Why Americans Eat What They Do: Taste, Nutrition, Cost, Convenience, and Weight Control Concerns as Influences on Food Consumption

OBJECTIVE To examine the self-reported importance of taste, nutrition, cost, convenience, and weight control on personal dietary choices and whether these factors vary across demographic groups, are associated with lifestyle choices related to health (termed health lifestyle), and actually predict eating behavior. DESIGN Data are based on responses to 2 self-administered cross-sectional surveys. The main outcomes measured were consumption of fruits and vegetables, fast foods, cheese, and breakfast cereals, which were determined on the basis of responses to questions about usual and recent consumption and a food diary. SUBJECTS/SETTING Respondents were a national sample of 2,967 adults. Response rates were 71% to the first survey and 77% to the second survey (which was sent to people who completed the first survey). STATISTICAL ANALYSES Univariate analyses were used to describe importance ratings, bivariate analyses (correlations and t tests) were used to examine demographic and lifestyle differences on importance measures, and multivariate analyses (general linear models) were used to predict lifestyle cluster membership and food consumption. RESULTS Respondents reported that taste is the most important influence on their food choices, followed by cost. Demographic and health lifestyle differences were evident across all 5 importance measures. The importance of nutrition and the importance of weight control were predicted best by subjects membership in a particular health lifestyle cluster. When eating behaviors were examined, demographic measures and membership in a health lifestyle cluster predicted consumption of fruits and vegetables, fast foods, cheese, and breakfast cereal. The importance placed on taste, nutrition, cost, convenience, and weight control also predicted types of foods consumed. APPLICATIONS Our results suggest that nutritional concerns, per sc, are of less relevance to most people than taste and cost. One implication is that nutrition education programs should attempt to design and promote nutritious diets as being tasty and inexpensive.

Climategate, Public Opinion, and the Loss of Trust

Nationally representative surveys conducted in 2008 and 2009 found significant declines in Americans’ climate change beliefs, risk perceptions, and trust in scientists. Several potential explanations for the declines are explored, including the poor state of the economy, a new administration and Congress, diminishing media attention, and abnormal weather. The analysis also specifically examines the impact of Climategate – an international scandal resulting from the unauthorized release of emails between climate scientists in England and United States. The results demonstrate that Climategate had a significant effect on public beliefs in global warming and trust in scientists. The loss of trust in scientists, however, was primarily among individuals with a strongly individualistic worldview or politically conservative ideology. Nonetheless, Americans overall continue to trust scientists more than other sources of information about global warming.

The Effectiveness of Mass Communication to Change Public Behavior

This article provides an overview of the ways in which mass communication has been used -- or can be used -- to promote beneficial changes in behavior among members of populations. We use an ecological perspective to examine the ways in which mass media interventions can be used to influence public behavior both directly and indirectly. Mass media interventions that seek to influence people directly -- by directly targeting the people burdened by the public health problem of concern and/or the people who influence them -- have a long basis in public health history, and recent reviews have clarified our expectations about what can be expected from such approaches. Mass media interventions that seek to influence people indirectly -- by creating beneficial changes in the places (or environments) in which people live and work -- have equal if not greater potential to promote beneficial changes in population health behaviors, but these are currently less explored options. To have the greatest possible beneficial influence on public behavior with the public health resources available, we recommend that public health program planners assess their opportunities to use media to target both people and places in a manner that complements and extends other investments being made in population health enhancement.

A public health frame arouses hopeful emotions about climate change

Communication researchers and practitioners have suggested that framing climate change in terms of public health and/or national security may make climate change more personally relevant and emotionally engaging to segments of the public who are currently disengaged or even dismissive of the issue. To evaluate these assumptions, using a nationally representative online survey of U.S. residents (N = 1,127) conducted in December, 2010, we randomly assigned six previously identified audience segments on climate change to one of three experimental conditions. Subjects were asked to read uniquely framed news articles about climate change emphasizing either the risks to the environment, public health, or national security and the benefits of mitigation and adaptation-related actions. Results show that across audience segments, the public health focus was the most likely to elicit emotional reactions consistent with support for climate change mitigation and adaptation. Findings also indicated that the national security frame may possibly boomerang among audience segments already doubtful or dismissive of the issue, eliciting unintended feelings of anger.

Climate on Cable: The Nature and Impact of Global Warming Coverage on Fox News, CNN, and MSNBC

This study examines climate change coverage on the three major cable news channels and assesses the relationship between viewership of these channels and beliefs about global warming. Evidence from a content analysis of climate change coverage on Fox News, CNN, and MSNBC during 2007 and 2008 demonstrates that Fox takes a more dismissive tone toward climate change than CNN and MSNBC. Fox also interviews a greater ratio of climate change doubters to believers. An analysis of 2008 survey data from a nationally representative sample of U.S. adults finds a negative association between Fox News viewership and acceptance of global warming, even after controlling for numerous potential confounding factors. Conversely, viewing CNN and MSNBC is associated with greater acceptance of global warming. Further analyses reveal that the relationship between cable news viewership (both Fox and CNN/MSNBC) and global warming acceptance is stronger among Republicans than among Democrats. That is, the views of Republicans are strongly linked with the news outlet they watch, regardless of how well that outlet aligns with their political predispositions. In contrast, Democrats don’t vary much in their beliefs as a function of cable news use. This asymmetry suggests that some Republicans, who as a group tend to be predisposed toward global warming skepticism, are less skeptical when exposed to information on the reality and urgency of climate change.

