Caracterização química e bacteriológica de polpa e surimi obtidos do espinhaço residual da filetagem de tilápia

The aim of this study was to assess the yields, proximate composition and bacteriological characteristics of minced fish and surimi obtained from tilapia (Oreochromis niloticus) from 400 to 650 grams, recovered from fillet frames, after mechanical deboning. The samples were divided in four lots, collected each two months. The percentage yields were determined and the chemical analysis carried out included moisture, protein, lipids and ashes. Bacteriological analysis considered Heterotrophic Aerobics Mesophilics and Psychrotrophics bacteria count, isolation and identification of Salmonella spp., coagulase-positive Staphylococcus and Escherichia coli. The yields obtained from minced fish and surimi, in relation with fillet frames, were 17.96% and 13.61% with significant gaps (P<0.05) between samples. The moisture, proteins, lipids and ashes percentage rate were for the minced fish: 80.69, 16.5, 3.14 and 0.50 and for the surimi: 80.82, 14.6, 0.27, and 0.98, with significant gaps (P<0.05) for lipids and ashes. The counted Mesophilics and Psychrotrophics Bacteria in the samples of different lots of the minced fish and surimi varied from 5.74 to 11.57Log 10 CFU g-1. One sample was positive for E. Coli, and the presence of Salmonella spp and of coagulase-positive Staphylococcus were detected in two samples. After introducing the Sanitation Standard Operating Procedures (SSOPs), the samples of minced fish and surimi were obtained and attended the current legislation for the microbiological patterns for surimi and similar products. It was found for the minced fish as well as for surimi samples satisfactory percentages of protein and low percentages of lipids. Considering the analysis performed in this study, these intermediate raw materials presented potential for development of value added products.

Histopathological alterations in bullfrog juveniles fed commercial rations of different crude protein levels

The relationship between the quality of dietary crude protein and health of bullfrog juveniles (Lithobates catesbeianus) was evaluated by necropsy and histopathological examination of animals. The histopathology results showed that animals fed different feeds, regardless of CP levels, presented lymphocytary hepatitis, colitis and flattened microvillosities; kidneys with areas of tubulonephrosis and renal tubule calcification; myocarditis and cardiac muscular fiber dissociation. Such injuries suggested a degenerative nutritional process, with development of inflammatory processes spread to all the organs. These findings suggested that the animals had been fed with proteins of low biological value, indicating, apparently, poor feed quality, that harmed the health of the frogs and, consequently, their performance. Complementary studies are necessary to understand the biochemical behavior of the bullfrog in its second phase of life, supplying data for a better understanding of the nutrition of these animals.

Frog meat microbiota (Lithobates catesbeianus) used in infant food

Captive breeding of bullfrog (Lithobates catesbeianus) is of great economic potential, mainly for its thighs and leather. The nutritional quality of frog meat includes properly balanced amino acids with a protein profile of high biological value, low fat and low cholesterol, and high digestibility due to its short chain molecule structure. It is recommended by doctors and nutritionists, especially for protein restricted children or malnourished children. Aiming to aggregate value to the segment and offer a product with nutritional properties that meet the need of children aged six months and above, a meat product based on the composition of frog meat was developed experimentally. To ensure raw material quality after bleaching and deboning, the microbiota present in the frog meat was determined. The analyses were performed according to Brazilian laws. It was observed that the resident and transient microbiota met the standards set by regulations. The results found were: mesophyll 4.5 x 104 CFU/g; Staphylococcus coagulase positive 2.0 x 102 CFU/g; negative for Salmonella sp. and Aeromonas spp. The findings indicate that the raw material showed satisfactory sanitation even in terms of family industry.

Desempenho zootécnico de girinos de rã-touro com diferentes níveis de proteína e energia digestíveis

From the digestibility values of some ingredients, it was proposed diets with different levels of digestible protein and energy, in a 3x3 factorial design for bullfrog tadpoles, aiming at evaluate the zootechnical performance. The experiment was conducted during 60 days with 810 tadpoles from the same spawning distributed into 27 polypropylene boxes at a density of 1 tadpole/L. The experimental design consisted of a factorial arrangement with three levels of digestible protein (27; 31 and 35%) and three levels of digestible energy (2700; 2800 and 2900kcal/kg) with three repetitions. Parameters evaluated at 60 days were weight gain, feed intake, dietary protein intake, feed conversion, protein efficiency rate and survival rate. Results were subjected to analysis of variance and Duncan test (95% accuracy), and presented no interaction between digestible protein and digestible energy for any parameter evaluated. As for the digestible protein, significant differences were detected in the dietary protein intake, and protein efficiency rate, evidencing inefficiency of diets with high protein values. Bullfrog tadpoles should be given diets with 27% digestible protein by having the best result for the protein efficiency rate and for the dietary protein intake, with the lowest value and similar to other levels among evaluated parameters.

