Motives for food choice of consumers in Central México

Purpose The purpose of this paper is to identify segments of Mexican consumers with regard to their motives for food choices. Design/methodology/approach A questionnaire based on the Food Choice Questionnaire was applied to 1,202 consumers. A factor analysis and a cluster analysis were performed on the data. Findings Ten factors were identified: care for weight and health, social sensitivity, practicality, economic aspects, non-industrialized, hedonism, traditionality A, familiarity, traditionality B, and no added sugar. Resulting clusters were named as: traditional, healthy, conscious, and careless. Statistically significant differences (p<0.05) were found due to gender, age, marital status, and educational level, but not for body mass index. There are signs of different consumers, but it seems that Mexican consumers in general express low sensitivity to issues of health and nutrition, even more so towards animal welfare and products that are friendly to the environment. Research limitations/implications The large diversity of motivations and behaviours in food consumption in Mexico are not all addressed in this study. However, this work opens a new area of research in Mexico so that in the near future studies on the diversity of Mexican consumers are undertaken, looking at the transformation of their food preferences. Practical implications In Europe, governments have addressed the new forms of consumption taking advantage of opportunities that benefit local producers, through the generation of added value as “Protected Designations of Origin (DOP)”, geographical indications, collective brands, ecological produce, local products of the land, among others. These proposals are promoted as a path to follow in Latin America, assuming that Latin American consumers have the same characteristics or interests as in those developed countries. But, not knowing consumers motives of preference represents a problem in the processes of valorization of food products. Social implications Economic development, demographic, and sociocultural changes in Latin America have promoted phenomena both in the polarization of livelihoods in their societies as well as changes of lifestyles in different social strata. Therefore, studies are needed on the effect of these changes not only in food consumption, but also on the symbolic elements when consumers choose their food. Originality/value In Mexico, the study of food consumption has followed diverse approaches, as a matter of policy, from an economic perspective, from anthropology, particularly focussed on indigenous cultures, from the nutrition and health field or emphasizing economic aspects. As in other developing countries, those works do not address the role of the consumer and their motivations, so that research that studies their motives in the choice of foods is needed.

FACTORS INFLUENCING ADOPTION OF CROP AND FORAGE RELATED AND ANIMAL HUSBANDRY TECHNOLOGIES BY SMALL-SCALE DAIRY FARMERS IN CENTRAL MEXICO

In order to identify factors that constrain or favour adoption of five crop or forage related and six animal husbandry technologies promoted by government to small-scale dairy farmers, a field survey was conducted with 115 farmers. A binary logistic regression model was fitted to identify socioeconomic and farm variables explaining the technology adoption. Factors that favoured technology adoption were based on perceived usefulness, productivity and benefits to the farm, farmers skills and farm characteristics; moreover farmers were more willing to use technologies which required low levels of investment such as de-worming, vaccines, and data recording. Constraints were related to economic restrictions, lack of knowledge, lack of land, herd size, lack of extension advice, lack of information about government programmes, requirements associated with applying for government financial support, and technologies considered to be of little or no importance to the farm such as herbicides, artificial insemination (AI) and milking machines. Adoption of crop or forage related and animal husbandry technologies was significantly associated (p < 0.05) with socioeconomic (farmers education, farmers experience, farmers wealth status) and farm characteristics (herd size, cows in production, milk yield, total hectares and technological level). It is concluded that the approach implemented in this study enables identification of key factors together with the communication approaches that have been successful.

Using a socio-psychological model to identify and understand factors influencing the use and adoption of a successful innovation by small-scale dairy farmers of Central Mexico

This paper seeks to make an exploratory investigation regarding farmers who have been using an innovation for a relatively long period (established users), compared to farmers who have only recently started (recent users). Therefore, the aims of this research were to identify (i) the extent to which intentions, attitudes and social pressure are similar or different between these two groups and (ii) whether comparison of the groups can improve academic understanding and provide insights into what is influencing the uptake of innovations. The study was conducted with 80 farmers who are already engaged with the use of improved grassland. In order to develop an understanding of the differences in drivers of the adoption of new technology, the sample was divided into established users and recent users of the innovation. To identify differences between groups regarding farmer and farm characteristics, 11 quantitative variables were analysed through a dependent t-test. The theory of reasoned action (TRA) was used as a theoretical framework and the Spearman rank-order correlation was used in data analyses. To identify differences in farmers’ perceptions of the components of the TRA, we used the Mann–Whitney U test. The results showed that established users had stronger intention to use improved grassland in the next 12 months, which would be attributed to activity based on milk production as a main source of family income. Advantages of improved grassland included lower animal feeding expenses; increases in quantity, quality and availability of fodder production and increases in milk production. We concluded that established and recent users’ intention to use improved grassland over the 12 months was influenced in different ways. Established users’ intention to adopt was strongly influenced by normative beliefs, i.e. social pressure from salient referents, where the father, uncle and veterinarian played the most important role, whereas recent users’ intention was mainly influenced by behavioural beliefs (positive and negative beliefs regarding the innovation) and the variables that describe the farm characteristics, i.e. the advantages and disadvantages that farmers perceive of the use of improved grassland on their farms, which were also considered as drivers of adoption.

Milk production and fatty acid profile of dairy cows grazing four grass species pastures during the rainy season in small-scale dairy systems in the highlands of Mexico

The study evaluated small-scale dairy systems with continuous grazing of pastures based on three temperate grasses festulolium (FL), tall fescue (TF), and perennial ryegrass (RG), compared with subtropical kikuyu grass (KG). All pastures were associated with white clover (Trifolium repens L.). Twelve multiparous Holstein cows were assigned to a 4 × 4 Latin square replicated three times with 14-day experimental periods. Sampling and analyses of pastures, concentrates, and animal variables followed standard procedures. FL showed a significantly (p < 0.05) higher mean sward height, but there were no differences (p > 0.05) in net herbage accumulation. There were significant differences (p < 0.05) among pastures for CP, NDF, ADF, in vitro digestibility of OM (IVOMD), and estimated metabolizable energy (eME). There were no differences (p > 0.05) between treatments for milk yield and composition, live weight, or body condition score. There were significant differences (p < 0.05) in fatty acid values for pastures in C14:0, C16:1, and C18:3n3. There were significant differences between treatments (p < 0.05) in milk contents for C18:0, C18:1t11, and C18:2c9t11. Grazing FL, TF, RG, or KY pastures showed no differences in milk yields. Higher values for C18:0, C18:1t11, and C18:2c9t11 were detected in KY, RG, and TF. RG had significantly higher MUFA than FL and higher PUFA than TF. A value under 65% of SFA, a ratio of n-6/n-3 lower than 4, and an atherogenic index of 1.7 are indicators of milk with beneficial effects for human health.
