Frequency of Food Intakes and Living Conditions of Women in a Suburban Rural Area

神奈川県足柄上郡中井町の30~65歳の婦人254名について, 食品群のふだんの摂取頻度, 入手方法, 商店までの所要時間を面接聞き取り法で調査し, 食品摂取頻度の状況, これと商店までの所要時間または距離, 年齢, 職業および20歳未満の家族の有無などとの関連について検討した。その結果, 下記の知見を得た。1) 相関行列で示された18食品群間の相関係数により, 食品の摂取頻度の間に補完的または競合的関係があり, 食品群別摂取量における食物消費構造の存在と同様に摂取頻度にも構造的状況があることが明らかにされた。2) 食品販売店舗までの距離と摂取頻度との関連は, 米, つけもので弱く, 魚や肉ではやや強い。しかし, 魚や肉の場合でも, 店舗が遠いほど, 摂取頻度が低下しているという単純な関係は見られなかった。3) 職業は米とパンの摂取頻度については第1位, みそおよびつけものについては第2位に大きい関連を有しており, なかでも農業従事者は専門職, 事務職の者に比べて, 米, みそおよびつけものの摂取頻度が高く, いわゆる日本の伝統的食事パターンと結びついている。4) 年齢はみそ, つけもの, 魚および肉の摂取頻度について第1位, 米およびパンについては第2位の強さで関連を有している。とくに米とみそにおいては, 年齢が高まるに従って摂取頻度が高まっており, つけものと魚では若年齢層で摂取頻度が低いこと, パンは米とは反対に年齢の高いほど摂取頻度が低く, 肉も60歳代では著しく摂取頻度の低いことが示された。5) 20歳未満の家族の有無と, 上記6食品群の摂取頻度および米の自家生産の有無と米の摂取頻度との関連はほとんど認められない。