Development and bacteriological, chemical and sensory characterization of fishburgers made of Tilapia minced meat and surimi

In this study fishburger samples obtained from tilapia minced meat and surimi retrieved from fillet frames - filleting process waste - have been assessed. Four different preparations of fishburger were made. Chemical analyses was performed for protein, lipids, moisture and ash assessments, as well as bacteriological analyses through mesophilic aerobic heterotrophic and psychrotrophic bacteria counts, isolation and identification of Salmonella spp., coagulase-positive Staphylococcus and fecal coliforms. Instrumental measurements were also carried out for texture and tested sensory acceptance. The costs of the ingredients used in the preparation of formulas were also assessed. Microbiological standards, established by current regulations, were met by all samples. No significant gap (P>0.05) was detected among the percentage of protein, moisture and ashes, while a significant gap (P<0.05) was verified for lipids. A significant gap (P<0.05) for the instrumental measurements of texture was also observed. Both surimi and minced meat fishburger presented good acceptance on sensory tests for taste, texture and overall impression. The use of smoked fish flavoring and surimi caused a considerable increase in costs due to ingredient acquisition. This study shows a positive result for the industrialization and consumption potential of fishburgers made of minced fish retrieved from fillet frames.

Functional anatomy and intestinal morphometry of bullfrog tadpoles subjected to a dietary regime with commercial feeds

One of the main hindrances to frog farming is the lack of knowledge of the nutritional requirements of tadpoles that allow nutritionists to formulate the ideal diet for this phase, reducing operational costs and providing homogeneity to the shoal. This study aimed at evaluating the anatomy of the digestive tract and morphometry of the midgut and hindgut of bullfrog (Lithobates catesbeianus) tadpoles to provide subsidies for nutritionists to make adjustments in the balancing of suitable diets for this species. The population of tadpoles that received the dietary regimen named DR3, which consisted of a fortnight increase of the dietary protein levels (from 32 to 45% of CP) for 60 days, showed the best results regarding weight gain, survival rate, and homogeneity in the passage of the larval stages as compared with the other dietary regimens tested. Additionally, the morphometry of the intestines of the animals subjected to DR3 showed a greater length (419.2 mm) and higher caliber of the midgut portion where most of the nutrient absorption takes place. It can thus be inferred that this fact is related to the height of the absorptive intestinal folds resulting from the supply of a diet with better quality, confirmed by the weight of the juveniles.

A EUTROFIZAÇÃO DAS ÁGUAS CAUSA MALEFÍCIOS À SAÚDE HUMANA E ANIMAL

O presente artigo teve por objetivo divulgar e esclarecer a populacao sobre os maleficios da Mare Vermelha na saude da populacao e dos animais, que sofrem as consequencias da eutrofizacao dos recursos hidricos continentais e maritimos que acarretam problemas na qualidade de vida, principalmente pela falta de controle da seguranca alimentar, promovida pelas complicacoes produzidas por dinoflagelados marinhos e cianobacterias, consumidos por meio de pescado oriundo de regioes que sofreram este fenomeno, que ocorre no mundo datado desde o antigo testamento. Este fenomeno esta diretamente relacionado a escassez de saneamento basico, que acarretam na eutrofizacao das aguas devido a poluicao dos mananciais hidricos, baias, lagos, cachoeiras e mares. Um problema ecologico que nao afeta so a natureza, mais a todos que dela dependem para o seu sustento que esta diretamente relacionado com a economia de um pais, refletindo na qualidade de vida da populacao. O grande de numero de obitos por envenenamento por toxina oriunda da mare vermelha incentivou nas novas linhas de pesquisas, visando a formulacao de farmacos que retardem ou eliminem os seus efeitos clinicos, colocando esta sintomatologia na condicao das doencas negligenciadas.
