The aim of this study was to investigate the effects of bee pollen ethanolic extracts on the in vivo gastrointestinal tract microflora colonization of broiler chickens. A completely randomized experiment based on six treatments (different concentrations of bee pollen - 0, 5, 15, 25, 35 and 45 g kg(-1) diet) was used during 7 weeks. The highest count of faecal Enterococci was found in the experimental group with the addition of 15 g of pollen (8.85 ± 0.87 log CFU g(-1)) per 1 kg of feed mixture. The highest count of Lactobacilli was detected in the experimental group with 35 g of pollen per 1 kg of feed mixture and the highest number of the Enterobacteriaceae genera count was found in the control group (8.43 ± 0.15 log CFU g(-1)). Moreover, the MALDI TOF MS Biotyper identified the following genera: Escherichia coli, Proteus mirabilis, Klebsiella oxytoca, as well as Lactobacillus acidophilus, L. crispatus, L. fermentum and L. salivarius from the Lactobacilli group and Enterococcus avium, E. casseliflavus, E. cecorum, E. faecalis, E. faecium, E. gallinarum, E. hirae and E. malodoratus from the Enterococci group. Additionally, the in vitro antimicrobial activities of pollen against five bacteria species isolated from gastrointestinal tracts of chickens were tested. The best antimicrobial effect of the pollen extract was detected against K. oxytoca.

In the recent past, food packaging was used to enable marketing of products and to provide passive protection against environmental contaminations or influences that affect the shelf life of the products. However, unlike traditional packaging, which must be totally inert, active packaging is designed to interact with the contents and/or the surrounding environment. Interest in the use of active packaging systems for meat and meat products has increased in recent years. Active packaging systems are developed with the goal of extending shelf life for foods and increasing the period of time that the food is high quality. Developments in active packaging have led to advances in many areas, including delayed oxidation and controlled respiration rate, microbial growth, and moisture migration. Active packaging technologies include some physical, chemical, or biological action which changes interactions between a package, product, and/or headspace of the package in order to get a desired outcome. Active packaging systems discussed include oxygen scavengers, carbon dioxide scavengers and emitters, moisture control agents, flavour/odour absorbers and releasers and antimicrobial packaging technologies. Active packaging is typically found in two types of systems; sachets and pads which are placed inside of packages, and active ingredients that are incorporated directly into packaging materials. Recognition of the benefits of active packaging technologies by the food industry, development of economically viable packaging systems and increased consumer acceptance is necessary for commercial realisation of these packaging technologies. doi:10.5219/205

The aim of the study was to assess the sensory characteristics, especially the taste of fresh cheese with the addition of oregano. The oregano was added in the form of leachate and in the form of essences. From the methods of sensory analysis, the Time-Intensity method was selected and used for evaluation of taste of product. The samples of produced fresh cheeses were evaluated after 24 hours and vacuum-packed samples of cheeses were evaluated after 7 days storage under refrigeration. From the obtained results we can state, that in the samples with the addition of oregano leachate, were observed significant changes in taste perception of oregano after 7 days of storage compared with the results of sensory evaluation after 24 hours. In the case of application of the addition of oregano essence, significant differences were not perceived by assessors between samples of cheese after 24 hours and after 7 days storage. Thus , the essence seems to be the acceptable possibility of its use in the manufacture of fresh cheeses in comparison with the addition of the leachate. doi:10.5219/176

