Este estudo foi elaborado a partir da premissa de que as escolhas alimentares dos grupos sociais sao fatos culturais (VALERI, 1989) e de que a cozinha ou culinaria permeia a vida cotidiana e os costumes, no que diz respeito tanto aos ingredientes quanto as receitas, as formas de preparo e aos utensilios utilizados (REVEL, 1996). Este artigo apresenta elementos culturais e sociais embasados na historia e na arqueologia e, ao mesmo tempo, revela a existencia de um verdadeiro sistema tecnologico de producao − o sistema culinario da mandioca. Esse sistema foi analisado sob quatro perspectivas: o ingrediente ou a materia-prima, isto e, a mandioca do ponto de vista fisico; a explicacao de sua origem e sua pratica social ou cultura; a tecnica e os seus usos, que vao do plantio a obtencao dos produtos do sistema − estas tres, metodologicamente informadas pela antropologia e pela historia, precedem a quarta perspectiva, em que uma analise formal do conteudo de uma obra de arte historica permite enfatizar a importância dessa raiz na vida e na cultura dos povos indigenas no Brasil. This paper seeks to present the systématisation of information in hospitality studies, as generated by an analysis of 227 dissertations submitted to the Masters Programme in Hospitality Studies at the University of Anhembi Morumbi, as well as 18 doctoral dissertations and 58 masters dissertations submitted to other stricto sensu programmes in the country between 2004 and 2013. The paper intends to typify the contents of this scientific production, considering the theoretic base developed in Brazil and other countries. The documentary research analysed the contents of the dissertations based on author, title, abstract, keywords, and year of submission; it also arranged the studies according to sectors, domains and dimensions of the hospitality field. Results demonstrate a low incidence of studies in the virtual and domestic domains; tourism and lodging industries as the principal sectors covered in the period in question; and social and economic dimensions as the most discussed. The paper indicates the need for in-depth studies to analyse the methodological strategies and review bibliography used in production of the scientific materials, and the necessity for increased private sector funding of academic research. It highlights the importance of a critical approach to hospitality research that may enable the evolution of programmes in hospitality and tourism studies.

This paper deals with the social history of the immigration to Sao Paulo. It focuses specifically on the period that is usually known as the resumption of immigration after World War II, when the arrivals of immigrants were divided basically into two periods: 1947-1951, with backing from the International Organization for Migration (IOM), and from 1952 to 1980, with the support of the Intergovernmental Committee for European Migration (ICEM). This paper focuses on the so-called “displaced persons” of Polish nationality, one among many groups of different nationalities who were freed from the refugee camps in Germany and Austria. This study was supported by documentation from the Immigrant Memorial, which has been systemized into a database, and is based on articles published in the Journal of Immigration and Colonization (JIC). The aim of this study is to contextualize the discussion on the need and convenience of the arrival of these displaced Polish immigrants, who were taken in through agreements between Brazil and the IRO at that time. This paper also outlines the profile of these immigrants, characterized as the largest group among the nationalities that arrived in Brazil during that period. The focus on post-war Polish immigration indicates the specific character of this group, whose profile differed from previous waves of immigrants to Brazil in a context strongly marked by movements to protect Brazilian workers and internal migrants.
