Effect of storage and cooking on the fatty acid profile of omega-3 enriched eggs and pork meat marketed in Belgium

The fatty acids (FA) profile was determined in n-3 enriched (Columbus™) Belgian eggs and pork in order to evaluate to what extent the n-3 fatty acids, which are very sensitive to oxidation, are resistant to storage or cooking. In standard eggs or pork, no change of the fatty acid profile was observed after storage or cooking without culinary fat, as well as in Columbus™ eggs and pork after storage. Some cooking processes (eggs in custard and meat in oven) induced a slight significant loss of n-3 fatty acids in Columbus™ eggs or pork (11.1% in fat from eggs cooked in custard vs. 15.3% in raw Columbus™ eggs and 11.0% in fat from oven cooked meat vs. 11.6% in raw Columbus™ meat). As expected, when Columbus™ pork is cooked with culinary fat, its fatty acid profile is modified according to the nature of the fat used.

Presence of antimicrobial resistance in coliform bacteria from hatching broiler eggs with emphasis on ESBL/AmpC-producing bacteria

ABSTRACT Antimicrobial resistance is recognized as one of the most important global health challenges. Broilers are an important reservoir of antimicrobial resistant bacteria in general and, more particularly, extended-spectrum β-lactamases (ESBL)/AmpC-producing Enterobacteriaceae. Since contamination of 1-day-old chicks is a potential risk factor for the introduction of antimicrobial resistant Enterobacteriaceae in the broiler production chain, the presence of antimicrobial resistant coliform bacteria in broiler hatching eggs was explored in the present study. Samples from 186 hatching eggs, collected from 11 broiler breeder farms, were inoculated on MacConkey agar with or without ceftiofur and investigated for the presence of antimicrobial resistant lactose-positive Enterobacteriaceae, particularly, ESBL/AmpC-producers. Escherichia coli and Enterobacter cloacae were obtained from the eggshells in 10 out of 11 (10/11) sampled farms. The majority of the isolates were recovered from crushed eggshells after external decontamination suggesting that these bacteria are concealed from the disinfectants in the egg shell pores. Antimicrobial resistance testing revealed that approximately 30% of the isolates showed resistance to ampicillin, tetracycline, trimethoprim and sulphonamides, while the majority of isolates were susceptible to amoxicillin-clavulanic acid, nitrofurantoin, aminoglycosides, florfenicol, neomycin and apramycin. Resistance to extended-spectrum cephalosporins was detected in eight Enterobacteriaceae isolates from five different broiler breeder farms. The ESBL phenotype was confirmed by the double disk synergy test and blaSHV–12, blaTEM–52 and blaACT–39 resistance genes were detected by PCR. This report is the first to present broiler hatching eggs as carriers and a potential source of ESBL/AmpC-producing Enterobacteriaceae for broiler chicks.

Morphometric analyses of the body and the branches of the normal third interosseous muscle (suspensory ligament) in Standardbreds

The third interosseous muscle (suspensory ligament, TIOM) is composed of connective tissue (CT) with a variable proportion of muscle (MT) and adipose tissue (AT). The aim of our study is to quantify the CT, MT and AT within the body and the branches of right thoracic and pelvic limbs TIOM in sound horses to determine whether there are differences in CT, MT and AT between age, sex, limbs and levels. Right limbs from 11 sound horses were collected. Samples from 6 levels of the TIOM were embedded in paraffin or in Tissue‐Tek®. Most of the paraffin sections were shredded. Using the cryosection, some artefacts appeared. Cryoprotection was carried out, which produced the best results. Hematoxylin–phloxine–saffron and Hematoxylin–eosin gave a good contrast of colours between the tissues observed allowing the use of an image analysis programme to calculate percentage of each tissue within the TIOM. The percentage of MT and AT decreased significantly (P < 0.0001), whereas the percentage of CT increased significantly (P < 0.0001) with age and when descending from the proximal to the distal level of the TIOM. The percentage of MT was significantly higher (P < 0.0001) in females than males, while the percentage of CT was significantly higher (P < 0.0001) in males than females. The percentage of AT was significantly higher (P = 0.0278) in pelvic limbs than in thoracic limbs. These results confirm the variation in tissue composition within the TIOM of sound horses.

Backyard poultry in Kabylie (Algeria): from an indigenous chicken to a local poultry breed?

