Perfil aromático e qualidade química da carne de caprinos Saanen alimentados com diferentes níveis de concentrado

The objective of this work was to evaluate the effect of the levels concentrate of the diet on meat quality of no castrated male kid Saanen goats. Fifteen male goat with initial 16 ± 0.3 kg BW and four months old were fed diets formulated with 80, 65 e 50 of concentrate up to the animals reached a final a 22 kg BW. The rations were formulated to promote a weight gain of 150g/anim.day. Centesimal composition, colour, texture, lipid and volatile components profile were evaluated in fifteen goat shoulders. The concentrate and forage levels used in the feeding of male kid Saanen goats did not influenced the chemical and physical-chemical parameters of humidity, ashes, proteins, cholesterol, phospholipids, pH, Aw, a*, b*, L* of goat meat. However, the concentration of fat, the percentages of unsaturated fatty acid (mono and poly) and the texture of meat were affected by the used concentrate levels. In both qualitative and quantitative of volatile components analysis, the extract of the goat meat fed with 50% of concentrate showed better aromatic quality. The use of 50:50 forage to concentre ratio was most viable for the feeding male kid Saanen goats slaughtered at 22 kg BW, considering both the aspects of reducing cost of production and chemical and aromatic quality of the produced goat meat.

Qualidade física e sensorial da carne de cordeiros de três genótipos alimentados com rações formuladas com duas relações volumoso: concentrado

The objective of this work was to evaluate sensory atributes (tenderness, odor, flavor, juiciness and color) and physical attributes (shearing force, cooking losses and the color parameters of L*, a*, b*) in addition to content of iron in the meat of Santa Ines (SI), Dorper × Santa Ines (DP × SI) and Without Definite Breed Pattern (WDB) lambs, finished in feedlots, in function of two roughage:concentrate (50:50 and 20:80) relationships in the diet. It was used 54 whole lambs (18 from each genotype, with initial average weight of 23 kg and at 150 days of age) slaughtered at 36 kg of live weight. The fed diets favored differentiation in meat color. Bright intensity (L*) differed among the genetic groups. In animals fed diet with high level of concentrate, the meat presented fewer cooking losses. It was observed the existence of a correlation between the intensity of red (a*) and the color of fresh meat and among dietary iron concentration in the meat and and bright intensity (L*). Meat of SI and SRD lambs is less tough and more juicy than meat of Dorper × Santa Ines. The ratio roughage:concentrate in the diet does not promote changes in sensory attributes and physical parameters of the meat.

Biological and economic performance of feedlot lambs feeding on diets with different energy densities

The objective of this study was to evaluate performance, carcass dressing and gross profit margin of lambs of different genotypes finished in feedlot with diets containing two levels of energy (2.40 Mcal/kg dry matter - DM or 2.90 Mcal/kg DM). Fifty-four non-castrated lambs of the following genotypes were used: Santa Ines, F1 Dorper × Santa Ines and F1 Santa Ines × undefined breed at approximately 150 d of age averaging 22.6 kg of live body weight. Lambs subjected to the diet containing 2.90 Mcal/kg DM stayed in feedlot for a shorter period of time. Moreover, they showed lower intake of dry matter and water in addition to greater daily weight gain and corporal score. There was interaction of feed conversion, carcass dressing yield and gross profit margin. The Dorper × Santa Ines lambs showed similar feed conversion in the two diets. However, Santa Ines lambs and Santa Ines × undefined breed lambs showed better feed conversion with the diet containing 2.90 Mcal/kg DM. The carcass dressings of the Santa Ines × undefined breed lambs were similar for both diets. Furthermore, the carcass dressing values were higher for the Santa Ines and Dorper × Santa Ines which received the diet with higher energy density. The gross profit margin is higher for Dorper × Santa Ines lambs in relation to genotype Santa Ines × undefined breed lambs when subjected to the diet with 2.40 Mcal/kg DM.

