Novel Microencapsulation System to Improve Controlled Delivery of Cup Aroma During Preparation of Hot Instant Coffee Beverages

Aromatized water-immiscible volatile carrier liquids were emulsified into aerated aqueous coffee solution and frozen droplets desiccated in soluble coffee powder at room temperature to create small capsules that float while dissolving in hot water. The capsules provided stronger aroma than encapsulated aromatized oils and prevented oil slicks. Carriers with relatively low boiling point and water solubility hastened capsule dissolution and aroma release. Carrier-free systems were created by discarding the most water-soluble and least-volatile components from condensed coffee aromas before droplets were encapsulated. When oil-free capsules were added to instant coffee and combined with hot water, they dissolved on the beverage surface and released floating droplets that evaporated to provide intense aroma without adverse effect on flavor or appearance. Methods to create and encapsulate liquid aromas and measure aroma release are presented along with comparative results, capsule microscopy images, and potential to adapt this system to other hot foods and beverages.

Commercial Applications of Microencapsulation and Controlled Delivery in Food and Beverage Products

Continuous advancement in the field of microencapsulation has enabled the availability of unique food and beverage products in the marketplace, corresponding to ever more demanding consumers’ change in consumption habits. Recent noticeable areas where microencapsulation technologies have rendered breakthroughs include flavor and taste applications, health and wellness, as well as experiential and interactive foods and beverages. Specific technologies resulting in food and beverage products in the marketplace include flavor enhancing, odor masking, long lasting, sustained release, burst or quick release, and flavor stabilization. Similarly, popular food and beverage choices with health-promoting attributes include: ready-to-drink teas, sport drinks, dairy-based drinks, energy shots and stick packs, enhanced water, fortified snacks and confectionery, low-sodium foods, food supplements, and oral-health-promoting chewing gums and candies. Food and beverages with experiential and interactive attributes resulting from microencapsulation technologies include: color-changing, cooling and warming effects, foam-producing, mouth-popping hydrogel beads, long-lasting flavors, intelligent packaging, multicolor hydrocolloids, and effervescence. In addition to traditional microencapsulation technologies, other newer technologies that might play an even more relevant role in the future are garnering interest, including bioactive tagging such as PEGylation and electrospinning for the generation of nanofibers and nanotubes. Advancement in these and other microencapsulation technologies will allow for the tailoring of food and beverages to address personalized diet requirements as a function of individual genetic makeup (nutrigenomics) with particular metabolic conditions (metabolomics), a concept known as molecular nutrition, which would support individualized health management and reduce the risk of certain individual-specific diet-associated diseases.
