Extracts from Rododendron mucronulatum Turcz. flowers were tested for antioxidant and their inhibitory activities of α-amylase, α-glucosidase and angiotensin converting enzyme (ACE). Total contents of phenolics were found as 30.6±0.14 mg/g (60% EtOH extract) and 23.2±0.21 mg/g (water extract). Electron donation ability (EDA), ABTS (2,2azinobis(3-ethylbenzothiazoline-6-sulfonic acid)) radical decolorization, Antioxidant protection factor (PF) and thiobarbituric acid reactive substance (TBARs) were measured for the antioxidative activity of the extracts from Rododendron mucronulatum Turcz. flowers. The water extract were determined as 97.5% at ethanol extract showed 83.2% and 60% EtOH extract were 89.7% in EDA. The water extract showed higher antioxidant activity than 60% EtOH extract when evaluated by ABTS radical decolorization and antioxidant PF. The TBARS of water extracts and 60% EtOH extracts were shown as 0.29×10 2 μM and 0.28×10 2 μM, respectively, and were lower than control. ACE inhibitory activity in water extract (67.6% inhibition) was higher than that of 60% EtOH extract (46.7% inhibition) at 200 μg/mL. Water extracts had higher inhibitory activities on α-amylase and α-glucosidase than 60% EtOH extracts. The result suggests that the water extract from Rododendron mucronulatum Turcz. flowers will be useful as natural antioxidants and functional foods.

In this study, extracts from S. officinalis were tested for antioxidative effects and inhibitory activities against -amylase, angiotensin converting enzyme (ACE) and xanthine oxidase (XOase). The content of total phenolic compounds in water, 60% ethanol, 60% methanol and 60% acetone extracts were 36.2, 42.7, 40.3 and 39.6 mg/g, respectively. In 60% ethanol extracts, the EDA by DPPH free radical scavenging test of S. officinalis was at . The inhibition rate of ABTS was , the antioxidant protection factor was PF, and TBARS was ( in the control and (). Also in 60% ethanol extracts of S. officinalis, the inhibitory activity against XOase was 78% and was not shown to be against ACE. According to the of clear zone formed, the inhibition rate against -Amylase was 7.6% at of phenolics content. Antimicrobial activities of 60% ethanol extracts of S. officinalis against Helicobacter pylori exhibited an inhibition rate of according to the of clear zone at . The results suggest that the 60% ethanol extracts from Salvia officinalis L. will be useful as natural antioxidants and functional food sources.

Total phenolic content was the highest in 60% ethanol extracts at 21.91 mg/g, and inhibitory activity against tyrosinase of 60% ethanol extracts was higher than ethanol extracts of other concentration. The inhibitory compounds against tyrosinase from Persimmon leaves were purified using Sephadex LH-20, MCI-gel CHP-20 column chromatography with gradient elution. Two purified compounds were isolated as a result. The chemical structures of each compound were determined and identified using -NMR and -NMR, FAB-Mass. The compounds were confirmed as (+)-gallocatechin and prodelphinidin B-3. The tyrosinase inhibitory activities of purified (+)-gallocatechin and prodelphinidin B-3 were 29.5 and 40.2%, respectively. The inhibitory activities of (+)-gallocatechin and prodelphinidin B-3 against melanin biosynthesis in melanoma cell were 32.5 and 46.7%. The safety of essence with tyrosinase inhibitory compounds from persimmon leaves was also assessed by various safety profiles. First, changes in pH (4.90~4.95) and viscosity (23,000~26,000 cP) was not detected for 60 days. Essence also showed stability against temperature and light for 60 days. All these findings suggest that extracts from persimmon leaves have a great potential as a cosmetical ingredient with a potent whitening effect.

The antimicrobial activity of 70% ethanol extracts from Rosa multiflora Thunberg fruit against Helicobacter pylori was examined. The inhibitory activity of Rosa multiflora Thunberg fruit extracts against H. pylori was determined to clear a zone of 14 mm with 70% ethanol extracts. Purification of inhibitory compounds was carried on Sephadex LH-20 and cartridge column chromatography using a gradient procedure, with increasing ethanol () in . The chemical structure of the purified inhibitory compounds on H. pylori was identified to be protocatechuic acid, chlorogenic acid and quercetin by FAB-MS, NMR and IR spectrum.

호두과육으로부터 용매별로 추출한 추출액중의 phenolic compound 함량은 열수, 에탄올, 메탄올, 아세톤 추출물 순서로 24.3, 34.4, 32.5, 15.1 mg/g의 함량을 나타내어 에탄올 추출물의 phenolic compound 함량이 가장 높았으며, 인체에 무해한 추출 용매인 열수 및 에탄올 농도별 추출물의 phenolic compound 비교한 결과 60% 에탄올 추출물에서 34.7 mg/g과 열수 추출물에서 24.6 mg/g 함량의 phenolic compound를 나타내었다. 호두추출물의 항산화 활성 중 전자공여능의 경우 열수추출물에서 78.1%, 60% 에탄올추출물에서 80.6%의 활성을 나타내었으며, ABTS radical cation decolorization 측정에서는 열수추출물과 60% 에탄올추출물 각각 98.1%와 98.3%의 높은 항산화 활성을 나타내었다.
