Carcass and meat quality traits of 16 pregnant and 5 non-pregnant cows fed at 1.2 times maintenance and 16 pregnant and 6 non-pregnant fed ad libitum were evaluated. Pregnancy did not affect final body weight (FBW; P=0.0923), cold carcass yield (CCY; P=0.0513), longissimus muscle area (LMA; P=0.8260), rib fat thickness (RFT; P=0.1873) and shear force (WBSF; P=0.9707). A lower FBW (P=0.0028), LMA (P=0.0048) and RFT (P=0.0001) were observed in feed restricted cows. However, no differences were found for CCY (P=0.7243) and WBSF (P=0.0759) among feeding level groups. These data suggests that carcass and meat quality traits are not affected by pregnancy status in Nellore cows. Moreover, although cows experiencing feed restriction did have reduced deposition of subcutaneous fat and lean tissue, there were no major impacts on meat quality traits.

The objective of this study was to evaluate the contents of fibrous compounds in tropical grasses and legumes according to utilization of sodium sulfite in the neutral detergent solution or using a procedure for contaminant protein correction. Samples of ten grasses and ten legumes were used. The contents of neutral detergent fiber were decreased when sodium sulfite was used; however, more prominent reductions were verified in legumes. Sodium sulfite decreased the acid detergent fiber content in both forage groups. The contents of neutral and acid detergent insoluble protein and lignin were reduced by sodium sulfite in legumes, but no effect was observed in grasses with regard to these variables. The decrease in fiber contents in legumes could be explained by the solubilization of lignin and decrease in insoluble nitrogen. However, the decreases in fiber in grasses could not be solely explained by the decrease in contaminant protein and solubilization of lignin, and loss of other fibrous compounds probably occurred. The utilization of sodium sulfite compromises the accuracy of the estimates of fibrous compounds contents in tropical forages. The precision of the estimates were not relevantly increased by sodium sulfite. The correction of insoluble fibrous compounds for protein is suggested instead of using sodium sulfite because there are no modifications on neutral detergent solution or undesirable solubilization of fibrous compounds.

Sixty 18-month-old steers (20 Nellore, 20 F1 Simmental × Nellore and 20 F1 Angus × Nellore with average body weight of 265.6±6.4 kg; 325.3±4.7 kg and 324.6±6.0 kg, respectively) were used. The effects of feeding regime and genetic group on physical carcass composition, empty body composition, composition of the gain, as well as the pattern of tissue deposition were evaluated in this trial. The interaction between genetic group and feeding regime was not significant for any variable evaluated. Animals fed at the maintenance level produced carcass with larger proportions of bones and muscle than the animals fed ad libitum and Nellore animals had larger muscle portion and smaller adipose tissue portion on the carcass than the crossbred animals. Nellore animals and those fed at maintenance had smaller amount of total fat in the carcass than the crossbred animals and those fed ad libitum, respectively. Fat was deposited more pronouncedly in the intermuscular depot, followed by the visceral depot. The rate of deposition of the carcass tissues was smaller in the Nellore animals and in the animals fed the diet with concentrate allowance equivalent to 1% body weight (except for subcutaneous fat tissue), when compared with the crossbred animals and those fed the diet with 2% BW on concentrate, respectively. The rate of fat deposition on the visceral depot was larger in the F1 Angus × Nellore animals and on those fed the 2% of BW of concentrate diet when compared with F1 Simmental × Nellore animals and those fed the diet with the lowest concentrate allowance (1% BW).

This study aimed to evaluate the effects of replacement of soybean meal (SBM) with soybean meal treated with tannin (SBMT) on the intake, digestibility, performance and characteristics of the carcasses of young cattle fed a high-concentrate diet. Forty-two Nellore bulls with body weight of 244.5 ± 4.99 kg were used. Diets had the inclusion of 7.5% SBM, with a proportion of that SBM (0, 33, 66 or 100%) replaced for SBMT; and other treatment (SBMT + urea) just with 2.5% of SBM which was treated with tannins. Seven animals were randomly selected and slaughtered, and the remaining animals were distributed on treatments and remained for 112 days. After, all animals were slaughtered. There was a linear decline in dry matter intake (P = 0.026) when SBM was replaced with SBMT. No decrease in carcass weight (P > 0.05) was observed. The efficiency of carcass weight gain showed a quadratic function effect (P = 0.049). There were changes in carcass gain composition when SBMT was added (P < 0.05), with an increase in muscle and reduction in fat deposition. The use of SBMT in place of SBM causes changes in body gain composition in animals and reduces DM intake by the animals, achieving a better feed conversion efficiency.

Adding tannins to the dietary protein source will cause complexation between the tannin and protein, which may increase dietary ruminal undegraded protein. Thus, this study aimed to evaluate the effects of replacing soybean meal (SM) with soybean meal treated with tannin (SMT) on the intake, partial and total nutrient digestibility, and protein dietary efficiency of young cattle fed a high-concentrate diet. Five Nellore bulls with bodyweights of 290 ± 11.2 kg were fitted with ruminal and abomasal cannulas and were used in the study. The experimental diets included 7.5% SM, with a proportion of that SM (0%, 33%, 66% or 100%) replaced with SMT. Another treatment (SMT+urea) with only 2.5% SM treated with tannins was tested. The intake of ether extract and the intake of neutral detergent fibre ash and protein were the only parameters related to feed intake that were affected by the replacement of SM with SMT. Ruminal and intestinal digestibility each showed a linear effect on crude protein, which decreased with ruminal digestibility and increased with intestinal digestibility. The intake of ruminal undegraded protein and metabolisable protein showed a positive linear correlation with the amount of SMT in the diet. SMT substitution showed no effect on methane emission. The replacement of traditional SM with SM treated with 2.5% tannins (85% condensed tannins and 15% hydrolysable tannins) for cattle that were fed high-concentrate diets showed increased amounts of metabolisable protein and decreased nitrogen loss per unit of crude protein, without changing the methane emission.
