Effect of turmeric powder (Curcuma longa L.) and ascorbic acid on physical characteristics and oxidative status of fresh and stored rabbit burgers

The objective of this study was to evaluate the effect of Curcuma longa powder and ascorbic acid on some quality traits of rabbit burgers. The burgers (burgers control with no additives; burgers with 3.5 g of turmeric powder/100g meat; burgers with 0.1g of ascorbic acid/100g meat) were analyzed at Days 0 and 7 for pH, color, drip loss, cooking loss, fatty acid profile, TBARS, antioxidant capacity (ABTS, DPPH and FRAP) and microbial growth. The addition of turmeric powder modified the meat color, produced an antioxidant capacity similar to ascorbic acid and determined a lower cooking loss than other formulations. Turmeric powder might be considered as a useful natural antioxidant, increasing the quality and extending the shelf life of rabbit burgers.

Royal Jelly: An ancient remedy with remarkable antibacterial properties.

Royal Jelly (RJ), a honeybee hypopharyngeal gland secretion of young nurse and an exclusive nourishment for bee queen, has been used since ancient times for care and human health and it is still very important in traditional and folkloristic medicine, especially in Asia within the apitherapy. Recently, RJ and its protein and lipid components have been subjected to several investigations on their antimicrobial activity due to extensive traditional uses and for a future application in medicine. Antimicrobial activities of crude Royal Jelly, Royalisin, 10-hydroxy-2-decenoic acid, Jelleines, Major Royal Jelly Proteins against different bacteria have been reported. All these beehive products showed antimicrobial activities that lead their potential employment in several fields as natural additives. RJ and its derived compounds show a highest activity especially against Gram positive bacteria. The purpose of this Review is to summarize the results of antimicrobial studies of Royal Jelly following the timescale of the researches. From the first scientific applications to the isolation of the single components in order to better understand its application in the past years and propose an employment in future studies as a natural antimicrobial agent.

Correlation of fresh muscle firmness with sensory characteristics of pork loins destined for a quality focused market

Production of pork for quality-driven export markets offers economic incentive. Pork processors use subjective firmness as a sorting tool for loins intended for high-quality export. The objectives of this study were to determine 1) durometer efficacy in muscle, 2) if firmness on one portion of the loin is indicative of other locations, 3) if 1 d firmness is related to export quality traits, and 4) if variation in firmness is explained by mechanistic measures. Subjective firmness scores (1 = extremely soft and 5 = extremely firm) were determined by a trained individual 1 d (initial time point) postmortem. Loins (North American Meat Processors number 414 Canadian back; = 154) were wet aged for 28 d at 1.7°C. On d 28, a panel of 4 individuals assigned firmness scores on the ventral side of the loin at the area of the 10th rib, the anterior half, and the posterior half of the loin. Durometer readings were collected at the area of the 10th rib on the dorsal and ventral side of the loin. Spearman correlation coefficients were computed in SAS (version 9.3) to account for nonnormality of categorical data. Subjective firmness measurements at d 28 at the 10th rib and on the anterior portion of the loin were not correlated ( ≥ 0.21) with whole loin durometer readings on the dorsal or ventral portion of the loin or the average of the whole loin values. Subjective firmness (d 28) at the 10th rib accounted for 38.44 ( = 0.620) and 48.30% ( = 0.695) of the variation in firmness at the anterior portion of the loin and the posterior portion of the loin, respectively ( ≤ 0.05). One-day subjective firmness measurements were correlated with 28-d Warner-Bratzler shear force measurements ( = 0.174, = 0.03) but were not significantly correlated with sensory characteristics ( ≥ 0.08). Purge tended to be correlated with 1 d firmness ( = 0.136, = 0.10); however, drip and cooking loss, 24-h and 28-d pH, and soluble and insoluble collagen content were not correlated ( ≥ 0.34). Firmness measurements collected in the production facility (1 d) were negatively correlated with iodine value (IV; = -0.199, = 0.02), yet no 28-d subjective firmness measurements were correlated with IV ( ≥ 0.33). When loins not achieving export standards are removed from the population, 1 d firmness was not correlated to export quality or sensory characteristics (d 28). Differences in firmness were not explained by mechanistic measures. Inconsistencies among subjective and objective firmness measurements suggest that the durometer may not be an appropriate way to determine firmness.

