Detection of Ethanol in Processed Foods

ま え が き 従来か らエタ ノール(以 下 アル コール と略す)の 持つ 微生物増殖抑制作用 が食品加工上利用 され てお り,昭 和 55年2月 告知 に よる過酸化 水素 に関す る措置 に よって, ア ル コ ー ル への関心 は一層高 ま りつつ ある と考 え られ る. 河西 ら1)は,み そに対す る ソル ビン酸 の有効性を再検 討 し,一 方 ソルビン酸 にかわ ってアル コールの効果 につ いて検討 した結果 を報告 している.ま た,豊 田2)は 食パ ンな どのアル コール含有量 につ いて報告 している. アル コールの持 つ有用性 のゆえに,広 範囲の食品にア ル コールが使用 される可能性を考え,こ のたび市販 食品 のアル コール含量調 査を行 い若 干の知見を得 たので報告 す る. 実 験 の 部 1. 試薬 および装置 1) アル コール標 準溶液:ア ル コール(和 光純薬 工業 (株)製,特 級,99.5v/v%を 水を用 いて1v/v%と した. 2) ソ ル ビ ン酸 お よび安息香 酸標 準溶液:衛 生試験 法3)の 方法 に従い ソル ビン酸(和 光純薬 工業(株)製,特 級)お よび安息香 酸(和 光純薬 工業(株)製,特 級)を 用 いて調製 し,そ れ ぞれ1ml中 に ソル ビン酸 として5μg お よび安息香 酸 として10μgを 含む ように した. 3) ガス クロマ トグラフ:(株)島 津製 作所製GC-5A (水素炎イオ ン化検出器付 き) 4) 分光光度計:(株)日 立製作所製323自 記分光光 度計 2. 試 料 加工食品は25品 目112検 体を対象 とした.包 装形態 は 袋 詰お よびびん詰な どで あった. 3. 実 験 方 法 入手 した試料 のなか には保存料 とアル コールを同時 に 使用す ることに よ り,一 層効果を期待 してい るもの もあ ると考え られ,試 験項 目は アル コールお よび保存料 と し た. アル コールお よび保存料の定量方法 の骨子 は概ね衛生 試 験法,注 解3),4)の方法に従 った.吉 年 ら5)は しょう油 のアル コール含量の測定に関 して ガス クロマ トグラフ ィ ーに よる方法を報告 し て い る.著 者 らは これ らをふ ま

Volatile Components in Polypropylene Containers

The volatile components in 22 samples of commercial polypropylene (PP) containers were identified and determined by gas chromatography, with due consideration of solvent residues.The volatile compounds from PP resins could be classified largely into two groups.One was saturated C6 hydrocarbons (detected in 6 samples), and the other was saturated C7 hydrocarbons (detected in 16 samples).In the group of C6 compounds, n-hexane was the main component, whereas the C7 compounds were a mixture of 2-methylhexane, 3-methylhexane, n-heptane and methyl-cyclohexane.The amounts of C6 and C7 hydrocarbons in PP resins analyzed after extraction into toluene were as follows: C6 hydrocarbons 15-23ppm; C7 hydrocarbons 34-343ppm.

Studies on Analysis of Food Additives (VIII)

The existing method for determining nitrite ion in fish sausage, for example, themethod being included in “Standard Methods of Sanitary Inspection Guide” issued by the Ministry of Health and Welfare was studied.The authors clarified the following points through analytical experiments.1) The nitrite ion in a test solution prepared from fish sausage disappeared completely when the solution was distilled. Therefore, the test solution should be developed without distillation, though it is colored or turbid, and in this case, the test solution should be used as a control.2) The phosphate buffer solution (pH 7) as an extracting solvent for nitrite ion (NO2-) was more effective than water. Because the loss of the nitrite ion was less with the use of the buffer solution than water.3) Thirty minutes were quite enough to extract nitrite ion from fish sausage.