The aim of the present study was analysed and evaluated chemical parameters of chicken breast and thigh muscles after addition of humic acids and probiotic into diet for broiler chicken. A total of 200 pcs Ross 308 broiler chickens were divided into 4 groups (n=50). The control group of chickens was fed with complete feed mixtures without any additives. Chickens in experiment groups were fed a diet containing: P1 (1% of humic acid), P2 (1% of humic acid and probiotic supplement Lactobacillus fermentum ) and P3 were fed with complete feed mixture containing combination of starter feed mixture (1. - 21. day) with coccidiostaticum Diclazuril and growth feed mixture (21. - 35. day) containing Salinomycinum sodium. Besides, the groups were kept under the same conditions. Fattening period lasted for 42 days. Chicken meat was analyzed for content of water, crude protein, fat and cholesterol. Based on the results, we can state that the application of humic acids or the combination of Humac Natur with probiotic did not affect the chemical composition of the breast muscle. In the breast muscle, the protein content in the experimental group P3 with the coccidiostat (22.98 g.100 g -1 ) was reduced ( p ≤0.05) compared to control group (23.42 g.100 g -1 ). In the case of thigh muscle was significantly higher content of fat and cholesterol ( p ≤0.05) in chickens feeding with addition of Humac Natur (fat - 9.08 g.100g -1 ; cholesterol - 0.86 mg.100g -1 ) and similar results were recorded in experimental group with combination of Humac Natur and probiotic (fat - 9.15 g.100g -1 ; cholesterol - 0.86 mg.100g -1 ) compared to control group (fat - 7.15 g.100g -1 ; cholesterol - 0.70 mg.100g -1 ). This study was conducted in order to monitor the effect of adding lucerne meal to chicken feed mixtures. The experiment was conducted at the Department Food Hygiene and Safety, Faculty of Biotechnology and Food Science, Slovak University of Agriculture in Nitra. Chickens for meat production - final type Cobb 500 were used in the experiment. Chickens were placed in boxes all together for one group at the beginning of the experiment and from 14 days of age chickens were divided individually into floor enriched cages. Feeding of chickens lasted 38 days. The experiment was carried out without sex segregation. For the production of a feed composition was used alfalfa ( Medicago sativa ) as lucerne meal, which was added to the feed at a rate of 4%, namely: starter (HYD-01), growth (HYD-02) and final (HYD-03). The control group did not include the addition of lucerne meal. Chickens were fed ad libitum . Chickens were slaughtered after completion of feeding and the meat samples were taken for analysis. The collected samples were stored at -18 °C. Collected samples of meat were analyzed after slaughter chickens at time intervals of 6, 12 and 18 months. In the experiment was monitored the content of supeoxid dismutase in the chicken meat depending on the length of storage time. The aim of the study was to assess the effect of supplying propolis extract separately and propolis extract together with probiotics based on Lactobacillus fermentum on fatty acids (FA) composition of the most valuable parts of chicken carcass. Diets enriched with 400 mg propolis extract per 1 kg of feed mixture and 400 mg propolis extract per 1 kg of feed mixture plus 3.3 g probiotic preparation added to drinking water (E1 and E2 groups, respectively) were given to broiler chickens throughout a 42-d growth period. After slaughter, the FA profiles of breast and thigh samples were determined. Both supplemented diets decreased the total amount of saturated FA (SFA), mainly because of the myristic (C14:0) and stearic (C18:0) acid contents in both breast and thigh muscles. However, a significant decrease (P ≤ 0.05) in SFA was confirmed only in thigh muscle. Supplementation with propolis together with probiotics (E2) significantly increased (P ≤ 0.05) monounsaturated FA (MUFA) contents in breast muscle. Particularly oleic acid (C18:1 cis) contributed to an overall increase in MUFA. A rise (P ≤ 0.05) in polyunsaturated FA (PUFA) in breast muscle was, however, associated with the dietary supplementation of propolis extract separately (E1). A similar trend (P 0.05) for MUFA and PUFA levels was also observed in thigh muscle. Of all PUFAs detected in breast and thigh muscles, linoleic acid (C18:2 cis) was found at the highest levels. Its levels varied from 11.34 to 12.02 g*100 g-1 and from 11.05 to 11.82 g*100 g-1 in breast and thigh muscles, respectively. The highest level (P ≤ 0.05) of linoleic acid was observed in group E1. Comparing breast with thigh muscle, the breast was demonstrated to contain more SFA and PUFA, but less MUFA proportions. Although the n-3 PUFA:n-6 PUFA ratio was similar among the treatments in both breast and thigh muscles, n-6 PUFA:n-3 PUFA ratio has been showed to be a significantly lower (P ≤ 0.05) in thigh muscle, with the lowest ratio found in E2 group. Differences in n-6 PUFA:n-3 PUFA ratio in breast were, however, not significant (P 0.05) between the treatments. On the whole, the present study indicated that propolis applied through the feed either separately or together with probiotics applied through the water had favourable effect on fatty acids profile in the most valuable parts of chicken carcass and could be thus added to diets for broiler chickens.

