In conventional histories of the American West, black men are seldom mentioned, black women even more rarely, and black communities, never. When we think about blacks in the West at all, our image is of the black individual: trapper, cowboy, or--less frequently mentioned, but surely very prevalent--army cook. We have one poignant glimpse of a lonely black woman, recorded by Elizabeth Custer in conversation with Eliza, her army cook:
