1. 緒 言 食品衛生上対象 とな る大 腸菌群 の うちE.coli型 は動 物糞便に,C.freundii型 お よびK.aerogenes型 は土壌等 の 自然界に分布比 率が高 く1)鯉3),それぞれ の環境に適応 して生存 してい る.し か し,食 品材料に混入後は加熱 ・ 乾燥 等の各種 損傷 因子に よる非致死的損傷 を被 ったいわ ゆ る損 傷大腸菌群 の出現や,EC培 地に ブ ドウ糖お よび シ ョ糖 等を添 加す る ことによ り,ECテ ス トにおいて ガ スを産生す る大腸菌群 の存在 が報告 され て い る4)5).こ れ らの ことをふまえる と,大 腸菌群 の発育温度特性は食 品の種 類別な らびに菌型別 に検討 され るべ きものと考え る.す でに,食 品 由来大腸菌群 の発育温度特性につい て は,牛 乳由来 株につ いて鈴木 ら6)が検討 し発育至適温度 お よび最 高発育温度が異 なる ことを報告 してい る.し か し,市 販食 品のなか で も大腸菌群 の検出率の高い食肉 よ り分離 した大腸菌群 につ いての報告はみ られ ない. そ こで,前 報7)で 食 肉由来低温性大腸菌群 の発育に及 ぼ す培 養温度 の影響 につ いて報告 したが,今 回 さらに食 肉由来 の中温 性大腸菌群 につ いて同様 な検討を行 った の で報告 する.
