Production and physicochemical characterization of cassava leaf protein concentrate.

The aim of this work was to compare cassava leaf protein concentrates produced by different methods and to propose procedures with large yield, protein content and recovery, small tannin content and light color. Protein concentrates were obtained by acid coagulation (pH = 5), acid thermo-coagulation (pH = 4 at 85 and 50 °C), 30% ethanol coagulation and thermo-coagulation (60 °C). Moisture, protein and tannin contents, and brightness and chromatic tonality were determined in protein concentrates and dried milled leaves. The concentrates with the largest yields, protein contents and the lightest colors (acid thermo-coagulation pH 4 and 50 °C and 30% ethanol coagulation) were modified and, after the concentrate obtained by ethanol coagulation, presented a 14.1% protein recovery, a 73.8 brightness and 99.8° chromatic tonality, not differing from the one produced by acid thermo-coagulation. The tannin content was 0.4% in both concentrates. The modified acid thermo-coagulation in pH 4 and 50 °C and 30% ethanol coagulation procedures are correct for cassava leaf protein concentrate production with large protein recovery and light color.

Interface Between Family Farming and School Feeding: barriers and coping mechanisms from the perspective of different social actors in Southern Brazil

Family farming came to school as a public policy in Brazil, linked to National School Feeding Program (PNAE – Programa Nacional de Alimentacao Escolar, in Portuguese). In order to discuss the interface between family farming and school feeding, regarding barriers and coping mechanisms, 35 social actors were interviewed in Santa Catarina, Southern Brazil. The barriers were cost of goods, bureaucracy, insufficient technical assistance, resistance to changes, weaknesses in the organization of farmers and public managers. The conclusion is that studied interface has being built in facing those obstacles with dialogue mechanisms, intersectionality, investment, training activities and organization.

Avaliação dos aspectos relacionados às escolhas alimentares entre professores de centros educacionais infantis

Objective: to evaluate aspects related to food choices and food consumption of teachers of Child Educational Centers of a municipality in Santa Catarina state. Method: a quantitative descriptive cross-sectional study was carried out, in which 100 teachers participated, responding to questionnaires about the reason for their food choices and food consumption. Results: the sensory appeal factor was attributed with greater relevance to determine the teachers’ food choices, followed by health, natural content and weight control factors, associated with important requirements to promote healthy eating habits. The participants consumed more often in natura and minimally processed foods. Conclusion: the results reinforce that teachers can be positive influences in the formation of children’s eating habits, but it is still necessary to make them aware of this responsibility, preparing them for approaching feeding in childhood, especially at a time when there is a decrease in family sharing of meals.

Sleep quality in the elderly with and without chronic pain

BACKGROUND AND OBJECTIVES: Brazil has been experiencing rapid aging of its population. Aging, even without chronic diseases, involves some functional loss, which is expressed by reduction in vigor, strength, readiness, metabolic efficiency, and often pain, which can lead to fatigue and sleep changes. Sleep quality is essential for the physical and emotional well-being of elderly individuals. The objective of this study was to evaluate the sleep quality among elderly with and without chronic pain that live in a town in Santa Catarina State. METHODS: Interviews with 385 senior citizens living in the urban area of a town in Santa Catarina. The research tools used in the data collection were the Mini-Mental State Examination, an instrument adapted from Morais, the visual numerical scale and the Pittsburgh questionnaire. RESULTS: Among the elderly interviewed, females (67.27%, n=259) and the 60-69 years age group (45.45%, n=175) prevailed. Among the 385 elderlies, 58.18% (n=224) had chronic pain, predominantly of moderate intensity (48.66%, n=109). Among the elderly with pain, 57.59% (n=129) presented poor sleep quality; among those without pain, 56.52% (n=91) had good sleep quality. CONCLUSION: It is concluded that the intensity of pain, number of chronic self-reported diseases and age group are factors that influence the sleep quality of the elderly, thus indicating the importance of health professionals working in this context with new studies and resources.

Ações de reorientação da formação profissional em Fisioterapia: enfoque sobre cenários de prática

Este artigo buscou identificar, a partir da optica de docentes e estudantes, acoes que evidenciam a reorientacao da formacao profissional em Fisioterapia, no âmbito do eixo Cenarios de Pratica, conforme preconizado pelo Programa Pro-Saude. Trata-se de uma pesquisa qualitativa que seguiu o metodo de estudo de caso, realizada em uma universidade comunitaria com 16 estudantes e 11 docentes do curso de Fisioterapia. A coleta de dados foi conduzida por grupo focal e entrevista. Entre as acoes que evidenciam a reorientacao da formacao profissional estao: realizacao do diagnostico situacional, praticas em complexidade crescente, diversificacao de praticas nas disciplinas profissionalizantes, vivencias interdisciplinares no servico publico de saude, praticas multiprofissionais e intervencoes na Atencao Basica. Para promover avancos no processo de formacao profissional, e necessario criar estrategias de ensino-aprendizagem continuas e planejar as praticas de forma integrada com os servicos de saude.