A novel interpretation of the Fractional Inhibitory Concentration Index: The case Origanum vulgare L. and Leptospermum scoparium J. R. et G. Forst essential oils against Staphylococcus aureus strains

Origanum vulgare (oregano) and Leptospermum scoparium (manuka) were traditionally employed as natural remedies for infected wounds and skin injuries where Staphylococcus aureus is mainly involved. The first aim of this study was to investigate oregano and manuka essential oils (EOs) chemical compositions and evaluate their antibacterial activity (MIC, Minimum Inhibitory Concentration) against fourteen S. aureus wild strains. The second aim was to evaluate the antibacterial activities of oregano and manuka EOs mixed in different combination (FIC, Fractional Inhibitory Concentration) with an improved chequerboard technique. This allowed to avoid the usual uncertainty in the determination of MIC and FIC values and to obtain a more precise interpretation of FIC indexes (FICIs). Moreover, FICIs were discussed on the basis of a novel interpretation method to evaluate the synergistic/antagonistic effect of EOs mixtures. The most representative compounds in oregano EO were Carvacrol (65.93%), p-Cymene (9.33%) and γ-Terpinene (5.25%), while in manuka EO were Leptospermone (31.65%), cis-Calamenene (15.93%) and Flavesone (6.92%). EOs presented MIC values ranging from 1:2048 to 1:4096 v/v and FIC values ranging from 0.125 to 1. According to our interpretation, a synergistic effect (34.68%), a commutative effect (15.32%) and an indifferent effect (50.00%) and no antagonistic effect were observed. Conversely, according to two previously proposed FICI interpretation models, 1.80% synergistic effect could be observed and, respectively, 98.20% indifferent effect or 48.20% additive effect and 50.00% indifferent effect. As practical results, oregano and manuka EOs may be an effective alternative to chemotherapic drugs in staphylococcal infections and useful tools to enhance food security.

Improving pork burgers quality using Zingiber officinale Roscoe powder (ginger)

Pork burgers were evaluated for physical-chemical characteristics, fatty acids profile, lipid oxidation, antioxidant capacity, microbiological growth and sensory evaluation during storage time of seven days at 4°C as function of three formulations as only meat (control, B) and meat added with ginger powder at the percentage of 1 and 2% (BG1 and BG2). BG1 and BG2 were less redness than control ones with incremented yellow hue. These modifications in color parameters did not modify sensory characteristics of burgers. PUFA were incremented (both PUFAω3 and PUFAω6) by the addition of ginger. Furthermore, BG1 and BG2 burgers showed to be less sensitive to lipid oxidation and to possess an increase in antioxidant capacity. Microbial growth evaluation of total aerobic count and Pseudomonas spp. showed that ginger powder delayed in time the bacterial contamination. Results highlighted that the presence of ginger led to an enhanced shelf life and health characteristics of burgers (increasing peroxidisability, ratio hypocholesterolemic/hypercholesterolemic and ratio ω3/ω6; reducing atherogenicity and thrombogenicity).

Lactobacillus plantarum and Streptococcus thermophilus as starter cultures for a donkey milk fermented beverage

Donkey milk is recently gaining attention due to its nutraceutical properties. Its low casein content does not allow caseification, so the production of a fermented milk would represent an alternative way to increase donkey milk shelf life. The aim of this study was to investigate the possibility of employing selected Streptococcus thermophilus and Lactobacillus plantarum isolates for the production of a novel donkey milk fermented beverage. Lysozyme resistance and the ability to acidify donkey milk were chosen as main selection parameters. Different fermented beverages (C1-C9) were produced, each with a specific combination of isolates, and stored at refrigerated conditions for 35days. The pH values and viability of the isolates were weekly assessed. In addition, sensory analysis was performed. Both S. thermophilus and L.plantarum showed a high degree of resistance to lysozyme with a Minimum Bactericidal Concentration>6.4mg/mL for 100% of S. thermophilus and 96% of L. plantarum. S. thermophilus and L. plantarum showed the ability to acidify donkey milk in 24h at 37°C, with an average ΔpH value of 2.91±0.16 and 1.78±0.66, respectively. Four L. plantarum and two S. thermophilus were chosen for the production of fermented milks. Those containing the association S. thermophilus/L. plantarum (C1-C4) reached a pH lower than 4.5 after 18h of fermentation and showed microbial loads higher than 7.00logcfu/mL until the end of the storage period. Moreover, comparing the microbial loads of samples containing both species and those containing S. thermophilus alone (C5), we highlighted the ability of L. plantarum to stimulate S. thermophilus replication. This boosted replication of S. thermophilus allowed to reach an appropriate pH in a time frame fitting the production schedule. This was not observed for samples containing a single species (C5-C9). Thus, L. plantarum strains seem to be good candidates in the production of a novel type of fermented milk, not only for their probiotic potential, but also for the enhancing effect on S. thermophilus growth.