Backyard poultry is considered as a powerful tool for poverty alleviation. It is further promoted as a way of empowering women in communities where there is gender bias in poultry raising. The low-input systems involved are based on local breeds that are perfectly suited to their environment. However, socio-economic processes put local genetic resources under pressure, leading to the erosion of biodiversity. The present survey addresses this issue in the case of Kabylie, a mountainous coastal region of Algeria, through a survey conducted in 90 households raising poultry, a morpho-biometric description of 315 local chickens, and a performance evaluation of both growth and egg production in experimental semi-intensive conditions. The socio-economic profile of poultry smallholders in Kabylie reveals poor education and high diversification of agricultural assets and confirms gender bias in poultry keeping. The erosion of local genetic resources in chicken is found to be severe despite their cultural importance in Kabylie. From complementary surveys among experienced poultry keepers, the major original local type is postulated to consist of three varieties with black plumage (pure black, mottled and barred). The performance evaluation raised promising results, suggesting that exploiting the local breed could pursue some degree of improvement of low-input backyard systems. Finally, a strategy for a revival of the local breed through the support of the most involved smallholders is outlined in accordance with the information collected in the survey.

Characterisation of camel breeding practices in the Ansongo Region, Mali

Despite its importance in Mali’s economy, camel breeding in the country remains poorly documented, impeding effective policy-making in this regard. This study consisted in a 3-month survey and aimed at characterising camel breeding systems in Ansongo, in the region of Gao, Mali. It highlights the diversity of strategies adopted by breeders and their evolutions. Supplementary feeding and veterinary care were seldom practised. In zones close to the Niger River, cattle were substituted to camels. Transhumance routes also are modified but mobility keeps its vital role in the breeding system. Important differences within the study region in the classification of camel breeds have been reported that will influence the implementation of a collective action for animal genetic improvement. The improvement goals should take the actual management, including mobility and the mixed nature of the herds into account.

Quality assessment of marketed eggs in bassekabylie (Algeria)

Quality variations in retail eggs are widely reported. This study aims at assessing the quality of eggs according to the marketing channel in the department of Bejaia (Algeria). In spring and summer 2012, 3330 eggs were bought in 30 stores divided into 3 categories: 10 supermarkets (1146 eggs), 10 public markets (1048 eggs), and 10 shops (1136 eggs). Egg weights differed significantly between marketing channels with 58.9±0.14, 61.2±0.13 and 62.8±0.13 g for public markets, shops and supermarkets, respectively (p<0.001). Although shell thickness was similar for all marketing channels, the proportion of damaged eggs was higher in public markets (9.0%), intermediate in food shops (7.3%) and lower in supermarkets (5.7%; p<0.05). The yolk/albumen ratio was significantly higher for eggs from supermarkets (48.0%) compared with the other channels (around 47.4%; p<0.05). The freshness of the eggs, measured by the Haugh method, was lower in public markets (74.3 units), intermediate in shops (77.6 units) and higher in supermarkets (79.9 units; p<0.05). The price of eggs, expressed in Algerian Dinar (AD) per kg, was significantly lower in public markets (124 AD/kg) compared with the two other channels (around 131 AD/kg; p<0.05). It is possible to conclude that egg quality in Bass Kabylie differs significantly among marketing channels, with higher quality observed in supermarkets. The lower quality of eggs in public markets is associated with lower price. Eggs from shops present an intermediate quality. A one-year study would allow studying both the potential seasonal effect and compare intrinsic variability across marketing channels.

Assessing the diversity of preferences of suburban smallholder sheep keepers for breeding rams in Ouagadougou, Burkina Faso.

Urbanisation in developing countries entails deep changes in the livestock sector and the management of animal genetic resources (AnGR). Sheep breeding around Ouagadougou (Burkina Faso) illustrates these changes and the need to coordinate genetic improvement in general and the use of crossbreeding in particular. For this, it is important to understand breeders’ choices and improvement strategy, to accompany them within a national plan for AnGR management. In a context of missing market for breeding rams, a stated choice experiment was conducted with 137 farmers, together with a characterisation of herd management practices. This survey analyses farmers’ preferences for breeding rams, estimating their willingness to pay (WTP) for different traits (attributes). Their practices were characterised by a high reliance on natural pastures (82% of farmers) and a minority of crossbreeding (23%). The highest WTP was observed for disease resistance. However, the subgroup of farmers practicing crossbreeding showed a tolerance to high susceptibility. A strong preference for the white colour was revealed. Although significant, the influence of sheep body size on decision-making showed a lesser importance, again with a distinct behaviour in the subgroup practicing crossbreeding. These results illustrate the need to take account of the diversity of goals and preferences among smallholder sheep keepers to gain their adhesion to a coordinated genetic improvement framework.

