Survey of Dairy Management Practices on One Hundred Thirteen North Central and Northeastern United States Dairies

The objective was to conduct a broad survey of dairy management practices that have an effect on animal well-being. Dairies were visited during the fall and winter of 2005 and 2006 in Wisconsin, Minnesota, Indiana, Iowa, and New York. Data were collected on 113 dairies on colostrum feeding, dehorning, tail-docking, euthanasia methods, producer statements about welfare, use of specialized calf-raising farms (custom), level of satisfaction with calf-raising by producers, and cow behavior. Calves were raised by the owner on 50.4% of dairies; 30.1% were raised on custom farms during the milk-feeding period, 18.6% were custom raised after weaning, and 1% sold calves with the option to buy them back as first-lactation heifers. A total of 51.8% of producers were very satisfied with their current calf-raising methods. Three feedings of colostrum were fed to the calves on 23.9% of dairies, 2 feedings on 39.8% of farms, 1 feeding on 31.0% of farms, and colostrum replacement products were fed on 5.3% of farms. Many farms (61.9%) provided 3.8 L at first feeding. Calves were dehorned at different ages by various methods. By 8 wk, 34.5% of calves were dehorned. By 12 wk, 78.8% of calves were dehorned. The majority of calves were dehorned by hot iron (67.3%). The remainder were dehorned by gouging (8.8%), paste (9.7%), saw (3.5%), or unknown by calf owner (10.6%). Anesthetic use was reported by 12.4% of dairy owners and analgesia use by 1.8%. Tail-docking was observed on 82.3% of dairies. The most common reported docking time was pre- or postcalving (35.2%). The second most commonly reported time was d 1 (15.4%). Rubber band was the most common method (92.5%), followed by amputation (7.5%). Three dairies amputated precalving, 1 at 2 mo and 3 at d 1 or 2. Cow hygiene was the most common reason given to dock (73.5%), followed by parlor worker comfort (17.4%) and udder health (1.0%). Producers reported 2.0% of cows obviously lame. Gun was the preferred euthanasia method (85.7%), followed by i.v. euthanasia (8.0%), live pick-up (1.8%), and nondisclosure (3.5%). Most producers (77.9%) stated that cows were in an improved environment as compared with 20 yr ago, whereas 8.0% stated conditions were worse, and 14.2% were undecided. Dairies with higher percentages of cows that either approached or touched the observer had lower somatic cell counts. The survey results showed management practices that were important for animal welfare.

Relationships of behavioral and physiological symptoms of preslaughter stress to beef longissimus muscle tenderness

Relationships between behavioral and physiological symptoms of preslaughter stress and LM Warner-Bratzler shear force (WBSF) were investigated using Bos taurus steers (n = 79) and heifers (n = 77). Measurements of heart rate, respiration rate, rectal temperature, and concentrations of serum cortisol and plasma epinephrine were used as indicators of stress associated with physical handling and chute restraint, whereas concentrations of cortisol, glucose, lactate, and creatine kinase in blood samples obtained at exsanguination were measured to reflect physiological reactions of animals to transportation stress. Increased plasma epinephrine concentration, indicative of acute handling stress, was associated with elevated heart rate (r = 0.42, P < 0.001) and rectal temperature (r = 0.34, P < 0.001) during restraint, increased plasma lactate (r = 0.22, P = 0.006) and serum creatine kinase (r = 0.28, P < 0.001) concentrations at slaughter, and greater LM WBSF (r = 0.22, P = 0.006). Plasma lactate concentration at slaughter, which reflected an adrenergic stress response to transportation, was associated with lesser final LM pH (r = -0.30, P < 0.001) and greater LM WBSF (r = 0.26, P = 0.002). Categorical analyses of chute and posttransportation behavior scores (calm vs. restless vs. nervous) showed that cattle exhibiting adverse behavioral reactions to handling and chute restraint had increased (P < 0.05) values for plasma epinephrine concentration, heart rate, and rectal temperature during chute restraint, elevated (P < 0.05) plasma lactate concentration at slaughter, and increased (P < 0.05) LM WBSF. In addition, cattle showing behavioral symptoms of stress after transportation had greater (P < 0.05) plasma glucose and lactate concentrations at slaughter and produced LM steaks that were 0.34 kg tougher (P < 0.05) when compared with calm cattle. No carcasses were identified as dark cutters, and LM pH did not differ (P > 0.05) among behavior categories. Grouping cattle according to differences in plasma lactate concentration categorized them according to mean differences in LM WBSF. Moreover, steaks from cattle with the greatest plasma lactate concentrations at slaughter (91st to 100th percentile) had a delayed response to aging that persisted until 14 d postmortem. Stress-induced differences in LM tenderness observed in this study were independent of differences in muscle pH.

