This study investigates the feasibility of combining environmental protection and an agricultural revitalisation strategy which includes food tourism in two Danish national parks, Mols Bjerge and Skjern Aadal. Both the parks include significant agricultural holdings and, to a great extent, a “natural” landscape of farmed grassland and arable land. The international research literature documents that park administrations have tended to neglect the role of food and food-based experiences in parks, despite park visitors preferring more attractive eating facilities, purchasing opportunities and food-related interpretation. A survey of food producers and providers in Denmark revealed that traditional, productivity-oriented farmers tended to oppose the establishment of parks, holding the view that “sharing” the land with others diminished their competitiveness. While this view might hamper rapid progress in food tourism, the survey also discovered an emerging trend of small-scale food entrepreneurship, albeit on a fragmented and uncoordinated level. Tourism-oriented food entrepreneurs wanted to see joint marketing and labelling of food products along the lines of OECDs (Organisation for Economic Co-operation and Development) “new rural paradigm”. The study identified governance opportunities that could accommodate the wellbeing of both tourists and food producers, but which requires a proactive role from the national park authorities, especially in marketing and the development of events.

The objective of the article was to update Tardes approach by directing attention to the rural space and the concept of rural imitation. It analyses an empirical study of people settling in five Danish rural areas using Tardes key concepts of imitation and monads. Mixed methods were employed, including surveys, participant observation and photo-ethnographic interviews. The data analysis applied the grounded theory approach to add a structural dimension to Tardes approach. The analysis revealed that Tardes approach and his key concepts of imitation and monads can be used to develop contemporary perspectives on rural experiences. The pivotal point in the rural–urban relationship is the ability to be in contact with an identity constructed from decisions about specific emotional states and a sense of the present. Within a broader perspective, this view of identity building based on rural settlement in nature calls for attention to health studies regarding how nature is associated with coping and how it can help relieve stress, one of contemporary societys most common ailments. The analysis suggests the existence of a triangle of monads in contemporary rural imitation. This triangle of monads is what stabilises, reproduces and supports the creation of rural identities.

Purpose – Lead user experiments are increasingly applied in food-related innovation. The purpose of this paper is to: first, experiments should excavate new recipes, production processes and narratives for mussels with a specific regional origin and connotation. Second, the study should test a lead user set-up and investigate the commitment and potential benefits, not only for future mussel producers but also for the lead users themselves. Design/methodology/approach – This study organized and evaluated a lead user experiment involving eight chefs and other food experts. Findings – The experiment was successful in the sense that the lead users activated a considerable combinatory knowledge ability and creativity, and they could address issues of wider regional branding significance and contribute with catching narratives. Purpose – The purpose of this paper is to provide a sector-based analysis of the drivers for social entrepreneurship in the agricultural sector. Design/methodology/approach – The paper uses qualitative data from two studies in the Danish region of Northern Jutland. The data include responses from 38 farmers who offered or had considered offering social services. The analytical framework is taken from a review of the limited literature on Green Care and Social Farming and social entrepreneurship theory. Findings – Strong and consistent tools for the categorisation of farmers’ social entrepreneurship have been developed. However, these tools have merely been used descriptively rather than to create proactive agriculture policies to facilitate social entrepreneurship.
