Chemical composition of umbu (Spondias tuberosa Arr. Cam) seeds

The umbu tree (Spondias tuberosa Arr. Cam) is an important fruit tree the economy of the semi-arid northeastern region of Brazil. With the objective of finding use for the seeds, physical and chemical characterizations of the seeds from 2 cultivars in 2 maturation stages were carried out and their fatty acid and mineral profiles determined. The results showed no differences between the seeds analyzed. The yield was about 10% and the dimensions as follows: length from 1.48 to 2.11 cm and width from 0.76 to 1.16 cm. The average lipid content was 55% of which 69% was unsaturated and the average protein content was 24%. The seeds were a good source of the following minerals: P, K, Mg, Fe and Cu. The overall results indicated that the oil or the seeds could be used for food stuffs if no toxic agents were found.

PRÉ-REQUISITOS PARA IMPLEMENTAÇÃO DO SISTEMA APPCC EM UMA LINHA DE ALFACE MINIMAMENTE PROCESSADA

SUMMARY REQUIREMENTS FOR HACCP SYSTEM IMPLEMENTATION IN A MINIMALLY PROCESSED PLANT. Good Manufacturing Practices (GMP) and Sanitation Standard Procedures Operation (SSOP) are Pre-requisite Programs (PPRs) for the HACCP system implementation, being the initial step at the adoption of an Assurance Quality System in the Food Industry. A Brazilian produce line was evaluated according to PPRs compliance and microbiological analysis of processing water, equipments/utensils and workers of packing room were performed. Several failures were detected in the auditing and presence of pathogens and microbial groups at values from the Brazilian legislation (range from 16 MNP/100 mL and 7-2400 MPN/cm2 for total and fecal coliform at the water processing and equipments/utensils, respectively). S. aureus was not detected on the handlers, while E. coli was present on them and absent at the water processing. The results indicate the produce unit do not have conditions for the HACCP implementation, being necessary corrective actions to improve the safety of environmental processing, like pest control, food hygiene training and an effective control

Efeito da temperatura e taxa de cisalhamento nas propriedades de escoamento da polpa de Cupuaçu (T. grandiflorum Schum) integral

The rheological behavior of the entire cupuassu pulp was determined in the temperature range 10 - 60oC. The effects of temperature and deformation rate were evaluated by means of shear flow tests. Rheometry analyses were conducted with a Thermo Haake RheoStress 1 system. Rheograms were described by models by Ostwald-of-Waelle and Herschel-Bulkley. The Ostwald-of-Waelle model successfully represented pulp flow behavior. The product presented shear-thinning behavior and the flow behavior index (n) decreased with the increase of temperature. The effect of temperature on the apparent viscosity in cupuassu pulp was described by an Arrhenius equation and discussed in terms of activation energy. The increase in shear rate caused an energy increase, and values were obtained in the range of a line from 1 to 2 kcal/gmol.

Caracterização física e química da casca e polpa de jambo vermelho (Syzygium malaccensis, (L.) Merryl & Perry)

O objetivo do trabalho foi avaliar as propriedades fisicas e quimicas, respectivamente da polpa e da casca do jambo vermelho (Syzygium malaccensis) para possivel aproveitamento na producao de novos produtos. Frutos de jambeiro maduros apresentaram rendimento medio em polpa de 75,69%, umidade de 84,57 g de agua.100 g-1 de polpa e relacao DL/DT de 1,24, forma levemente eliptica ou oval; conferindo boas caracteristicas para industrializacao. A casca corresponde a 8,05% da polpa do fruto, e rica em fibras (9,34 g.100 g-1), em vitamina C (292,59 mg.100 g-1) e em antocianinas (300,54 mg.100 g-1 de casca). O pH de 3,5 classifica-a como muito acida, favorecendo seu uso na fabricacao de geleias para acidificacao e em sucos para aumentar o rendimento. A casca de jambo e uma boa fonte de fibras, carboidratos e vitamina C, fornecendo 37 e 45% da IA de fibras e de carboidratos, respectivamente, e 390% da IDR de vitamina C. O jambo apresentou caracteristicas fisicas adequadas para a industrializacao na forma de polpa congelada, sucos, doce em massa e em compota, geleias, nectares e sorvetes e a casca, propriedades fisicas e quimicas que permitem seu reaproveitamento como antioxidante, corante natural em alimentos e no enriquecimento de dietas em funcao dos altos teores de vitamina C e anticianinas.

Avaliação do consumidor sobre sorvetes com xilitol

The aim of this study was to evaluate, firstly, consumer preference for ice cream formulations (cream, strawberry and chocolate) sweetened with sucrose against formulations with xylitol, through paired comparison tests with consumers. The acceptability of the ice creams formulated with xylitol was also evaluated, considering the following attributes: overall aspect, colour, consistency, sweetness and flavour, in addition to observing consumer habits with respect to ice cream consumption and their purchase intention. The ice creams sweetened with sucrose were prefered when compared to those sweetened with xylitol, with the chocolate ice creams presenting the lowest sensory difference, followed by strawberry and cream ice creams. The acceptability of the ice creams containing xylitol was considered high, with results for overall aspect of 91% for the strawberry ice creams, 88% for the chocolate ice creams and 67% for the cream ice creams, which can be considered between good and excellent. These results reflected on the purchase intention results, where consumers were quite receptive to take home any of the ice cream flavours evaluated, especially the chocolate flavour, which was preferred amongst the consumers consulted. The results confirm the commercialization potential of ice creams sweetened with xylitol, as an option for individuals with diabetes and obesity.

Avaliação sensorial de sorvetes à base de xilitol

The aim of this study was to compare the sweetening power of xylitol and sucrose solutions, verifying differences in sweetness among cream, strawberry and chocolate flavoured ice creams sweetened with these two sweeteners, and also determining the sensory quality of the products with respect to appearance, colour, aroma, consistency and flavour. There were significant differences (p < 0.05) among all the formulations except between the strawberry formulations made with 100% sucrose and 50% xylitol. With respect to quality, the cream flavoured ice creams presented the greatest differences in quality among the three concentrations of sweeteners, since of the five attributes evaluated, significant differences (p < 0.05) were obtained for four of them (appearance, colour, consistency and flavour). The strawberry ice creams were the most uniform with respect to quality, only presenting significant differences (p < 0.05) for consistency. The chocolate ice creams were intermediate, presenting significant differences (p < 0.05) for consistency and flavour.