Use of exsanguination blood lactate to assess the quality of pre-slaughter pig handling.

The objective of these studies (Exp.1, n=76; Exp.2, n=140) was to characterize the relationship of pre-slaughter animal-handling events to exsanguination blood lactate concentration ([LAC]) in a commercial pork processing plant. Pearson correlations indicated relationships (P<0.05) between [LAC] and the number of times a pig jammed, backed up and reared (Exp.1), and [LAC] was correlated (P<0.05) with electric prod use and vocalization in response to prod use in the crowd pen, as well as jamming in the single-file chute (Exp. 2). Single degree of freedom contrasts indicated that pigs experiencing one or more events (i.e., jamming, rearing and/or backing up) while moving through a single-file chute had greater (P<0.03) [LAC] than pigs that did not experience these events in both experiments, whereas pigs prodded in the crowd pen had greater (P=0.03) [LAC] than pigs that were not prodded (Exp. 2). This study provides data demonstrating that specific pre-slaughter animal-handling events are related to post-slaughter [LAC] in a commercial setting.

Effect of visual marbling on sensory properties and quality traits of pork loin.

Pork loins (N=53) were selected from a commercial packing plant to determine the influence of subjective marbling score on sensory attributes and eating quality properties. The pork loins were obtained from commercially raised hybrid barrows (average carcass weight=67.7 kg), originating from nine cooperating herds, and fed similar diets throughout the finishing period. Carcass quality measurements, trained sensory panel analyses, fatty acid composition, thiobarbituric acid-reactive substance (TBARS) index, and cholesterol content were assessed and analyzed on the individual pork loins. With an increase in marbling level, there was a corresponding decrease in drip loss (P=0.049) and observed increases in pH (P=0.001), sensory tenderness (P=0.001), and sensory juiciness scores (P=0.017). The most notable results demonstrated that protein concentrations were reduced as marbling levels amplified (P=0.012). The increase in marbling score was observed to be a significant source of variation in polyunsaturated fatty acid (PUFA) concentrations. Linoleic and arachidonic acids decreased in both raw and cooked samples as marbling score increased. The data demonstrated that visual marbling score does have an influence on sensory properties and pork quality.

Effects of ractopamine and trenbolone acetate implants with or without estradiol on growth performance, carcass characteristics, adipogenic enzyme activity, and blood metabolites in feedlot steers and heifers

