Quantitative determination of triacylglycerols separated on capillary columns according to acyl carbon number and level unsaturation

The quantitative determination of triacylglycerols separated according to acyl carbon numbers and level of unsaturation was studied on two 10-m immobilised SE-54 columns. The fat samples were silylated before on-column injection. The 0.2 mm I.D. column showed higher resolving power and the 0.32 mm I.D. column better repeatability. The application to real quantitations was investigated with analyses of butter-fat solid and liquid fractions and of untreated and interesterified 70-30 mixtures of butter-fat solid fraction and hydrogenated rapeseed oil. Changes in the triacylglycerol composition induced by interesterification and fractionation are so pronounced that analysis on capillary columns can be recommended, in spite of only fair repeatability.

Many dairy products are made through the process of fermentation. The quality of such products depends strongly on the cultures used with fermentation. The functional micro-organisms involved in these processes may have very different properties, but they are often lactic acid bacteria. Those cultures are referred to as “starters”.

Accelerating the Ripening and Improving the Flavor of Emmenthal Cheese with Selected Lactobacillus Casei-Cultures

The aim was to isolate and combine new active Lactobacillus casei-cultures for emmenthal cheese. Acid production, proteolytic activity and physiological properties of the strains were of main interest. The new starters were used in normal cheese manufacture. The flavor of the test cheeses was clearly better than that of control cheeses. By combining new active starters we have succeeded to improve the flavour and to accelerate the ripening of emmenthal cheese.

Inter-Esterification of Butter Fat Solid Fraction/Rapeseed Oil Mixtures with Candida Cylindracae Lipase as Catalyst

Butter fat solid fraction/rapeseed oil mixtures were interesterified with Candida cylindracae lipase as catalyst. The changes in triacylglycerol composition induced by inter-esterification were followed by quantitative determination of triacylglycerol s with different acyl carbon number and level of unsaturation by high resolution gas chromatography. The melting and crystallisation properties of the reaction products were determined by DSC method.