Influence of animal gender and production system on the carcass characteristics of goats of the Blanca Serrana Andaluza breed

The objective of this study was to evaluate the influence of gender and production system on the carcass characteristics of Blanca Serrana Andaluza goats. Thirty-one animals were used, 12 males and 19 females, distributed in intensive (15 animals) and extensive (16 animals) production systems. No difference was observed in performance, carcass weight and body score between the gender or production system but the hot and cold carcass yields were greater for the animals finished in a feedlot. The carcass measurements did not differ, except for internal carcass length, which was longer for the animals under the intensive system. The percentage of non-constituent carcass components showed little variation for gender or the different rearing systems studied. The greatest proportions of perirenal fat were found in females and in the animals produced in feedlot. Little variation was observed for the shoulder, neck and breasts cuts, but the percentage of leg was greater in the animals produced in pasture. Constitution and composition chemistry of the precooked goatlike buchada produced in the state of Paraíba, Brazil

The objective of the present work was to quantify the constitution and composition chemistry of the precooked goat buchada produced in the state of Paraiba, Brazil. The goat buchada presented considerable yield in relation to the live weight. High protein content was observed in the products analyzed. The lipid content presented high variation as result of the lack of standardization of products produced in the state and no control on parameters such as age, weight and breed of the slaughtered animals was observed. Although no difference (P<0.05) in the lipid content was observed, the highest percentages were observed in samples from Remigio and Barra de Santa Rosa, with 14.52 and 15.90%, respectively, as result of the addition of high amounts of omental and mesenteric fat in the buchada and probably the slaughter of older animals.

Physicochemical characteristics and fatty acid profile of meat from lambs with different genotypes and diets

The objective of this study was to evaluate the chemical composition and fatty acid profile of meat from Santa Ines, Dorper × Santa Ines, and undefined-breed lambs finished in a feedlot system according to two forage:concentrate ratios (50:50 and 20:80) in the diet. Overall, 54 non-castrated animals were used (with an average initial weight of 23±1.5 kg at 150 days old) and were slaughtered when they reached 36 kg of live weight or 63 days of confinement. Diets with high concentrate levels favored meat production with higher protein content. Among the saturated fatty acids, only heptadecanoic (C17:0) and arachidic acids (C20:0) differed among the treatments. The amount of oleic acid detected in the meat ranged from 49.2 to 51.9 g/100 g, making this one the most representative fatty acids. Regardless of the diet and genotype, the unsaturated fatty acid and desirable fatty acid levels in the lamb meat characterize it as of satisfactory quality for the consumer market.

Desempenho de Cabritos Saanen em Diferentes Instalações Alimentados com Rações Farelada e Peletizada

Avaliou-se o desempenho de cabritos da raca Saanen em fase de aleitamento, alojados em baias individuais e coletivas, com duas formas fisicas de apresentacao dietetica (farelada e peletizada). Foram utilizados 32 animais (16 machos e 16 femeas). Os animais foram pesados semanalmente para controle do desenvolvimento corporal, ate que os mesmos atingissem peso minimo aproximado de 11 kg. Observou-se que o peso ao desaleitamento, ganho de peso diario, consumo diario de racao e numero de dias de aleitamento dos caprinos nao foram influenciados (P>0,05) pelos sistemas de criacao (baias individuais ou coletivas), e que o fornecimento da dieta na forma peletizada propiciou um ganho de peso diario superior (P<0,05) que o obtido para animais alimentados com a dieta farelada.

Caracterização dos Rebanhos Caprinos e Ovinos na Região Semi-Árida do Estado da Paraíba

Objetivou-se caracterizar os rebanhos caprinos e ovinos na regiao semi-arida do estado da Paraiba, quanto aos Grupos geneticos explorados e sua relacao com os produtos obtidos. Foram utilizadas informacoes de 152 entrevistas realizadas em dez municipios do Cariri Paraibano. Os dados obtidos foram agrupados por meio de analise multivariada em cinco Grupos de produtores. Foram computados nove Grupos de racas caprinas, predominando o tipo SPRD (28%), seguida pela SPRD x Parda Alpina (27%). Verificou-se uma falta de direcionamento produtivo, nao havendo definicao previa do que seria explorado em cada criacao, nem qual raca apresentaria maior aptidao e potencial produtivo para o alcance do planejado. A raca ovina predominante foi a Santa Ines (51 %), sendo inclusive, utilizada no cruzamento com as demais racas.