Sub-inhibitory stress with essential oil affects enterotoxins production and essential oil susceptibility in Staphylococcus aureus

Abstract Fourteen wild strains of Staphylococcus aureus positive for gene sea were tested for enterotoxins production and the minimum inhibitory concentration of Leptospermum scoparium, Origanum majorana, Origanum vulgare, Satureja montana and Thymus vulgaris essential oils (EOs) were determined. After this trial, bacteria stressed with sub-inhibitory concentration of each EO were tested for enterotoxins production by an immunoenzymatic assay and resistance to the same EO. Oregano oil exhibited the highest antibacterial activity followed by manuka and thyme oils. After the exposure to a sub-inhibitory concentration of EOs, strains displayed an increased sensitivity in more than 95% of the cases. After treatment with oregano and marjoram EOs, few strains showed a modified enterotoxins production, while 43% of the strains were no longer able to produce enterotoxins after treatment with manuka EO. The results obtained in this study highlight that exposure to sub-inhibitory concentration of EO modifies strains enterotoxins production and EOs susceptibility profile.

Effect of the housing system (free-range vs. open air cages) on growth performance, carcass and meat quality and antioxidant capacity of rabbits

Growth performances and meat quality of free-range or cage raised rabbits were compared in 36 male animals. Rabbits were raised in free-range areas (2000 cm2/head) or in open-air cages (800 cm2/head) from weaning to 99 days old. Daily weight gain and final live weight were higher (P < 0.05) for the rabbits raised in cages which presented a more favourable feed conversion ratio (P < 0.05) than in the free-range group. The average feed intake, liver and empty gastro-intestinal tract weights were higher (P < 0.05) in the free-range group, while the interscapular fat percentage was higher (P < 0.05) in the caged rabbits. Loins of free-range rabbits had higher amount of PUFA n-6 in neutral lipids (P < 0.05) whereas their polar lipids were richer in PUFA n-6 and n-3 than in those of the cage group. Muscular fat of free-raised rabbits was found to be less susceptible to be oxidized, having a higher antioxidant capacity than the caged group.

Can the inclusion of black soldier fly (Hermetia illucens) in diet affect the flesh quality/nutritional traits of rainbow trout (Oncorhynchus mykiss) after freezing and cooking?

Abstract Physical and chemical parameters of rainbow trout fillets were tested during 120 days of frozen storage and following cooking. The fillets were obtained from rainbow trout-fed diets where dietary fishmeal was substituted with Hermetia illucens meal at 0, 25 and 50% inclusion levels, corresponding to control (C), Hi25, and Hi50 diets. Variations in quality traits of fillets emerged after 30 days of frozen storage, however they remained almost unchanged for the other 90 days. Increasing levels of H. illucens did not affect pH, shear stress, colour and water holding capacity of fillets. Saturated fatty acids were highly present in Hi50 samples, the polyunsaturated and some monounsaturated ones were higher in C than Hi50, whereas Hi25 always assumed intermediate contents in raw and cooked samples. A medium substitution at the 25% seemed to be the most practical application of insect meal in order to not modify too much the fillets characteristics. Graphical Abstract

Sub-inhibitory concentration of essential oils induces antibiotic resistance in Staphylococcus aureus

Abstract Fourteen Staphylococcus aureus wild strains were stressed with sub-inhibitory concentration of five essential oils: Leptospermum scoparium (manuka), Origanum majorana (marjoram), Origanum vulgare (oregano), Satureja montana (winter savoury) and Thymus vulgaris (thyme). Antibiotics susceptibility profiles of the strains were determined by agar disk diffusion method before and after EOs treatment. The following antibiotics were employed: amoxicillin-clavulanic acid, amikacin, ampicillin, amoxicillin, aztreonam, ceftazidime, cephalothin, ciprofloxacin, colistin, cefotaxime, doxycycline, enrofloxacin, erythromycin, gentamicin, cephalexin, neomycin, piperacillin, rifampin, streptomycin, trimethoprim-sulphamethoxazole, tetracycline and tobramycin. Before EOs treatment, strains were susceptible to all antibiotics except for aztreonam and colistin. After exposure to sub-inhibitory EOs concentration of manuka, marjoram and oregano, several modifications in antibiotics susceptibility profiles were detected. Conversely, few modifications were induced by winter savoury and thyme EOs. Moreover, occurrence of resistances seems uncorrelated with drug classes as low concentration of EO could induce phenotypic changes in susceptible bacteria leading to antibiotic resistance phenomena.