Communication and Marketing As Climate Change-Intervention Assets A Public Health Perspective

The understanding that global climate change represents a profound threat to the health and well-being of human and nonhuman species worldwide is growing. This article examines the potential of communication and marketing interventions to influence population behavior in ways consistent with climate change prevention and adaptation objectives. Specifically, using a framework based on an ecologic model of public health, the paper examines: (1) the potential of communication and marketing interventions to influence population behaviors of concern, including support for appropriate public policies; (2) potential target audiences for such programs; and (3) the attributes of effective climate change messages. Communication and marketing interventions appear to have considerable potential to promote important population behavior change objectives, but there is an urgent need for additional translational research to effectively harvest this potential to combat climate change.

Relative risk in the news media: a quantification of misrepresentation.

OBJECTIVES This study quantifies the representativeness with which the print news media depict mortality. METHODS The proportion of mortality-related copy in samples of national print media was compared with the proportion of actual deaths attributable to the leading causes of US mortality over a 1-year period. RESULTS For every tested cause of death, a significant disproportion was found between amount of text devoted to the cause and the actual number of attributable deaths. Underrepresented causes included tobacco use (23% of expected copy) and heart disease (33%); overrepresented causes included illicit use of drugs (1740%), motor vehicles (1280%), and toxic agents (1070%). CONCLUSIONS The news media significantly misrepresent the prevalence of leading causes of death and their risk factors. This misrepresentation may contribute to the publics distorted perceptions of health threats.

Translating Health Psychology into Effective Health Communication The American Healthstyles Audience Segmentation Project

This article presents a health lifestyle audience segmentation analysis based primarily on social cognitive theory. Two linked mail surveys were conducted among a representative group of US adults (N = 2967). Segmentation variables included data on five health behaviors (smoking, alcohol consumption, physical activity, nutrition and weight control), internal personal and social/ environmental variables associated with each of the health behaviors, as well as health value, sensation- seeking, life satisfaction and age. K-means classification analysis was employed; seven health lifestyles were identified. The majority of the health lifestyles are reliable, and as a whole, all demonstrate both discriminative, construct and predictive validity. The health-lifestyle audience segments are briefly profiled, and an argument is made that health- lifestyle segmentation, more than demographic or behavioral segmentation alone, can advance the goals of public health communication.

Identifying Like-Minded Audiences for Global Warming Public Engagement Campaigns: An Audience Segmentation Analysis and Tool Development

Background Achieving national reductions in greenhouse gas emissions will require public support for climate and energy policies and changes in population behaviors. Audience segmentation – a process of identifying coherent groups within a population – can be used to improve the effectiveness of public engagement campaigns. Methodology/Principal Findings In Fall 2008, we conducted a nationally representative survey of American adults (n = 2,164) to identify audience segments for global warming public engagement campaigns. By subjecting multiple measures of global warming beliefs, behaviors, policy preferences, and issue engagement to latent class analysis, we identified six distinct segments ranging in size from 7 to 33% of the population. These six segments formed a continuum, from a segment of people who were highly worried, involved and supportive of policy responses (18%), to a segment of people who were completely unconcerned and strongly opposed to policy responses (7%). Three of the segments (totaling 70%) were to varying degrees concerned about global warming and supportive of policy responses, two (totaling 18%) were unsupportive, and one was largely disengaged (12%), having paid little attention to the issue. Certain behaviors and policy preferences varied greatly across these audiences, while others did not. Using discriminant analysis, we subsequently developed 36-item and 15-item instruments that can be used to categorize respondents with 91% and 84% accuracy, respectively. Conclusions/Significance In late 2008, Americans supported a broad range of policies and personal actions to reduce global warming, although there was wide variation among the six identified audiences. To enhance the impact of campaigns, government agencies, non-profit organizations, and businesses seeking to engage the public can selectively target one or more of these audiences rather than address an undifferentiated general population. Our screening instruments are available to assist in that process.

The Scientific Consensus on Climate Change as a Gateway Belief: Experimental Evidence

There is currently widespread public misunderstanding about the degree of scientific consensus on human-caused climate change, both in the US as well as internationally. Moreover, previous research has identified important associations between public perceptions of the scientific consensus, belief in climate change and support for climate policy. This paper extends this line of research by advancing and providing experimental evidence for a “gateway belief model” (GBM). Using national data (N = 1104) from a consensus-message experiment, we find that increasing public perceptions of the scientific consensus is significantly and causally associated with an increase in the belief that climate change is happening, human-caused and a worrisome threat. In turn, changes in these key beliefs are predictive of increased support for public action. In short, we find that perceived scientific agreement is an important gateway belief, ultimately influencing public responses to climate change.
