Fermentation Characteristics of Ice Wines Prepared with Freeze-dried Muscat Bailey A Grapes

전 세계적으로 가장 많이 소비되고 있는 과실주인 포도주에 대한 역사는 BC 5,400 이전부터 찾을 수 있다(1). 고지방식, 흡연,운동부족 위험에도 불구하고 포도주 섭취로 인해 프랑스인의 심장병 발병률이 낮은 ‘French paradox’가 알려지고(2) 포도 내phytoalexin류 성분의 항암효과와 포도 특유의 식물성 색소인 플라보노이드 성분의 혈전생성억제와 심장병예방 기능이 연구 발표 되면서 포도주의 생산 및 소비가 급증하고 있다(3,4). 그러나국내에서는 외국산 포도주의 수입 증가와 국내 포도주 산업의 부진으로, 국내산 포도주의 시장 점유율이 점점 약화되고 있어 이러한 어려움을 극복하기 위해서는 국내산 포도주의 품질 향상이필요하다(5). 또한 국민들의 소득증가로 생활수준과 함께 건강에대한 관심이 높아져, 포도주를 비롯한 알코올 도수가 낮은 주류의 판매가 늘어나는 추세이고(6), 국내 포도주 시장은 지난 10년간(1991년에서 2000년) 38% 증가했으며, 2008년까지 37%가 증가할 것으로 전망되고 있어 우리나라 포도주 시장의 성장가능성은 매우 높다고 할 수 있다(7).이런 추세로 인해 국내산 포도 품종을 이용하여 여러 가지 발효 방법으로 우리 실정에 적합한 포도주 생산이 필요한데, 최근국내산 포도주의 품질 개선을 위한 많은 연구들이 행해지고 있다. 국내산 포도주의 신맛이 강하므로 이를 개선하고자 발효방법을 달리하여 신맛을 감소시키는 연구에는 Park 등(8)이 CampbellEarly 품종 포도를 사용하여 carbonic maceration vinification pro-cess 방법으로 포도주 제조 특성을 시험하였고, Lee와 Kim(9)은CaCO

In vitro and in vivo anti-inflammatory activities of mixed fruit and vegetable juice

In this study, we attempted to develop fruit-based functional juice with anti-inflammatory activity for consumers living under heavy air pollution. At first, four different formulations for functional juice prepared by combining 10 kinds of fruits and other ingredients in various ratios were tested for NAD(P)H: quinoneoxidoreductase 1 (NQO1)-inducing activity in mouse hepatoma Hepa1c1c7 cells. The formulation showing the highest NQO1-inducing activity [named detoxification juice (DJ)] was investigated for its anti-inflammatory activity in a co-culture system of human lung carcinoma A549 cell line and a differentiated human monocytic cell line THP-1. DJ significantly reduced the LPS-induced production of proinflammatory cytokines, such as interleukin-6 (IL-6), IL-1β, and tumor necrosis factor α (TNF-α). Furthermore, DJ administration suppressed the benzo[a]pyreneinduced elevation of plasma cytokine levels of C57BL/6 mice. However, the protective effect of DJ against inflammation in lung and trachea caused by air pollution needs to be assessed through clinical studies.