Two experiments were conducted to evaluate effects of ractopamine (RAC) and steroidal implant treatments on performance, carcass traits, blood metabolites, and lipogenic enzyme activity in feedlot cattle. In Exp. 1, yearling steers (n = 486; initial BW = 305 kg) were used in a 3 × 3 factorial arrangement of RAC doses of 0 (R0), 100 (R100), or 200 (R200) mg·steer(-1)·d(-1) fed for 28 d and implant regimens (implant-reimplant) of no implant-no reimplant (NI-NI), 120 mg of trenbolone acetate (TBA) and 24 mg of estradiol-17β (E17B)-no implant (RS-NI), or 80 mg of TBA and 16 mg of E17B followed by 120 mg of TBA and 24 mg of E17B (RI-RS). Except for KPH and skeletal maturity score, no RAC × implant interactions were noted (P > 0.10). Carcasses from R200 were 6.3 kg (P = 0.042) heavier than those from R0. Marbling, calculated empty body fat (EBF), and USDA quality grade did not differ (P > 0.10) among RAC treatments. The RI-RS steers had 12.6 kg (P = 0.001) and 41.1 kg (P < 0.001) greater HCW than RS-NI and NI-NI, respectively. Despite no difference (P > 0.10) in EBF, marbling score was decreased for RI-RS (P < 0.001) and RS-NI (P = 0.001) relative to NI-NI, resulting in 14.6 and 11.4 percentage unit fewer USDA Prime and Choice carcasses with RI-RS (P = 0.008) and RS-NI (P = 0.039) than with NI-NI. In Exp. 2, heifers (n = 48; initial BW = 347 kg) were used in a 3 × 2 factorial arrangement of RAC doses of 0 (R0) or 250 (R250) mg·heifer(-1)·d(-1) and implant regimens of none (NI), 200 mg of TBA (TO), or 200 mg of TBA and 20 mg of E17B (TE). Blood samples were collected at various times during the feeding period, and subcutaneous adipose samples were collected on d 119. For growth and carcass measurements, no RAC × implant interactions (P > 0.10) were detected. The RAC-supplemented heifers had greater HCW (P < 0.10) with no difference in marbling score. For implant regimens, TE heifers had greater HCW than the NI (P = 0.001) and TO (P = 0.037) heifers. Although EBF did not differ among implant treatments (P > 0.10), TE (P = 0.021) and TO (P = 0.039) had fewer Choice carcasses than NI. Heifers with implants had decreased cortisol and increased IGF-1 and NEFA (P < 0.10) compared with NI heifers. An implant × RAC interaction was detected (P = 0.001) for serum urea nitrogen (SUN), with TE and RAC-supplemented heifers having decreased SUN. These data suggest that the effects of implant and RAC on growth and carcass traits are independent and that USDA quality grade and marbling score can differ significantly among carcasses with similar calculated EBF values.

The relationship between exsanguination blood lactate concentration and carcass quality in slaughter pigs

A group of 128 cross-bred barrows were used to determine the relationship between exsanguination blood lactate concentration ([LAC]) and carcass quality following commercial marketing conditions. After 10h of feed withdrawal, pigs were loaded on a truck with a hydraulically lifted second deck and transported approximately 1h to the slaughter facility. Pigs were rested for 8h and stunned with carbon dioxide. Blood lactate concentration was measured on exsanguination blood. Fourteen pork quality measurements were obtained following normal post-mortem processing. Pearson correlations were used to determine the relationships between [LAC] and the meat quality parameters. Exsanguination blood lactate concentration ranged from 4 to 19.7 mM. Higher lactate was associated with lower 60 min pH (P=0.0004) and higher drip loss (P=0.02). These results suggest that under low-stress loading and standard marketing conditions, exsanguination [LAC] is predictive of the rate of early post-mortem metabolism.

Comparison of flight speed and exit score as measurements of temperament in beef cattle

Observations were collected for the purpose of comparing exit velocity measurements in the form of exit score (ES; walk, trot, canter, or run) and flight speed (FS) as assessments of cattle temperament. Squeeze chute exit velocity was obtained for 1,181 crossbred yearling steers using ES and FS temperament systems. Flight speed used infrared sensors to determine the time taken for an animal to traverse a fixed distance of 1.83 m after exiting the squeeze chute. Exit score (1=walk, 2=trot, 3=canter, and 4=run) was assigned by 2 different observers when each steer crossed a fixed point between the infrared sensors. All animals were scored with each system (ES and FS) simultaneously on exiting the squeeze chute on d -21 and d -1 of the experiment. Of the 1,181 cattle, 357 were moved to a nearby research feedyard for use in a 140 d feedlot trial. These cattle were scored using both measurement systems and BW was recorded at 35 d intervals throughout the trial. Exit score was assessed for observer reliability, ES and FS were compared for measurement repeatability, and both were assessed on ability to predict ADG. Exit score between observers on a single day showed considerable agreement (weighted Kappa=0.66), indicating the system was reliable between different observers. However, the agreement for a single observer between day was only moderate (weighted Kappa=0.40), indicating a day effect for ES. In addition, although mean velocities for day were not different (P>0.18; FS=2.98±.87 and 3.02±0.87 m/s for day, respectively), the persistence of FS for each animal was low (Spearman rank correlation coefficient=0.25). The frequency that an animal would be placed into the same third of FS or receive the same ES on consecutive weigh days was 50% and 60.0%, respectively, and both were moderate predictors of ADG (R2=0.14 and R2=0.17). These data indicate that ES and FS are reliable instruments for assessment of temperament on a given day, and show moderate repeatability across days. Exit score and FS show similar ability to predict ADG and can be used interchangeably as measures of temperament.

