OBJECTIVE To compare the biochemical and immunological profiles of pediatric patients with acute myeloid leukemia (AML) with healthy children and adolescents. METHODS This was a cross-sectional study in which 21 therapy-naïve patients with AML were compared with a group of 24 healthy individuals. The following data were analyzed: serum proteins, leucocytes and subgroups, erythrocytes, hematocrit, hemoglobin, platelets, cytokines in peripheral blood mononuclear cells cultures under spontaneous and BCG- or PHA-stimulated conditions, immunoglobulin A, and erythrocytic glutathione. Statistical analysis was performed using SPSS software, considering as significant p-values<0.05. RESULTS Serum albumin levels were higher (p<0.0001) in the control group, as well as all the parameters related to red blood cells (p<0.0001). For leucocytes and subgroups, no statistical difference was found between the AML and the control groups. For cytokines, the concentrations were significantly higher under spontaneous and BCG-stimulated conditions for TNF-α, IL-6, IL-10, and IFN-γ in the control group. Under PHA-stimulated conditions, the concentration was higher (p=0.002) only for IL-6. No difference was found between the two groups for the other cytokines and for IgA in the saliva. Erythrocytic glutathione was higher (p<0.0001) in AML patients. CONCLUSIONS It was possible to characterize the biochemical and immunological profile of pediatric patients with AML, as well as highlight some significant differences in these parameters when comparing with healthy children and adolescents.Objective To compare the biochemical and immunological profiles of pediatric patients with acute myeloid leukemia (AML) with healthy children and adolescents.

RESUMO O objetivo do trabalho foi verificar a aceitabilidade sensorial de biscoitos tipo cookies adicionados de farinha de yacon (FY) e determinar a composicao quimica da formulacao tradicional e daquela contendo o maior teor de FY com aceitacao sensorial semelhante ao padrao. Utilizaram-se cinco formulacoes de biscoitos, sendo: padrao (0 %) e as demais com 5 %, 7,5 %, 10 % e 12,5 % de FY. Na analise sensorial participaram 55 provadores nao treinados, portadores de diabetes mellitus de ambos os generos com idade entre 18 a 70 anos. Os resultados da analise sensorial mostraram que a amostra com adicao de 7,5 % de FY foi o melhor teor de yacon acrescentado e com aceitacao semelhante ao padrao, principalmente nos atributos aparencia, aroma, sabor, aceitacao global e intencao de compra. A analise quimica das amostras padrao e com 7,5 % de FY revelou maiores teores de fibra bruta, proteinas, cinzas e umidade na amostra com FY, entretanto apresentou menores concentracoes de carboidratos e valor calorico total. A elaboracao desses produtos permitiu comprovar que, um nivel de adicao de ate 7,5 % de FY em biscoitos tipo cookies foi bem aceito pelos provadores, obtendo-se aceitacao sensorial semelhante ao produto padrao. This study aimed to verify the sensory acceptability of coconut cookie enriched with fructooligosaccharides (FOS) and determine the physical-chemical composition of the traditional formulation and with the highest level of FOS and similar sensory acceptance. Were used six formulations of cookies: F1 (standard) and the others added 10% (F2), 12.5% (F3), 15% (F4), 17.5% (F5) and 20% (F6) FOS. Sensorially, F1, F2, F3 and F4 showed good acceptance, with no statistical difference between them, in all attributes. In physico-chemical composition F4 showed higher fiber concentration, carbohydrates and calories and lower moisture (p<0.05) than F1. Thus, the products development has demonstrated that an addition level of 15% FOS in coconut cookies was better accepted by the judges, obtaining sensory acceptance similar to standard product and good expectations of sales.

ABSTRACT Introduction: The bacuri almond protein (Attalea phalerata Mart. Ex Spreng) and whey protein (WP) have significant amounts of essential amino acids and are of good digestibility, characteristics that have been sought by athletes to aid in improving body composition, particularly when associated with exercises. Objective: To evaluate the effect of diets with vegetable and animal protein content on the body composition of Wistar rats submitted to resisted ladder exercise. Methods: Forty male newly weaned rats were exposed to a period of adaptation to a commercial diet (4 weeks) and resistance training for eight weeks (three times a week), receiving diets with bacuri flour and whey protein. They were randomly assigned to 6 groups: G1 (sedentary bacuri), G2 (exercised bacuri), G3 (sedentary WP), G4 (exercised WP), G5 (sedentary control) and G6 (exercised control). Dietary intake, body weight, length, thoracic and abdominal circumferences were evaluated to calculate Lee index and body mass index; the fat sites were removed after eutha-nasia. Statistical analysis was performed by ANOVA and Tukey’s test, considering a 5% significance level. Results: The final weight of G3 (372±8.86 g) was higher than those of G2 (326.83±15.03 g) and G6 (316.75±5.90 g); the groups that received diet with bacuri flour consumed higher amount of food, however, they had lower final weight, did not differ in the Lee index and BMI, fat sites and adiposity index in relation to the groups treated with WP, presenting lower values in the thoracic and abdominal circumferences. Regarding fat and adiposity index, there was no difference between the sedentary and exercised groups. Conclusion: The bacuri almond protein showed good quality when compared to whey protein, and it is possible to recommend its use in the preparation of nutritional supplements as an alternative and low cost vegetable protein source.Keywords: proteins; fruit; body composition; exercise.

The study aimed to verify the sensory acceptability of dulce de leche formulations elaborate with cheese whey (CW) type minas frescal in natura and determine the physicochemical composition of the standard formulation, and those with a higher level of addition of CW and similar acceptance. Were drawn up five formulations of sour candies and F1 (0%) and the other containing 45, 50, 55 and 60% of CW. In physicochemical analyses were determined the moisture content, ash, proteins, lipids, carbohydrates and calories. The sensory results showed that the formulations showed no statistical difference for the appearance, aroma, texture and color. However, F5 showed less acceptance for taste, global acceptance and purchase intent. It was found by physicochemical analysis of standard samples and 55% of CW that higher levels of ash, carbohydrates and calories were found in the formulation with CW, however the pattern showed higher amounts of moisture, protein and lipids. The preparation of the products showed that the level of addition to 55% CW in dulce de leche was the most accepted by the panel from among those containing this ingredient, resulting in sensory acceptance similar to standard product with good expectations of sales.

The aim of this study was to evaluate the effect of symbiotic treatment on intestinal function in constipated hospitalized patients. The study where with 24 constipated patients of both sexes in a hospital environment were randomized into two groups to receive maltodextrin (control group) and symbiotic treatment (experimental group) daily for 7 days. In relation to defecation frequency, there was no statistical difference between the groups. The percentage of patients who had no evacuation report in the experimental group decreased on days 1 (66.7%), 4 (41.7%) and 7 (33.3%), while the control group did not show such effect. It was found that symbiotic treatment did not lead to an increase in abdominal symptoms in either the experimental or placebo group. The present study showed that symbiotic treatment for 7 days is insufficient to achieve significant results, especially in defecation frequency and stool consistency and shape.
