricted and(or) programmed feeding is limited by concerns related to application in large vs small pens and potential negative effects of restriction and(or) programming on daily gain and carcass quality grade. Research findings suggest consistent improvements in feed efficiency, generally decreased daily gain, and generally lower carcass quality grade when intake is restricted from 5 to 15% relative to pair-fed ad libitum controls in finishing cattle. Application of restricted and(or) programmed feeding during growing periods followed by ad libitum feeding, however, seems to have little effect on subsequent performance and carcass quality grade. Although restricted feeding offers the advantages of simplified feed bunk management, advanced knowledge of feed milling needs, and potential environmental benefits, additional research and field-level fine tuning will be needed before widespread commercial application is likely.
