4週齢のFischer系雄ラットに, 酸処理によってフィチン酸を除去した小麦ふすま, または二軸エクストルーダー処理した小麦ふすまを含む飼料を4週間投与し, これらの処理が高食物繊維含有 (15%) 飼料におけるミネラルの利用性ならびに食物繊維の消化性に与える影響について検討した。1) 小麦ふすまの酸処理または二軸エクストルーダー処理によってCaの見かけの吸収率・蓄積率, また無処理小麦ふすまを二軸エクストルーダー処理することによりPおよびMgの見かけの吸収率・蓄積率は上昇したが, Znのそれらには影響が認められなかった。2) 大腿骨重量は, 酸処理によりフィチン酸を除去した小麦ふすま群 (酸処理ふすま群および酸処理後二軸エクストルーダー処理したふすま群) で増加した。また, 無処理小麦ふすまを二軸エクストルーダー処理することにより, 骨中のMgおよびZn含有量が低下した。3) 食物繊維の消化率は酸処理により低下した。
