Fibra alimentar refere-se aos componentes de plantas ou carboidratos analogos que sao resistentes a digestao e absorcao no intestino delgado humano. A American Dietetic Association recomenda ingestao de 20-35g de fibras ao dia. Evidencias sugerem que uma dieta rica em fibras traz beneficios a manutencao da saude, reducao de risco e tratamento de doencas cronicas como a obesidade, doencas cardiovasculares, diverticulite e diabetes. As fibras sao classificadas de acordo com a sua solubilidade em soluveis e insoluveis, com efeitos fisiologicos distintos. As insoluveis sao responsaveis pelo aumento do bolo fecal e diminuicao do tempo de trânsito intestinal. As soluveis retardam o esvaziamento gastrico e a absorcao de glicose diminuindo a glicemia pos-prandial e reduzem o colesterol serico devido a sua caracteristica fisica de conferir viscosidade ao conteudo luminal. As beta-glucanas sao fibras altamente viscosas e seu consumo esta relacionado a atenuacao da resposta glicemica e insulinica pos-prandial. A beta-glucana tem efeito sobre a degradacao do amido e sobre o carboidrato disponivel e consequentemente, sobre o indice glicemico dos alimentos ingeridos. Recomenda-se sua ingestao com o objetivo de modular a glicemia e a necessidade de insulina, no tratamento da obesidade, doencas cardiovasculares e do diabetes. Este trabalho visa fornecer uma visao geral sobre beta-glucanas no tratamento do diabetes.

OBJECTIVE To determine the macronutrient and micronutrient contents of human milk from milk banks as well as to develop a supplement for addition to this milk that could satisfy the specific nutritional requirements of low birthweight newborns. METHOD For the determination of macronutrients, 46 samples of pasteurized milk obtained from two milk banks were analyzed in triplicate: 26 samples of mature milk, 10 samples of foremilk and 10 samples of milk from mothers of preterm babies. Thirty of these samples (10 of each type of milk) were also analyzed for their micronutrient content. Following the determination of macronutrients and micronutrients, an easy-to-prepare supplement was developed. The supplement was made from protein hydrolysate powder and chelate minerals. RESULTS The nutritional content varied both among the different types of milk and among the donors of the same type of milk. The levels of macronutrients and micronutrients were below the requirements for low birthweight newborns. The mean composition (and standard deviation) observed for mature milk, foremilk, and preterm milk, respectively, was as follows: fats (g/100 mL), 2.56 (+/- 0.8), 2.48 (+/- 0.91), 2.48 (+/- 0.76); lactose (g/100 mL), 8.6 (+/- 0.93), 7.05 (+/- 0.92), 6.56 (+/- 1.41); protein (g/ 100 mL), 1.07 (+/- 0.22), 1.71 (+/- 0.29), 1.72 (+/- 0.4); calories (kcal/100 mL), 61.67 (+/- 8.92), 57.36 (+/- 8.37), 55.44 (+/- 8.00); calcium (mg/100 mL), 17.88 (+/- 5.56), 22.75 (+/- 10.24), 22.03 (+/- 9.39); magnesium (mg/100 mL), 2.15 (+/- 0.39), 2.64 (+/- 0.67), 2.16 (+/- 0.26); potassium (mg/100 mL), 35.53 (+/- 7.54), 43.75 (+/- 14.32), 44.37 (+/- 12.83); sodium (mg/100 mL), 16.27 (+/- 5.92), 43.36 (+/- 11.34), 37.98 (+/- 11.34); zinc (mg/100 mL), 0.46 (+/- 0.26), 0.75 (+/- 0.25), 0.72 (+/- 0.26); and phosphorus (mg/100 mL), 9.98 (+/- 1.72), 9.31 (+/- 4.30), 8.47 (+/- 2.43). After the addition of the supplement, the protein and mineral contents reached the levels recommended for low birthweight newborns. CONCLUSION Based on our results obtained, the supplementation of human milk from milk banks is warranted for use with low birthweight newborns. The proposed supplement was shown to be practical and safe, and it did not interfere with the microbiological quality of human milk.