Performances of local poultry breed fed black soldier fly larvae reared on horse manure

In poultry, feed based on maggots, like larvae of black soldier fly (Hermetia illucens) is an attractive option to substitute current ingredients which are expensive and often in direct or indirect competition with human food. Little information is currently available on the utility of these larvae in poultry feed, so goals of this study were to determine whether larvae could be reared on horse manure under traditional farming conditions and to evaluate the growth performances of a local poultry fed these larvae and the fatty acids profiles of their meat. After freezing and thawing, larvae were introduced in the feed of Ardennaise chickens between 30 and 80 days of age. Birds in the control group received a commercial standard feed, while those in the treatment group received the same commercial feed in which 8% was substituted with whole fresh larvae corresponding to 2% on a dry matter basis. Means ± standard errors of larval length and weight were 20.67 ± 2.21 mm and 0.14 ± 0.02 g, respectively. Mean larval percentages of dry matter and of substances extractable in diethyl ether were 24.6% and 23.1%, respectively. Larval fatty acids profiles were predominantly composed of lauric acid (28.1%) and palmitic acid (22.0%). Least squares means of weekly weights of chicken, adjusted for the effects of sex, replication and initial weights, were significantly higher (P < 0.05) by 77.03 ± 53.37 g in larvae-fed than in control chickens. All other measurements were not statistically different between larvae-fed and control chicken, including fatty acid profiles, protein content and ω6/ω3 ratio.

Mapping stakeholder viewpoints in biodiversity management: an application in Niger using Q methodology

The purpose of this paper is to examine the viewpoints of stakeholders in the management and conservation of farm animal biodiversity in Niger. The research applies Q methodology in order to reveal consensual and divergent discourses. After the development of the set of items on the topic of biodiversity (Q sample), the statements were sorted by the respondents through a 7-grade scale, from −3 to +3. The analysis of Q-sort data with the qmethod package under the R software highlighted three distinct stakeholder viewpoints on the importance of biodiversity in agriculture and animal husbandry, the balance between progress and preservation and the effectiveness of different methods of conservation. The study shows an apparent consensus on the importance of biodiversity that is obviously a promoted topic in the country. Behind the consensus, different discourses are defined that all appear divided by the same dilemma between conservation and economic development. Understanding the different answers and weight attributed to each of the components of the dilemma will guide awareness-raising campaigns and help to pinpoint divergent interests among stakeholders.

Extended spectrum β-lactamase producing Escherichia coli in broiler breeding roosters: Presence in the reproductive tract and effect on sperm motility

Extended spectrum β-lactamases (ESBL)-producing Escherichia coli have emerged worldwide in animal husbandry and they were reported from different ecosystems. The purpose of this study was firstly, to investigate the presence of ESBL-producing E. coli in the gastrointestinal (GIT) and reproductive (RT) tracts of broiler breeding roosters, and secondly to study the impact of an ESBL-producing E. coli on artificially infected semen. A total of seventeen ESBL-producing E. coli strains were isolated from the gastrointestinal and reproductive tracts of nine broiler breeding roosters. All isolates were identified to the species level by API 20E system and MALDI-TOF, serotyped, and genetically characterized for ESBL production. Semen was artificially infected with E. coli ATCC25922 or with an ESBL-producing E. coli strain recovered from the reproductive tract. A computer aided semen analyzer (CASA) was used to compare different spermatozoa motility parameters in each sample. All ESBL-producing E. coli isolates could not be typed with the currently used sera and they were harboring a blaCTX-M gene alone or in combination with a blaTEM gene. The semen quality was notably less affected in samples infected with ESBL-producing E. coli strain compared to the control and sample infected with E. coli ATCC25922. The present study revealed that ESBL-producing E. coli can be isolated from both reproductive and digestive tracts of broiler breeding roosters. Contamination of the reproductive tract with ESBL-producing E. coli could lead to contamination of semen and could be an important factor in the dissemination of ESBL-producing E. coli in poultry.
