Quantification of Cavity Degree in Japanese Persimmon for Dehydration Processing

カキ‘西条’の干ガキ加工適性の一要因として,果実の形状をとりあげた.干ガキ製造において機械剥皮を行う場合,表層部から同心円状に除去するので,まず,干ガキ加工と関係の深いとみられる数種の化学成分を果実各層に分けて測定した.中心部の果肉は表層部に比較して,全糖,アスコルビン酸,可溶性タンニンは少なかったが,全ペクチンと水溶性ペクチンは多かった.剥皮歩留まりは,溝の深さと深く関係していると考えられるために,円周をキルビメーターで測定し,完全な円とみなした場合との比を求ある方法,ノギスにより最大直径と最小直径を測定して両者の比を求める方法およびデプスゲージによって直接求める方法の3方法について検討した.肉眼観察による溝の深さの程度とよく一致し,かつ,機械剥皮の歩留まりとの関係から最も実際的な溝の深さの表現は,上記3方法の内ではノギスによる方法であった.測定部位は中央部(赤道面)が最も適していた.これによって求めた値を,溝指数とした.
