Tahiti lime juice sweetened with 60% sucrose (w:w) and natural was frozen and stored for 60 days. Analysis of variance, comparison of means and regression analysis were used to evaluate the effect of sucrose addition and time of storage on physicochemical and sensory characteristics of the juices. Sixty percent sucrose was added because simple dilution of the sweetened juice produced limonade with high acceptability. The juice stored without sugar was sweetened and diluted in the same proportion of the sweetened one before analysis. Concentration of soluble solids, total acidity and ascorbic acid, and pH of the juice were not affected by storage time. Sensory analysis did not detect the darkening that occurred during storage, which could be determined by spectrophotametry. Sensory attributes of aroma and flavor of aged lime juice, as well as sweetness perception were affected by storage time.

The objective of this work was to evaluate the use of microfiltration to obtain clarified organic passion fruit juice and analyse its sensory acceptability. Passion fruit was cultivated under organic system in Rio de Janeiro State. The juice was submitted to an enzymatic treatment before microfiltration, in order to decrease its viscosity and pulp content, and to improve permeate flux. Microfiltration had been accomplished with a tubular 0.3 µm pore size membrane with 0.05 m2 of filtration area. The process promoted complete removal of the suspended pulp in permeated juice, which resulted in a limpid and clarified juice. Concerning the sensorial analysis, passion fruit refreshment obtained from clarified juice was approved by 75% of the consumers. The microfiltered passion fruit juice was conserved in plastic package for 28 days under refrigeration temperature (7oC). Results confirm the efficiency of microfiltration as an alternative method for conservation of passion fruit juice, and point out the importance of this technology for the processing of organic juices.

The objective of this study was to evaluate the granulometry of wheat flour and flour precooked by extrusion obtained from the mixture of rice and coffee (15 and 20%), as well as the acceptability of biscuits and cakes prepared with 20 and 30% of precooked flour in the mixture of the dough (wheat). The results obtained show that the extruded flours presented thicker granulometry than the wheat flour. Granulometry increased with the increase of the content of precooked flour in the mixture with wheat. There were no significant differences among the samples treated with 15 and 20% of precooked flour as to the sensorial preference of aroma, texture, flavor, and global impression. However, the biscuits made with precooked flour with 15% of coffee in the mixture with rice presented greater preference of aroma and texture if compared with those with 20%. It can be said that up to 30% of rice and coffee-based precooked flours can be used as ingredient in the mixture of cakes and biscuits and other food products.

Apesar do alto valor nutricional do extrato de soja, seu consumo nos paises do ocidente ainda e limitado principalmente devido as caracteristicas sensoriais desagradaveis resultantes do seu tradicional processo de obtencao. A castanha do Brasil (Bertholletia excelsa) apresenta sabor agradavel e e reconhecida por seu valor nutricional. Para promover a incorporacao da castanha do Brasil na dieta do brasileiro e necessario estabelecer melhor exploracao industrial. Portanto, o objetivo deste trabalho foi elaborar uma bebida de soja e castanha do Brasil explorando os beneficios de dois importantes produtos nacionais de alto valor nutritivo. O processo de obtencao da bebida constituiu-se de elaboracao, formulacao e homogeneizacao dos extratos de soja e de castanha do Brasil. Foram estudados cinco niveis (10, 20, 30, 40 e 50%) de extrato de castanha adicionados a bebida de soja. A bebida de soja contendo 30% de extrato de castanha foi a preferida entre os consumidores que participaram deste estudo, demonstrando o beneficio sensorial promovido pela castanha do Brasil. No entanto, ela nao apresentou um melhor desempenho em termos de valor nutricional, exceto pelo teor de oleo. Bebidas a base de soja e castanha do Brasil apresentaram estabilidade visual (sem separacao de fases), apesar da nao estabilidade demonstrada pela bebida de castanha do Brasil isoladamente. Quando o extrato de castanha do Brasil foi acrescentado a bebida de soja, o produto final foi mais branco do que a bebida de soja. Isto e interessante do ponto de vista do consumidor que procura por um extrato de soja mais claro. O processamento da bebida de soja e de castanha do Brasil pode ser uma alternativa para o aumento do uso de castanha do Brasil na dieta dos brasileiros.

The green coconut water is sterile inside the nut, but during its extraction and bottling microbiological contamination and biochemical alterations can occur, resulting in quality loss and decrease of its commercial value. The present work aimed at studying the conservation of the green coconut water by microfiltration and ultrafiltration. For microfiltration, a 0.1µm pore size membrane was tested and for the ultrafiltration 100, 50 and 20kDa molecular weight cut off membranes were evaluated. The process efficiency was evaluated by the permeate flux and microbiological, physical-chemical, biochemistry and sensory evaluations. It was not observed significant variation in the physical-chemical parameters. The permeate water presented higher luminosity and lower haze than the original coconut water. The protein content of the permeate coconut water, which is an indirect measure of enzyme concentration, was proportional to membrane porosity. The shelf-life evaluation revealed satisfactory results in relation to the microbiological quality. Among consumers who tasted the ultrafiltrated coconut water, 94% liked the product.