Agentes comunitários de saúde: percepções sobre alimentação no contexto da estratégia saúde da família/Community health workers: perceptions on food in the context of the family health strategy

Este estudo teve por objetivo conhecer as percepcoes de agentes comunitarios de saude sobre alimentacao saudavel e sobre os desafios a seguranca alimentar e nutricional em sua area de atuacao. Consiste de estudo qualitativo em que os dados foram obtidos por meio de entrevistas semiestruturadas com sete agentes em uma Estrategia Saude da Familia no municipio de Chapeco (SC). Os dados foram organizados e analisados pela analise de conteudo tematica proposta por Minayo, e os resultados interpretados segundo as dimensoes conceituais da Seguranca Alimentar e Nutricional. Foram apontados aspectos relevantes sobre a alimentacao saudavel: variedade e frescor, frequencia/fracionamento, quantidade. Quanto aos desafios a seguranca alimentar e nutricional, as categorias foram: habito alimentar inadequado, resistencia a mudanca, higiene e ma conservacao dos alimentos, falta de condicoes de acesso aos alimentos. Os agentes demonstraram ter uma percepcao ampliada sobre seguranca alimentar e nutricional. Porem, dimensoes como disponibilidade de alimentos, sustentabilidade e direito a alimentacao nao foram mencionadas pelos participantes, sugerindo-se sua qualificacao politica e cientifica quanto a complexidade do fenomeno da seguranca alimentar e nutricional em suas varias dimensoes.

Attitude and practice about consumption of fruits and vegetables among adolescents in social vulnerability

OBJETIVOS: Avaliar o comportamento alimentar para frutas e hortalicas de adolescentes em vulnerabilidade social. METODOS: Estudo transversal com adolescentes assistidos por dois projetos sociais selecionados por amostragem de conveniencia em Chapeco, estado de Santa Catarina. Aplicou-se Recordatorio de 24 horas para analisar o consumo de frutas e hortalicas e um algoritmo especifico para investigar a autopercepcao sobre a qualidade do consumo e os estagios de mudanca de atitude alimentar. Os dados foram analisados com o Statistical Package for Social Sciences v.17.0, por estatistica descritiva e inferencial, adotando-se nivel de significância de 5%. RESULTADOS: Participaram do estudo todos os 120 adolescentes assistidos pelos projetos sociais selecionados, 59 meninos e 61 meninas, com idade media de 12,9±1,92 anos. O consumo medio (porcoes/dia) foi 2,14±1,79 para frutas e 0,67±0,68 para hortalicas. Meninas consumiam mais hortalicas (p=0,047); 52 (43,3%) adolescentes consideravam ter consumo saudavel de frutas, entretanto somente 24 (46,2%) destes tinham consumo adequado; 61 (50,9%) afirmaram consumo saudavel de hortalicas, enquanto apenas dois (3,3%) destes tinham consumo adequado. Os que consideravam ter consumo saudavel consumiam mais frutas (p=0,001). Sobre o estagio de mudanca, as meninas foram maioria em contemplacao e decisao, e os meninos em pre-contemplacao e acao (p=0,014). O consumo de frutas apresentou correlacao positiva significativa (rs=0,302; p=0,001) com os estagios de mudanca, sendo maior nos estagios mais avancados. CONCLUSOES: O consumo de frutas e hortalicas foi inferior as recomendacoes, situacao agravada pela autopercepcao distorcida sobre a qualidade deste consumo e pela vulnerabilidade social. Os aspectos subjetivos do comportamento alimentar evidenciaram a predominância de adolescentes com consumo inadequado destes alimentos que nao consideram a possibilidade de mudanca de atitude alimentar.Aims: To assess dietary behavior to fruit and vegetable intake of adolescents in social vulnerability. Methods: Cross-sectional study with adolescents assisted by two social projects selected by convenience sampling in Chapeco, Santa Catarina state, Brazil. A 24-hour dietary recall was applied to analyze the consumption of fruits and vegetables, and a specific algorithm to investigate perception about the quality of consumption and the stages of change in eating attitude. Data were analyzed with Statistical Package for Social Sciences v.17.0, using descriptive and inferential statistics, with a significance level of 5%. Results: All the 120 adolescents assisted by the selected social projects, 59 boys and 61 girls, mean age 12.9±1.92 years, participated in the study. Average consumption (servings/day) was 2.14±1.79 for fruits and 0.67±0.68 for vegetables. Girls consumed more vegetables (p=0.047); 43.3% of teens thought they have healthy intake of fruit, but only 46.2% of these had adequate intake; 50.9% said to have healthy vegetable consumption, while only 3.3% of these had adequate intake. Those who thought to have healthy intake, consumed more fruit (p=0.001). On the stage of change, most girls were in contemplation and decision, and most boys in pre-contemplation and action (p=0.014). The consumption of fruits showed a significant positive correlation (r s=0.302, p=0.001) with the stages of change, being higher in more advanced stages. Conclusions: Consumption of fruits and vegetables was lower than recommendations, situation exacerbated by distorted perception about quality of consumption and by social vulnerability. Subjective aspects of feeding behavior revealed the predominance of adolescents with inadequate intake of these foods that do not consider the possibility of changing food attitude.
