Hypovitaminosis A causes xerophthalmia, blindness and death in thousands of children throughout the world and constitutes one of the main nutritional problems in the populations of developing countries, including Brazil. Although fruits and vegetables, sources of carotenoids, are widely available in Brazil, hypovitaminosis A constitutes a serious public health problem. The lack of information available to the population about the dietary sources of carotenoids and factors affecting their bioavailability, known in the literature as SLAMENGHI, are possible causes associated with this contradiction. Current carotenoid conversion factors to retinol are higher than earlier ones. This suggests a reduced effectiveness in the conversion of carotenoids into the active form of vitamin A, questioning the role of carotenoids in combating hypovitaminosis A. The aim of this review is to discuss the bioavailability of carotenoids and their food sources in order to better assess the possibility of using these pigments to combat hypovitaminosis A.

The present work evaluated the effect of the addition of inulin on sensory, nutritional and physical parameters of white bread. Three formulations containing 0%, 6% and 10% of inulin were produced. Physical analyses of mass, volume, specific volume, density, centesimal composition, glycemic index (GI) and qualitative descriptive sensory analyses, were carried out. The reduction in bread volume seen with 10% inulin was higher than that reported in the literature. Bread weight did not differ statistically. There was an 85% reduction in fat content for bread with 6% inulin and 86% for bread containing 10% inulin. Glycemic index in bread containing 10% inulin was lower than bread with 6% inulin and equal to inulin-free bread. A level of 6% inulin added to bread was regarded to yield good sensory quality.

The scope of this paper was to investigate the relationship between the nutritional status and the motor skills of the elderly registered in the Family Health Program in the urban area of Vitória de Santo Antão in the State of Pernambuco, by means of a transversal epistemological descriptive-analytical field study. The participants of this survey were 235 elders, both male and female of 60-years-old and over registered in the family health program in the urban area of the city. The nutritional status was evaluated by the body mass index and the circumference of the calf. Four motor tests were used to evaluate motor performance: Time Up&Go, Tinettis Index, Functional Reach and Unipodal Support. The associations were checked using Spearmans correlation. The association of the nutritional status with the motor tests was statistically significant among males* or females**: (Time Up&Go rho = 0.290* / 350**; Functional Reach rho = 0.232* / 352**; Tinettis Index rho = 243* / 363** and Unipodal Support rho = 221* / 475**. The evaluation of the results revealed an association between nutritional status and functional capacity of the elders no matter what gender; with obesity being a limiting nutritional condition to adequate performance in the tests.

Os resultados fisico-quimicos demonstram que as formulacoes pouco diferiram quanto a composicao centesimale que a ingestao 200mL/dia contribui, em media, com 10,8%, 36,0%, 10,2%, 12,6%, 37,1% e 126,4% daRecomendacao de Ingestao Diaria de energia, proteinas, carboidratos, lipideos, fibra alimentar e carotenoides,respectivamente. Os resultados microbiologicos comprovaram a inocuidade do produto; os sensoriais que asformulacoes obtiveram uma aceitacao em torno de 70% e os dados da avaliacao do efeito prebiotico sugeremmaior estudo sobre o tema.

OBJECTIVE: This study assessed the effectiveness of dehydrated pumpkin flakes for elevating serum retinol and the relative dose response in preschoolers. METHODS: Vitamin A intake was determined by dietary survey. The flakes were analyzed microbiologically and for carotenoid content. The children were then given 6 grams of flakes per day during lunch for 90 days. The relative dose response essay was done at baseline and end of intervention. Fasting blood samples were collected at baseline, 30 and 90 days to determine serum retinol levels by spectrophotometry. RESULTS: Microbiological analyses showed that the flakes were suitable for consumption. The mean serum retinol level of the children increased from M=1.438 (SD=0.45µmol/L) at baseline to M=1.659 (SD=0.51µmol/L) at 30 days and M=1.928 (SD=0.70µmol/L) at 90 days. At the beginning of the study, 18.5% of the children had serum retinol levels below 1.05µmol/L. This percentage dropped to 7.6% after 30 days and 0% after 90 days. At the end of the study period (90 days), no child had a positive relative dose response. CONCLUSION: Pumpkin flakes efficiently increase serum retinol levels and hepatic vitamin A reserves in preschoolers.