The purpose of this study was to investigate the effect of feed mixtures with proportion of alflafa meal 4% on body weight of broiler chickens, fat content their meat and oxidative stability meat fat under storage conditions. Final hybrid Cobb 500 chickens were used in the experiment. The broiler chickens were fed with feed mixtures starter from the 1st to the 18th day, grower from the 19th to the 31st day and finisher from the 32nd to the 38th ad libitum. An alfalfa meal of 4% was added in the feed mixtures of experimental group. In our experiment, we used alfalfa meal, which was made from Medicago sativa L. harvested in the buds phase. The carcasses of broilers were stored at -18° C for a period of nine months. The average weight of chickens at the end of our experiment, the control group was 1685.6 g. In experimental group with addition of 4% alfalfa meal in feed mixtures, the chickens weighed 1709.6 g. The difference in body weight between the groups was not statistically significant ( p >0.05). The average fat content in chicken meat was lower in the group with a share of 4% alfalfa meal 2.33 g.100g -1 compared to the fat content in meat chickens control group 2.59 g.100g -1 . Differences in fat content in meat between the groups were not statistically significant ( p >0.05). In our experiment, the average peroxide value of fat in meat under storage conditions 9 months at -18°C was lower in the group with a share of 4% alfalfa meal 2.42 µmol O2.g -1 compared with an average value of peroxide number 5.79 µmol O2.g -1 in the control group. Medicago sativa L. is an interesting object for research. It is characterized by high content of protein and biologically active substances that are effective for the promotion of health, and also an improvement the nutritional value and technological properties of the poultry food, when is used in feed mixtures.

The aim of this study was to investigate the chemical composition of musculus longissimus dorsi muscle in European bison ( Bison bonasus ) of the age 6, 9, 12 and 14 years. In m. longissimus dorsi water content was from 74.90 g (group until 6 years of age) until 75.70 g .100 g -1 (group until 12 years of age). Non statistically significant differences (P≥0.05) were found between groups of age. In m. longissimus dorsi the protein content was statistically significant during aging (P≥0.05) of the European bison from 21.23 (group until 12 years of age) until 22.34 g .100 g -1 (group until 14 years of age). The protein content is comparable with the values of steers and bulls of different breeds of cattle feedlot and meat buffalo. The m. longissimus dorsi fat content of European bison was represented from 1.26 g (group until 12 years of age) to 2.11 g .100 g -1 (group until 9 years of age), without statistical differences (P≥0.05) between groups of age. Fat levels are comparable with American bison fat levels and European bison meat from this perspective be regarded as high dietary, maybe. Tendency increasing of fat content in muscle with increasing age of animals was not confirmed (P≥0.05) but was confirmed that this variable indicator has the greatest potential impact nutrition. Energy value in 100 g m. longissimus dorsi was from 402.81 kJ (group until 12 years of age) to 447.07 kJ.100 g -1 (group to 9 years of age). The energy value in 100 g muscle was recorded only statistical differences (P≤0.05) in the group 9 and 12 years of age. Experiment results confirmed that the European bison meat is good article and possible supplement in the diet and the human food chain especially in states where the farm is kept in a manner respectively, as a delicacy, because it contains low representation of fat, what ultimately increases its particular dietary value, moving it from this perspective, even before the beef meat. doi:10.5219/129