Effects of Lifetime Copper, Zinc, and Manganese Supplementation and Source on Performance, Mineral Status, Immunity, and Carcass Characteristics of Feedlot Cattle12

Two calf crops (n = 140, yr 1; n = 130, yr 2) from the same cowherd were used to evaluate the effects of lifetime Cu, Zn, and Mn supplementation and source on performance, status, immunity, and carcass traits of feedlot cattle. Dams were supplemented with trace mineral treatments from approximately 80 d pre-calving through 120 d post-calving. Treatments included 1) control (no supplemental Cu, Zn, or Mn), 2) organic (ORG; 50% organic and 50% inorganic Cu, Zn, and Mn), or 3) inorganic (ING; 100% inorganic CuSO4, ZnSO4, and MnSO4) trace minerals. In the feedlot, calves were maintained on the same treatments, except that ORG contained 33% organic and 67% inorganic Cu, Zn, and Mn. Cattle received a growing diet for 56 d and a finishing diet for 140 d (yr 1) and 145 or 181 d (yr 2) prior to harvest. There was a tendency for a growing-phase year × treatment interaction (P=0.10), and a finishing-phase year × treatment interaction was present (P<0.04) for BW gain to feed ratio (G:F). In yr 1, G:F was greater (P<0.05) in ORG cattle than in ING cattle during both feeding phases; non-supplemented controls had a greater (P<0.01) finishing phase G:F than did supplemented cattle. Supplemented cattle had greater (P<0.01) liver Cu concentrations than non-supplemented controls throughout both feeding phases, and liver Mn concentrations were greater (P<0.02) in supplemented cattle than in non-supplemented controls at the end of the finishing phase.

Copper and lipid metabolism in beef cattle: a review.

Results from experiments investigating Cu metabolism in ruminants indicate that Cu is involved in lipid metabolism. Copper supplementation ranging from 10 to 40 mg of Cu/kg of DM to high-concentrate finishing diets decreased subcutaneous adipose tissue deposition and decreased cholesterol concentrations but increased unsaturated fatty acid composition of LM. Serum norepinephrine tended to be greater in Cu-supplemented steers after a 24-h feed withdrawal and at 2 h postfeed consumption, potentially explaining the reduction in subcutaneous adipose tissue deposition. However, when exogenous norepinephrine was administrated, serum NEFA concentrations were less in Cu-supplemented steers, possibly due to the nonsupplemented control steers having a greater subcutaneous adipose tissue depth at slaughter relative to Cu-supplemented steers. Furthermore, in vitro basal and epinephrine-stimulated lipolytic rates of subcutaneous adipose tissue were greater in Cu-supplemented steers relative to controls. These data indicate that that Cu may influence lipogenic or lipolytic function in subcutaneous adipose tissue. In an attempt to further investigate the effect of Cu on lipid metabolism, lipogenic, lipolytic, and homeostatic mechanisms related to Cu are currently being studied. Recent data indicate that genes involved in bovine liver Cu homeostasis are correlated with Cu transporter protein gene expression in the bovine liver. Therefore, the overall intent of this review is to discuss possible mechanisms whereby Cu may affect lipid metabolism in ruminants.

The effects of pre-slaughter pig management from the farm to the processing plant on pork quality.

Two experiments (Exp.1, n=80; Exp.2, n=144) were conducted to determine the effects of pre-slaughter pig management on pork quality by monitoring blood lactate concentration ([LAC]) during marketing. [LAC] was measured at: (1) baseline at farm, (2) post-loading on truck, (3) pre-unloading after transport, (4) post-unloading at plant, (5) post-lairage, (6) post-movement to stun, and (7) exsanguination. Pearson correlations were used to determine relationships between [LAC] and meat quality. Higher [LAC] post-loading or a greater change in [LAC] during loading resulted in increased 24h pH (P=0.002, P=0.0006, Exp.1; P=0.0001, P=0.01, Exp.2, respectively), decreased L* (P=0.03, P=0.04; P=0.001, P=0.01) and decreased drip loss (P=0.02, P=0.12; P=0.002, P=0.01). Even though improved handling during loading is important to animal well-being, it will not necessarily translate into improved pork quality.
