Erratum to: The use of thyme and laurel essential oil treatments to extend the shelf life of bluefish (Pomatomus saltatrix) during storage in ice

The objective of this investigation was to study the effect of thyme and laurel essential oil treatments on the quality of bluefish during storage in ice for 13 days. The quality of bluefish during storage time was evaluated by sensory, chemical, physical, physicochemical and microbiological analysis. According to the sensory evaluation results, shelf life of control and treated bluefish samples stored in ice were 9 and 11 days, respectively. Total volatile base nitrogen and trimethylamine values gave acceptable results for up to 9 days for the control groups samples and 13 days for treated groups. Free fatty acid, peroxide and thiobarbituric acid values for treated samples were lower than the control. Microbial growth during storage in ice for control samples was higher than treated samples. The results obtained from this study showed that the shelf life of stored bluefish in ice has extended by 3–4 days compare to the control samples.

Preservation of Stuffed Mussels at 4°C in Modified Atmosphere Packaging

The stuffed mussel is a traditional, ready-to-eat food in Turkey which is produced by cooking rice and various spices filled inside the mussel. This article examines the effect on sensory, chemical, and microbiological parameters of stuffed mussels of two gas mixtures—MAP1 50% N2/50% CO2 and MAP2 100% CO2—used as modified atmospheres for cold storage at +4°C. Air packaged samples were chosen as the control group. Based primarily on sensory characteristics, MAP1 gas mixture was the most effective for stuffed mussel. According to sensory results, it has been determined that the control samples kept until the 11th day, while the MAP1 and the MAP2 groups kept until the 13th day. Of the chemical indices determined, the TVB-N values of MAP1 and MAP2 remained lower than the proposed acceptability limits of 20 mg N/100 g, up to 13 days of storage. Microbiological analysis results did not find any differences between the groups. It was found that the shelf life of air and MAP1-MAP2 packaged samples were 7 and 11 days, respectively.

The Chemical and Sensory Quality of Smoked Sturgeon (Huso huso): A Case Study

In this study, the tail flesh of sturgeon acquired from the fish market in Beşiktaş-Istanbul, Turkey was put through hot smoking. The chemical composition of raw and smoked sturgeon was determined. The protein, lipid, ash, and moisture of the muscle tissue in raw and smoked sturgeon were found to be 17.63 to 17.49, 6.07 to 9.59, 0.79 to 2.71, and 75.42 to 68.40%, respectively. Both the raw fish and the smoked fish meat were categorized to possess high quality characteristics with pH, total volatile base nitrogen (TVB-N), and trimethylamine nitrogen (TMA-N) values. After smoking, the skin color lightness (L*) of raw fish was determined to decrease, while the flesh color lightness of raw fish was determined to increase. The redness (a*) and the yellowness (b*) of both the skin and the flesh were determined to increase. Sensory parameters of color, smoke aroma, flavor, texture, chewiness, and overall acceptance for smoked sturgeon was described as excellent and its flesh tasty.
