Frozen chicken for wild fish: nutritional transition in the Brazilian Amazon region determined by carbon and nitrogen stable isotope ratios in fingernails.

Amazonian populations are experiencing dietary changes characteristic of the nutrition transition. However, the degree of change appears to vary between urban and rural settings. To investigate this process, we determined carbon and nitrogen stable isotope ratios in fingernails and dietary intake of Amazonian populations living along a rural to urban continuum along the Solimões River in Brazil.

Can stable isotope analysis reveal dietary differences among groups with distinct income levels in the city of Piracicaba (southeast region, Brazil)?

BACKGROUND The present study aimed to determine whether the δ(13)C and δ(15)N of fingernails (δ(13)CF and δ(15)NF, respectively) would exhibit differences between groups from different income levels in the city of Piracicaba, Brazil. METHODS In 2010, the fingernails of 273 participants belonging to six income groups were analysed to determine isotopic composition. δ(13)CF and δ(15)NF were compared with the stable isotope of a putative diet (δ(13)CD and δ(15)ND , respectively), which was estimated via an isotopic mass balance using, as a weighting factor, macronutrient intake by the main food items, as obtained by the 2008-2009 household food purchases conducted by the Brazilian Institute of Geography and Statistics. RESULTS δ(13)CF values showed a decreasing trend towards the lower income level groups, in accordance with the δ(13)CD values that showed the same trend. This isotopic change was mainly a result of the higher consumption of beef, bread, soft drinks and dairy by the highest income group; and also as a result of the higher consumption of soybean oil, rice and sugar by the lowest income group. The δ(15)NF values failed to capture differences in groups between income levels. This outcome was not expected because individuals in a higher income group tend to consume more animal protein and, as a result of the trophic fractionation, have higher δ(15)N values. CONCLUSIONS The combination of household purchase surveys and stable isotopic composition in modern humans is found to be a valuable tool, especially with respect to determining the role of C3 and C4 plants through the complex modern food chain.

Factors influencing the food transition in riverine communities in the Brazilian Amazon

The objective of this study was to determine the main patterns and factors influencing food transition in riverine people in the Brazilian Amazon. Through interviews with a semi-structured questionnaire, we inferred their food habits and provide information about general demographic, socioeconomic, resource use and environmental context. Data from the questionnaires were categorized and analyzed using a logistic regression model to assess the relative influence of socioeconomic and environment factors on the local diet. Based on a logistic regression data analysis, it was found a greater consumption of processed food significantly associated with multiple factors such as market participation, sex (female and male), government aid to forest conservation and environment context (upland and wetland). Although the local diet is composed mainly of local resources such as fish and cassava flour, increasing incomes due to direct government subsidy programs and marketing of cassava flour have influenced these local practices and habits. Through the analysis of factors influencing food transition, it was possible to evaluate those having the greatest effect on this Amazon region and propose an alternative method to subsidy food policy grounded in local opinion surveys.

Food Insecurity in Urban and Rural Areas in Central Brazil: Transition from Locally Produced Foods to Processed Items

ABSTRACT Aiming to investigate the effect of diet and food consumption with regard to health, environment, and economy in light of nutrition ecology, we studied the dimensions of nutrition and food security in urban and rural settings in the region of Chapada dos Veadeiros, Central Brazil. We tracked diet and food consumption through carbon and nitrogen stable isotope ratios in fingernails of these inhabitants together with food intake data as a proxy for their diet patterns. We estimated household food insecurity by using the Brazilian Food Insecurity Scale. Nutrition and food insecurity was observed in both urban and rural areas, but was accentuated in rural settings. The diet pattern had high δ13C values in fingernails and low δ15N. Both urban and rural areas have diets with low diversity and relying on low-quality processed food staples at the same time that nutrition and food insecurity is quite high in the region.
