Análise discriminante múltipla do mercado varejista de açaí em Belém do Pará

Acai pulp is one of the main foods in the State of Para and of higher per capita consumption in 2010. The sale of acai in Belem is carried out by several units that operate in the retail market. The objective of this study was to identify market segments: greengrocers, micro entrepreneurs and supermarkets, from the analysis of a set of variables that define the decisions of acai consumers. The stepwise multiple discriminant analysis was used to estimate the discriminant functions. Results show that the segment identified with greater precision was the greengrocery, with 100%, followed by supermarkets, with 96.5% of the cases accurately classified, and the segment of micro entrepreneurs, with 90.9%, had the lowest accuracy in the consumer classification. The estimated model showed a high significance in the estimation process, since the functions with the variables amount of acai, consumer income, price of acai, quality of acai, price of fish and price of flour, correctly classified 95.6% of the original elements.

Trends on the rapid expansion of supercritical solutions process applied to food and non-food industries

BACKGROUND The growing interest on supercritical fluids applied to particle engineering over the last years has received attention from the food and non-food industries, in terms of processing, packaging and preservation of these products. The rapid expansion of supercritical solutions (RESS) process is an efficient and promising method to produce small particles with narrow size distribution. OBJECTIVE In this review we report technological aspects on the application of RESS process applied to the food and non-food industry, considering recent data and patent survey registered in literature. METHODS The effect of process parameters solvent, temperature, pressure, nozzle size among others, during RESS on the size, structure and morphology of the resulted particles, and the main differences about recent patented RESS processes are reviewed. RESULTS Most of experimental works intend to optimize their processes through investigation of process parameters. CONCLUSIONS RESS is an efficient and ecological alternative for the production of particles with high yield of bioactive constituents of interest to food industry. On the other hand, patents developed using this type of process to food products are very scarce, less attention being given be given to the potential of this technique to develop particles from plant extracts with bioactive substances.

AÇAÍ PULP DEMAND IN THE RETAIL MARKET OF BELÉM, STATE OF PARÁ

O objetivo deste trabalho foi estimar os parâmetros da demanda por polpa de acai do mercado varejista de Belem. Aplicou-se a analise de regressao multipla para identificar as principais variaveis que influenciam sobre as decisoes do consumo do produto e estimar as elasticidades preco, renda e cruzada da demanda. O metodo econometrico de estimacao foi o de minimos quadrados robustos, para corrigir problemas de variância heterocedastica. Os resultados mostram que a demanda de polpa de acai e inelastica a preco e a renda. Os produtos peixe e farinha de mandioca confirmaram-se como produtos complementares de forte influencia nas decisoes dos consumidores. A qualidade do produto, em funcao da associacao do produto a doenca de Chagas, revelou forte influencia na escolha do produto para o consumo das familias. New Starches are the Trend for Industry Applications: A Review

Analisa-se o comportamento atual e futuro dos mercados institucional e nao institucional de produtos da pequena producao, desenvolvida em projetos de assentamento da reforma agraria da regiao da Transamazonica e da BR-163 no estado do Para. Apresentam-se os subsistemas de uso da terra na Amazonia, as caracteristicas dos sistemas de producao e as formas de insercao no mercado, evidenciando os fatores que limitam a expansao da agricultura familiar e as oportunidades para seguir uma trajetoria de uma agricultura de baixo carbono no contexto do desenvolvimento regional. Os resultados mostram que a continuidade do sistema de producao atual tende para uma especializacao da agricultura familiar em apenas quatro cadeias produtivas: cacau, mandioca, madeira e pecuaria. Por outro lado, ha excedente de oferta para um conjunto de produtos, que dever ser exportado para outros mercados nacionais e internacionais e um excesso de demanda para uma cesta de produtos da agricultura familiar, cujo equilibrio pode ser conseguido com o ajuste e efetivacao da atual politica de apoio a agricultura familiar.