Fourteen Holstein-Zebu calves were used to evaluate the effects of probiotic with Lactobacillus acidophilus, Streptococcus faecium and Sacharomyces cerevisae in diet on performance and meat quality of veal calves. Calves were randomly assigned in two treatments: whole milk and whole milk with probiotic. Calves were weight at birth and every fifteen days until slaughter, between 160 and 190 kg body weight. Body weight daily gain, dry matter intake, feed efficiency, dressing percentage of carcass, fecal score and sensorial analyses in Longissimus dorsi muscle were evaluated in a completely randomized block design. Data were interpreted by variance analysis and means compared by F test. Weekly fecal scores were interpreted by non-parametric variance analysis, by Wilcoxon test. Any differences were observed in sensorial analysis of meat samples, and data indicate a quite clear coloration, with compatible intensity of red color wanted by market. Average values of body weight daily gain, feed efficiency, weight and dressing percentage of carcass for both treatments were 892 and 945 g, 1.41 and 1.30, 90.9 and 98.8 kg, 57.1 and 58.3%, respectively, for calves fed whole milk and whole milk with probiotic (p > 0.05).

Palavras-chave: SUMMARY SENSORY PROFILE DEVELOPMENT AND SENSORY/INSTRUMENTAL PASSION FRUIT JUICE EVALUATION. The most important tropical fruits used in juice production are passion fruit and mango. They are especially liked due to their intense aromas. Aroma and flavor are results of many constituents that are present in different concentrations, which are very sensitive to changes during thermal treatment used in the juice production. This work aimed at developing the sensory profile and evaluating the changes that may occur during the passion fruit juice processing. Three passion fruit juices were analyzed: the raw material (pulp), which was pasteurized, kept in tambour and frozen; the ready-to-drink (formulated with sugar and water); and the pasteurized at 98 C, 30s. The sensory profile was composed of 13 attributes The quantitative descriptive analysis design comprised two factors, i.e. type of juice and panelists. The results were also analyzed using principal components analysis. Significant differences were found among the three juices except for the attribute passion fruit aroma and sweet aroma. the artificial aroma, cooked aroma, fermented aroma and fermented flavor were significantly higher (p<0.05) on the processed passion fruit juice. The first two principal components accounted for 57% of the variance. There were significant differences among the three juices regarding the colour parameters, except for the haze. The frozen juice kept in tambour was darker than both the formulated juice and the pasteurized juice. The red color of the frozen juice kept in tambour and the formulated juice was similar. On the other hand, the red color for the pasteurized juice was less intense. However the yellow colour was higher on the formulated juice, presenting lower values on the pasteurized juice and on the frozen juice kept in tambour.

The aim of this study was to evaluate, firstly, consumer preference for ice cream formulations (cream, strawberry and chocolate) sweetened with sucrose against formulations with xylitol, through paired comparison tests with consumers. The acceptability of the ice creams formulated with xylitol was also evaluated, considering the following attributes: overall aspect, colour, consistency, sweetness and flavour, in addition to observing consumer habits with respect to ice cream consumption and their purchase intention. The ice creams sweetened with sucrose were prefered when compared to those sweetened with xylitol, with the chocolate ice creams presenting the lowest sensory difference, followed by strawberry and cream ice creams. The acceptability of the ice creams containing xylitol was considered high, with results for overall aspect of 91% for the strawberry ice creams, 88% for the chocolate ice creams and 67% for the cream ice creams, which can be considered between good and excellent. These results reflected on the purchase intention results, where consumers were quite receptive to take home any of the ice cream flavours evaluated, especially the chocolate flavour, which was preferred amongst the consumers consulted. The results confirm the commercialization potential of ice creams sweetened with xylitol, as an option for individuals with diabetes and obesity.

The aim of this study was to compare the sweetening power of xylitol and sucrose solutions, verifying differences in sweetness among cream, strawberry and chocolate flavoured ice creams sweetened with these two sweeteners, and also determining the sensory quality of the products with respect to appearance, colour, aroma, consistency and flavour. There were significant differences (p < 0.05) among all the formulations except between the strawberry formulations made with 100% sucrose and 50% xylitol. With respect to quality, the cream flavoured ice creams presented the greatest differences in quality among the three concentrations of sweeteners, since of the five attributes evaluated, significant differences (p < 0.05) were obtained for four of them (appearance, colour, consistency and flavour). The strawberry ice creams were the most uniform with respect to quality, only presenting significant differences (p < 0.05) for consistency. The chocolate ice creams were intermediate, presenting significant differences (p < 0.05) for consistency and flavour.
