Due to the changing needs of consumers and the increased risk of diet-related diseases, todays consumers are forced to seek alternative types of meat. It should, on one hand be tasty, and on the other will improve the health of the consumer. Game is considered to be such a meat. Although Poland is one of the leading producers and exporters of game in Europe, the level of its consumption is very low at about 0.08kg/person/year. Based on quantitative data from 1000 respondents a model predicting the consumption of wild game based on logistic regression has been prepared. It was demonstrated that consumers are likely to increase their consumption of game, provided that it will have a higher quality and greater commercial availability. A higher propensity to change eating habits in respect of game was displayed mainly by men, city dwellers and those who evaluated their own knowledge on nutritional and diet higher than others.

Sedentary behavior, a low physical activity level, and unhealthy dietary patterns are risk factors for major chronic diseases, including obesity. The aim of this study was to assess the associations of dietary patterns (DPs) with sedentary behaviors (SB) and self-reported physical activity (PA). The data was collected in November 2016 through a cross-sectional quantitative survey amongst 1007 Polish adults. Principal components analysis (PCA) was conducted to derive DPs. Logistic regression analysis was used to verify associations between PA and SD (independent variables), and DPs (dependent variables). Five DPs (‘Fast foods & sweets’—FF&S; ‘Meat & meat products’—M∓ ‘Fruit & vegetable’—F&V; ‘Wholemeal food’—WF; ‘Fruit & vegetable juices’—F&VJ) were identified. Representing M&MP independently increased the chance of watching TV at least once a day (by 73%). There was no such relationship between the FF&S and sedentary behaviors. Being in the upper tertiles of pro-health DPs increased the chance of reading books (by 177%—F&V, 149%—WF, 54%—F&VJ) and watching TV (by 71%—F&V). On the other hand, belonging to the upper tertile of WF reduced the chance of using the computer for more than 4 h a day. Belonging to the upper tertile of healthy DPs (WF and F&VJ) increased the chances of moderate or high physical activity, both at work/school and during leisure time. Within F&V, there was a lower chance of moderate or high physical activity at work/school. Being in the upper tertile of unhealthy DPs (FF&S and M&MP) did not show any significant association with physical activity. The study indicated the associations between both healthy and unhealthy DPs and some sedentary behaviors. Association between F&V and watching TV and reading books/newspapers should be recognized as potentially efficient in education. Association between M&MP and watching television can be indicative of the mutual overlap of a negative lifestyle resulting in the development of overweight and obesity, especially since the extent of occurrence of sedentary behaviors is high.

In general, dairy products are well regarded for their nutritional value. Consumer perception of dairy products is influenced by many interrelated factors but healthiness remains one of the key attributes and values for consumers. Furthermore, contemporary consumers increasingly seek out dairy products with additional health benefits and, therefore, it is essential to explore which attributes are important drivers of food choices and how producers can better respond to shifting consumer values and needs in each dairy product category. Therefore, the aims of the study were: (a) to identify consumer segments based on the importance they attached to selected attributes of dairy products, (b) to explore differences between the identified segments in their perceptions of health-related attributes of dairy products, (c) to determine if health-related aspects influenced consumers decisions to buy high-quality dairy products, and (d) to identify if consumers were open to novelties in dairy products. The data were collected within a CAPI (Computer Assisted Personal Interview) survey on a representative sample of 983 adult Polish consumers. The non-hierarchical K-means clustering method was used to identify four clusters of consumers, namely: Enthusiastic, Involved, Ultra-involved and Neutral. Enthusiastic consumers attach more importance to the influence of dairy products on immunity and are more willing to agree with the opinion that dairy products are a source of mineral nutrients as well as vitamins. Ultra-involved and Involved consumers pay less attention to some health aspects of dairy products compared to other clusters; however, the Ultra-involved are more quality-oriented than are the Involved. Neutral consumers are more open to accept changes on the dairy product market and are relatively more inclined to choose new dairy products. However, these consumers have scored lower on those aspects related to the healthiness of dairy products and, in order to target them effectively, it is essential to develop well-tailored communication strategies highlighting the health benefits of dairy products. These results relate to the Polish market and are important for the development of new dairy products and for targeting public nutrition as well as for directing marketing communication. The results may provide important insights for those who develop educational strategies and campaigns.

Meat is one of the basic foodstuffs, which in modern times arouses a lot of controversy. On the one hand, appreciates its nutritional values, especially the content high in protein, minerals and vitamins. On the other hand, it is considered that the excessive intake can contribute to the formation of civilization diseases. The aim of the article was to analyze the purchasing behavior of Polish consumers of fresh meat in general and pork, poultry and beef. Particular attention was paid to the choice of the place of purchase, the evaluation of the frequency of purchase, as well as the factors determining the choice of different types of meat by consumers. Also evaluated the impact of the manufacturers decision-making by consumers purchase meat. It was found that regardless of the type of meat, increases the importance of specialist butcher shops. The analysis of association proved that consumers are making decisions about the purchase of meat draw attention primarily on its price, overall appearance and color. Synopsis. Celem artykulu byla analiza zachowan nabywczych polskich konsumentow miesa świezego ogolem, miesa wieprzowego, drobiowego i wolowego w Polsce na tle wybranych przykladow pochodzących z innych krajow. Szczegolną uwage zwrocono na wybor miejsca zakupu, ocene czestotliwości nabywania, a takze na czynniki determinujące wybor poszczegolnych rodzajow mies przez konsumentow. Oceniono rowniez wplyw producenta na podejmowanie decyzji przez konsumentow o zakupie miesa. Stwierdzono, ze w Polsce, niezaleznie od rodzaju miesa, wzrasta popularnośc specjalistycznych sklepow miesnych, czego nie odnotowuje sie w innych krajach. Przeprowadzona analiza asocjacji dowiodla, ze polscy konsumenci podejmując decyzje o nabyciu miesa zwracają przede wszystkim uwage na jego cene, wygląd ogolny oraz barwe.

The article data from the review of secondary data and primary research shows that the preferences and buying trends among Poles have changed over twenty five years. Discounters are currently the fastest growing trading format, in which more than 70% of consumers buy. The market leader in the retail chain sector is Biedronka, which increased the number of shops by 1745 in the period of 2006–2015. Discounters have become popular due to: changing habits of shoppers, the ability to offer products at very low prices, proximity to the place of residence of consumers and improving the quality of products. The aim of this article is to draw attention to the specifics of the operation of discount stores in the Polish realities with a particular focus on Biedronka. Primary data on the behavior of consumers buying food there was obtained from a survey conducted in 2014 on a sample of 540 consumers. Classification-JEL: D1, D3, D4

The purpose of the research study is to present and analyse the principles of the functioning of the traceability in the food chain including the used methods of identifi cation. Analysis of the literature shows that risk sources identifi cation via food movement and its origin tracking reduces the potential risks possibility and infl uences the food safety level. The development of information technology allows to support traceability process by advanced computer systems. Used in the enterprise ERP systems using tools such as barcodes to identify whether the RFID create traceability of products throughout the production process and distribution. In case of detection any threat to allow for quick response in order to halt the production, distribution and withdrawal of defective products from the market.