Fungos do genero Aspergillus como A. flavus e A. parasiticus sao capazes de produzir metabolitos secundarios toxicos denominados aflatoxinas. Estas especies podem se desenvolver rapidamente em cereais sob condicoes favoraveis. A partir do conhecimento dos riscos a saude decorrentes da presenca de aflatoxinas em alimentos, foi realizado um levantamento para avaliar a presenca de aflatoxinas em arroz beneficiado polido tipo I, destinado ao consumo dos militares do Exercito Brasileiro. As amostras foram coletadas no armazem do 5o Batalhao de Suprimento do Exercito Brasileiro, Curitiba-PR no periodo de novembro de 2003 a fevereiro de 2004 e avaliada a ocorrencia de aflatoxinas B1, B2, G1 e G2, utilizando-se as tecnicas de Cromatografia em Camada Delgada (CCD) e Cromatografia Liquida de Alta Eficiencia (CLAE). Objetivou-se, neste trabalho, contribuir com o controle de qualidade dos alimentos consumidos pelos militares da 5o Regiao Militar do Exercito Brasileiro, no que se refere ao controle dos niveis de aflatoxinas e comparar as tecnicas de CCD e CLAE. Do total de 30 amostras analisadas por cromatografia em camada delgada, nao foi verificada em nenhuma a presenca de aflatoxinas. De 26 amostras analisadas por cromatografia liquida de alta eficiencia, seis (23,07%) apresentaram positividade para aflatoxina B1 (AFB1), com niveis entre 0,54 e 2,04µg/kg e uma (3,84%) apresentou presenca de aflatoxina B2 (AFB2) com 1,84µg/kg.

The Campomanesia xanthocarpa Berg (Myrtaceae) is a Brazilian native fruit, widely abundant in the Southern region. Despite their large fructification, in addition to nutritional and attractive sensory characteristics, these fruits are not collected, being lost in the fields. In this work, the fruit pulp without seed (1500 g) was crushed in ethanol/water at a ratio of 1:4 (v/v), refluxed for 15 minutes at boiling temperature. The residue obtained was subjected to sequential extractions. The extractions were optimized using a factorial design 22, with the concentration of citric acid (0.5 and 5%) and temperature (50 and 100 oC) as variables. The polysaccharides were characterized according to their chemical composition and rheological profile. The high concentrations of uronic acids, arabinose and galactose, detected in all fractions, indicate that they consist of pectin. The results showed that the extraction method was efficient for fractionation of pectin from different areas of the cell wall. The polysaccharides extracted from the fruit pulp of gabiroba showed a pseudoplastic behavior. All the fractions were resistant to temperature variations. When these gels are heated up and cooled down, they adopt their original structure.

The objective of the present work was the formulation and characterization, chemical, nutritional and sensorial, of two types of biscuits, cookie and snack, using rennet casein and sodium caseinate for cookies and snacks enrichment, respectively. The cookie type biscuit presented higher contents of moisture, protein, and total fiber than the snack type which was richer in fat and salt. As to essential minerals the cookies were richer than the snacks, except for sodium and phosphorous which were higher in the snacks. The amino acid profile was more adequate in the cookie than in the snack type. Except for true digestibility the protein value indexes were higher for the cookies. Acceptability of the two types of biscuits was tested for athlets of both sexes related to overall acceptability, surface color, odor, taste, crispness and hardness. Acceptability rated 98% for the snacks and 81% for the cookies. cookies and snacks had the same acceptability for both men and women but the snacks had higher acceptability by men (52.7%) against 37.8% by the women. Microbiological analysis revealed an acceptable profile for both types of biscuit.

OBJETIVO: Este estudo teve como objetivo avaliar o impacto da suplementacao na dieta de gestantes e de lactantes com acidos graxos omega-3 docosahexaenoico, sob a forma de oleo de peixe, e sua influencia na composicao do leite humano. METODOS: A amostra foi constituida de 60 gestantes, com idade entre 18 e 38 anos, saudaveis, com padrao alimentar adequado e nao fumantes. A intervencao consistiu na suplementacao da dieta com capsulas de oleo de peixe, totalizando um consumo diario de 315mg de acido docosahexaenoico e 80mg de acido eicosapentaenoico, no periodo entre o terceiro trimestre de gravidez e o terceiro mes apos o parto. O teor de lipideos totais e do perfil de acidos graxos foi determinado pelos metodos de crematocrito e de cromatografia gasosa. Para a analise dos dados foi utilizada estatistica descritiva e nivel de significância de p<0,05. RESULTADOS: Entre o grupo sujeito a dieta suplementada (capsulas de oleo de peixe) e o grupo controle (capsulas contendo amido de milho como excipiente), nao se constatou diferenca estatistica quanto aos valores totais de lipideos. Entretanto, no leite das maes do primeiro grupo, a suplementacao com oleo de peixe mostrou teores mais elevados na concentracao dos acidos docosahexaenoico e eicosapentaenoico, nos tempos 30 e 60 dias, demonstrando que um maior consumo de omega-3 pode influenciar na sua concentracao no leite humano. CONCLUSAO: Considerando a importância do acido docosahexaenoico no periodo neonatal, e adequado incrementar com acidos graxos poliinsaturados de cadeia longa a alimentacao de gestantes e de lactantes, o que pode ocorrer pela suplementacao da dieta com oleo de peixe.
