Ethics is a growing concern in American society; consequently, business ethics is also becoming a concern in the hospitality industry. This article investigated the perceptions and preparations of hotel general managers toward teaching business ethics in their hotels and ethics education in college hospitality programs and within the hotel industry. For hotel professionals, business ethics is normally discussed or taught during employee training sessions. The target population of this study was hotel general managers in the United States. The research implied that most hotel companies have not incorporated and implemented ethics education into their training programs; however, hotel general managers did realize that business ethics is an essential part of business success. Therefore, general managers indicated that it is imperative for hospitality organizations and programs to offer ethics education and training for their hospitality employees and college students.

ABSTRACT The purpose of this study was to determine which forecasting model would most accurately predict meal participation at university residential dining facilities. Forecasting techniques including naïve, moving average (3 versions), and simple exponential smoothing were applied to data collected from two dining halls over 15 weeks. An analysis of the forecasting models using Mean Absolute Deviations (MAD), Mean Squared Errors (MSE), and Mean Absolute Percentage Errors (MAPE) indicated that simple mathematical forecasting techniques provided better predictions (MAPE ≤ 6.4%) than the naïve method in all cases studied. Moving average methods outperformed other methods 83% of the time. Implications are discussed.

The primary purpose of this paper was to report the current profile and development of hospitality programs in Taiwans colleges and universities. Approximately 21 percent of colleges and universities now have a hospitality related program (i.e., hotel, restaurant, and tourism management). Information provided in this paper includes names and characteristics of institutions, degree awarded, faculty composition, enrollment number, and credit requirements. From this report, hospitality educators and practitioners will gain an understanding of Taiwans hospitality and tourism education and will have access to detailed program information. International educators can utilize this information to help determine the adequacy of programs as potential collaboration or exchange partners. Practitioners may also use the information to recruit students as potential interns or employees as hospitality businesses expand globally and their customers become more international.
